@Brunneria what is your cheesy corned beef recipe that is so popular? I’d love to try it after reading the rave reviews.
My son gets his from TESCO. It's one of the big Tesco Direct. Butcher told him what day they come in and he lets him know if he want then that week. Butcher then keeps them aside behind the butchery counter.Morning: 2 mugs coffeesubstitute and cream
7pm ox cheek pressure cooked with some guinness. O my. Will do this again. I am about to go back for a second portion.
I have to find a source of ox cheeks. These 2 were a gift from my mother.
I varied @Brunneria's recipe for the cheesy corned beef thingy as I like heat (but it's still simple).
Used one of these mini pans from lidl. Chopped just over a tablespoon of yellow pepper and onion and softened it in the mini pan with a little butter and paprika. Add some chopped chorizo and hot sauce. Fry another minute or so. Add 4 or 5 chopped Santini tomatoes to the pan (or any little tomatoes) and allow to soften. Add 2 slices corned beef and mix together.
Make a well in the centre of the pan and crack an egg in. Wait until the white starts to cook then add a little dash of cream and put under a hot grill to cook a little more (I like the yolk to still be a bit soft). Remove and sprinkle over grated mozzarella. Return to the grill to melt. Finish with a sprinkle of fresh chopped parsley.
Sounds a lot of work but it isn't.
I just made this again with the other half of the tin of corned beef , this time I added rosemary and garlicI suppose you could add veggies!
Dinner Nando’s @Goonergal took your advice and took mayo with me had butterfly chicken, side salad and side of advocado ( recommend their advocado side a quarter is not too expensive 0.65p for a portion and just perfectly ripe went well with my mayo! Nando’s very good for us low carbers all nutrition info on site for different versions etc so easy to plan ahead.
Off to Italy next week for short break, yippee, so had to buy some new clothes for -hopefully - warmer weather as last spring/summer was three stone heavier so nothing fits. What a hardship hey!.
I added fried onion to mine. It’s the only carby vegetable I allow myself - love it too much to give it up, so just have small quantities.
They do a quarter and a half both listed at end of burgers bit of menu but you can add to anything lovely good way of adding more healthy fats yumHaven’t noticed the avocado, will have to add that next time.
