What have you eaten today? (Low carb forum)

500 grams cauliflower
butter
coffee
heavy cream
sweetener
1 sugar in coffee for low blood sugar
sour cream and onion snack rings
sour cream and onion chips
cheeseies
3 meatballs
water
diet pop
2 bite sized cupcakes

(ya a bad bad day)

B: Nutty mocha using coffee, Cadbury's Highlights hot chocolate and almond milk
L: Mattessons sausage, 4 x bacon medallions, halloumi cheese, romaine lettuce salad
D: Steak with chilli and garlic, 2 x eggs, green beans
And one cheeky Lindor truffle - it fit into my carb intake for the day although I am currently waiting on what it will do to my sugars. I'm hoping one won't do too much damage.

It’s been a good day here despite the rain. I’ve had my lowest numbers ever!

Breakfast; bullet coffee before swim followed by a cheese selection afterwards.

Wake up; 10.9
After swim; 12.4
After breakfast; 7.2

Lunch was 3 pieces of fathead pizza

Befor lunch; 7.3
After lunch; 7.1

Dinner was a caeser salad with lots of dressing and cheese, asparagus and boiled egg. Followed by a slice of warm lemon cake with cream.

Before dinner; 7.2
After dinner; 7.0

I then had one green and blacks salted caramel velvet edition choc but that seemed to spike me a little too high (3g carb)

Before choc; 6.5
1hr after choc (bedtime); 8.7

I think I’ve learned to eliminate carby snacks.

Woke up this morning with my best ever FBG of 9.1 and it had dropped to 8.2 after swimming.

Exercise really seems to be helping!

Numbers are still nowhere near where they need to be, but 2 weeks on keto and the progress has been so encouraging.

Just wish the weight loss mirrored the smbg.

Morning @Stronggirlsclub just a quick bit of guidance when you are trying to lose weight on this way of eating rather than just reduce your bgs - you may need to reduce down your fat intake just a bit but keep it as the highest macro in your diet. For example a bullet proof coffee may be too much fat especially as you have breakfast too. I tend to water down double cream and then froth it up you don’t need masses of fat in am to bring bgs down as long as you avoid the carbs. You’re doing really well and it may make a change just to swap the bullet proof for a coffee with just a small amount of cream hope this helps.

Good morning Shelley. This is really great advice. Thank you. I have been wondering for a while if I’ve been eating too much fat, but I’ve been happy with my BG progress and not feeling hungry so I’ve kind of just carried on assuming the weight loss would eventually catch up.

I think you’re right about the morning fat intake. I don’t ever feel like eating breakfast so early, especially before exercise but I know my numbers will creep up if I don’t have anything hence the bullet coffee. Then when I get home after swimming I feel hungry so eat yet more fat.

Tomorrow I shall try some watered down cream in the nespresso frother and see if cutting back the fat pushes things along abit.

Have a lovely day x

Good morning all. Another late night at work, so posting this morning.

Bought a book with game recipes yesterday. Though not explicitly a low carb cookbook, it still contains lot's of interesting low-carb recipes. Other recipes are adapted easily. Looking forward to trying out some of these.

Yesterday ...

Breakfast: Two double decaffeinated espressos with cream and erythritol. Tuna salad (with celery and mayo), half a DD keto roll with chicken liver pate, rhubarb compote (rhubarb, erythritol, agar agar) with erythritol-sweetened whipped cream.

Lunch: Nothing.

Dinner: Cornsalad with Caesar's dressing, parmesan and fried mushrooms, half a DD keto roll with chicken liver pate, Greek yoghurt with five strawberries and a bit of whipped cream. Two squares of 85% chocolate. Half a glass of red wine.

My house is overrun with kitchen roll. My son insists I buy it bulk when I take him to Costco as it is more economical. Thing is it last me months and at this stage when I've just replaced it - it's everywhere!!

Probably just as well I don’t live next door then @maglil55 . If I’d popped round to borrow some I’d probably have scoffed all my daughter’s lunch!

Bed on Monday 6.2 and FBG 5.7. Still lacking taste for anything so reverted to some favourites to try to awaken the taste buds.
B. That cheesy, eggy corned beef thingy with a Tassimo Americano grande with a dash of cream. Didn't want anything else after that for hours!
L. Nothing. Gym monkeys day so wouldn't have had time anyway.
D. Back to feeling bored with food so had a container of mussels in white wine, parsley and cream with one of these keto rolls to soak up some of the sauce. Halo Top afterwards.

Today - gardeners here to tidy up all the trees and bushes. Lovely morning. So with tea/bacon rolls to make I'll cook something for myself.
Bed 6.6 FBG 7.1 - a bit higher and I got a shot of DP up to 8.8. During the day though I'm hanging about 4.8/4.9. It's kind of odd this week as it is the last week before they split us all up at our gym so it's rather depressing.
B. 2 rashers back back, fried egg and a slice of GF black pudding. Tassimo Americano grande with a dash of cream. It kicked DP into touch.
L. Nothing
D. Back to that DD pork chop with chipolte paste with green beans and avocado.
Tomorrow I have my induction at the new gym so I hope that improves my mood. DIL teaches some classes there and she was saying she's spotted quite a few from my current gym and they did say quite a few had moved there.

