The squares were adapted from this recipe using almond butter and chopped almonds instead of peanuts. Used Lindt 90% for the chocolate. Left out the spices and added most of the chopped almonds to the mixture, with just a few on top. Recipe says 12 servings, but I got 15. Totally delicious. Remaining 12 boxed up to take to work. Let’s see if they get there.

Hi @Geoffno6, thanks for that but I think the only reason the numbers decreased so much is because of sheer terror! My weight was stable before my diagnosis, and to be honest I had no symtoms of diabetes. It was picked up on the health check you get when you're over 40! I've gone from 8stone 3 to about 7stone 7 in three months although I'm only 5' 3. I think discussing it with my GP it's the Metformin which is why I'm keen to stop taking it. I do eat a lot of fat now but maybe not enough in quantity. Thought about doing a bit of weight training to build some muscle and put on a few pounds???? Typical daily diet is HI-Lo toast with butter for breakfast, tinned tuna, salad and homemade flaxseed bread for lunch, maybe a stroganoff for tea (no rice)Hi @Tori71 Well done for getting your numbers down so well. What’s been your typical daily diet? Also like me you’re one of the few on here that doesn’t want to lose weight. Was weight loss a symptom of your diabetes? I was eating loads but losing weight, pre diagnosis, so I’m puzzled to see how I can keep the weight on now?
Flaxseed, yes its great, as you say, except when you get the little worm wriggles, munching away the other day, on my seed cracker that includes flax seeds I decided to check the tight seal container to see if more supply required, saw something move, then thought no, I didnt see that, and I had not had any G and T believe me.....checked again, yes, the seeds moved, I watched and watched, and then took a seed, and inside there it was a worm wriggles, I fished around, and Oh my goodness so many little wormies...
Ditched them of course, these things can happen even from a new pack, but just keep an eye out for our helpful flaxseeds which are used for so much and low carb as you say, I eat them every day......how many wrigglies I have munched to and dont know, but still here, perhaps they are keeping my sugars normal???? now that leaves us all something to think about ??

Lunch: chicken and bacon salad, black coffee with cream
(As an aside I looked at how different mine and my husband's lunches were - he had a portion of chips, a slab of white bread and butter and a latte with hazelnut syrup!)
Dinner: takeaway chicken wings with salad (again) husband had a HUGE pizza.
Since I've been trying to low carb I'm sure his diet has got worse!

Until I found out I was marginally prediabetic I ate a lot more carbs than I do now, but I've always eaten stacks of fruit and veg and a generally varied diet. Exactly as you say, especially with museli too, they can be there I guess time of packaging so not the shop distributors fault, just one of those things, agree normally its flour for example, I just had a little shock when it was flax seeds dont know why, just never expected, but there you go....keeps us on our tip toes...have a nice day, totally agree with you.Maybe cereal dust mites, you cant avoid them - if you leave a packet of flour long enough, or look at the dust left in the bottom of a packet of cereal ( if any of us still have packets of cereal) if its been open a while, you will see the top layer shifting slightly - its fascinating.

Exactly take it o chin, take the flak is one of the reasons I love Australians and style of Australia, it taught me to basically call a spade spade approach, sometimes gets one in deep water, and not appreciated by some, I remember first two months in Oz, I asked a work colleague about an outfit I was wearing, she replied, its OK, but I have seen you wear nicer outfits, now in England, no way, no way, would one speak to clear and open, at the time, I thought hmmmm didnt expect that, as the norm may be it looks nice, in order not to offend, but think other, I put it in perspective, and thought, I like that clear to the point answer, i asked a question, I got an answer back and it was a truthful and honest answer whether I liked it, or not, it was honest, and thats what I love in Australian approach, and as you say, we continued a fantastico working relationship, and I admired the person more for been just that Honest, so thank you Australia/ Australians love your take on chin and take flak approach its refreshing. I had to give up coffee because it was pushing my blood pressure up.
To the point of needing bp meds
As soon as I stopped it all (coffee, even decaf, and tea, even decaf), my numbers reverted to normal levels.
V sad.
I only used to drink one up a day. One perfect Nespresso. But even that was too much for my irritatingly delicate little snowflake of a body.
I love coffee.
But then they always say that the foods you want the most, the ones you LOVE are most likely the ones you have intolerances to.
Glad you enjoyed them. Going to make some more so I can keep some at home: not generous enough to donate them all to colleagues
This was my tea last night- beef, chorizo chilli with one spiralized carrot in the whole pan, two peppers, chillies and onion. Spiralized courgette too. Hard cheese on top. Had half a slice of lo dough bread with garlic and cheese on. My levels went up by 4mml! I'm trying to work out what spikes me, I'm not in ketosis or anything I'm just trying to get my levels down. See i just assume that the fact out is low carb would be safe as houses.Looks yummie, I am sure you can continue to eat with some modifications, as you asked, here is my personal input not a dietician or doctor, just personal comments, levels up foods that may/may not have contributed to this as I see it could have been for example...
1.
Onion. Only little onion should be used, unless your using scallions as he green stems on these have less carbs
2.
Carrots, cooked have much more carbs, than eaten raw for example
3. Lo dough bread could be the main culprit out of the three?????
Just a suggestion, why dont you make the same dish, yet modify
use scallion onions, dont put in carrots, add more courgette instead, and dont eat any bread, eat seed crackers instead
I am sure with all the other super ingredients, these will not be missed, and then test to see if any difference.