Hope it goes well at the new place. Gyms can be a bit intimidating I find, but hopefully, if a few of your old gym buddies are already there it’ll be fine and dandy.

The only gyms I don't like are the ones full of muscle heads and the pastel lycra brigade with full make up, hair extensions , false nails and busy with pouty selfies and not a drop of sweat on them - sure many of you can relate to what I mean. It's what put many of my gym buddies off the other two nearby clubs. The one I've joined is quite 'normal' and that was the attraction with my current gym. We're all shapes and sizes and no one feels intimidated. I'm sure once I've been a few times I'll be fine.

Evening all a much better day today not such a struggle, it was a planned work day - I work on a project basis as a carer consultant about four to eight days a month depending on my own caring responsibilities so had a break from caring! I’m very lucky having such a flexible part time job.
Breakfast one slice of bacon and egg
Lunch cheese and celery
Dinner two lamb cutlets with cauli cheese plus just tried a few of @Brunneria s salami crisps delicious planning a small glass of wine later and maybe some low carb cake with coffee.

Glad you had a better day today @shelley262
Those salami crisps of @Brunneria are great aren’t they - I bought a load more salami today, and a big kitchen roll!

B: blue cheese and spinach omlette

L: out with friends at an independant cafe so had to make an educated guess - house salad with avocado and halloumi, coffee with cream ( forgot I’m off coffee, it was lovely and no ill effects!)

D: Sea bass fried in coconut oil, with creamed spinach and buttered green beans.
Greek yoghurt and a few raspberries

Had an unbelievable docs appt today: wanted to discuss stopping statins as all my blood results are in normal range now. He started talking about diet, insisting I ate a fist size portion of rice or pasta with my meal, a slice of bread every day and ‘just one biscuit’ he said it was dangerous not to eat carbs. That my liver needed glucose or I’d have too much acid in my blood, then seemed to get in a pickle with ketosis and ketoacidosis. I was hard pushed not to laugh out loud at some of the complete rubbish he was talking but I needed him to refer me for a different ( non diabetes) appointment so had to bite my tongue and smile politely. The fact that all my results are now better than they’ve been for ages by not eating as he was telling me to didn’t seem ironic to him at all!

Today I had my 1st Chia Seed Pudding as recommended by the brilliant book 'Bright Spots and Landmines'. Has anyone tried this? I found the texture something I'll have to get used too but I managed to make 4 mini bowls each containing 8g carbs 6 of which are from fibre so no dramatic effect on my blood sugars. Has anyone else found ways to make this very healthy dish more appetising???

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: cold roast chicken with salad of cauli and broccoli with Caesar dressing followed by Greek yoghurt and blueberries.
Mid-afternoon: Hartleys 10cal jelly and black coffee.
Dinner: salmon fillets with creamy peppercorn sauce, mixed veg and celeriac mash followed by strawberries and salted caramel Oppo with a tiny piece of my Lindt Easter egg.

Did you leave it in the fridge for at least 4 hours? I prefer to leave mine overnight, the texture is strange but better the longer it’s left.
For one portion I use 65mls of almond milk, 4 tsps of chia seeds, 2 tsps of sugar free maple syrup, then for added flavour either 2tsps of cocoa powder or lemon or orange extract. Carb count for one portion is about 3.5g for the cocoa one or 2.5g for the lemon or orange ones.

Still got Easter egg left @Rachox? That is impressive!

Evening all. Lots of lovely sounding food today! DJC3 your Drs appointment sounds infuriating. It’s a good job you are educated about diabetes and not reliant on medical advice!

I’ve had another good food day. Was working from home today which is usually when I feel more snacky, but managed ok. I did 30mins swimming this morning and a 49 minute dog walk after lunch. I’m feeling great from exercising more.

Breakfast was a chocolate chia pudding which I really enjoyed.
Before; 9.0
After; 8.2

Lunch was a portion of hubbys chicken curry (essentially shredded chicken, masala spices, a small anount of pasatta and cream)....it was delicious
Before; 8.5
After; 7.5

Dinner; beef, pork and sausage meatballs with a small amount of tomato ragu with rocket salad
Before;7.5
After; 6.2

Snacks; slice of cheese, lemon cake, a few pork scratchings and a sugar free jelly.

Another hungry day. I hope my appetite soon starts to decrease.

Can’t believe your dr - very difficult when they spout rubbish. I’ve just quietly come off all my meds as I’ve gone along as I’ve felt I haven’t needed them anymore. Such a shame isn’t it that they believe that rubbish despite evidence in front of them.
