What have you eaten today? (Low carb forum)

Thanks so much, already on the double cream but I probably do need to increase the amount of food I eat. Wish I'd posted earlier, everyone is so nice x
 

@Goonergal I made them - Ive been waiting up until they are set - just tried one and agree they are lovely.
I used almond butter too, and chopped walnuts as its all I had. I did put the cinnamon in but I think you were right to leave it out, I probably wont add it next time.
 
Hi @Geoffno6, thanks for that but I think the only reason the numbers decreased so much is because of sheer terror! My weight was stable before my diagnosis, and to be honest I had no symtoms of diabetes. It was picked up on the health check you get when you're over 40! I've gone from 8stone 3 to about 7stone 7 in three months although I'm only 5' 3. I think discussing it with my GP it's the Metformin which is why I'm keen to stop taking it. I do eat a lot of fat now but maybe not enough in quantity. Thought about doing a bit of weight training to build some muscle and put on a few pounds???? Typical daily diet is HI-Lo toast with butter for breakfast, tinned tuna, salad and homemade flaxseed bread for lunch, maybe a stroganoff for tea (no rice), Then some 90% chocolate and or strawberries and cream. Does this help at all?
 

Maybe cereal dust mites, you cant avoid them - if you leave a packet of flour long enough, or look at the dust left in the bottom of a packet of cereal ( if any of us still have packets of cereal) if its been open a while, you will see the top layer shifting slightly - its fascinating.
Won’t do you any harm but not a very nice thought.
 
I feel the same about my partners meals, he is happy to eat eggs and bacon with me but most of the time I look at the amount of food he consumes that contains carbs and I’m shocked.

Until I found out I was marginally prediabetic I ate a lot more carbs than I do now, but I've always eaten stacks of fruit and veg and a generally varied diet. My daughter and I describe husband's diet as 'beige' and today was a perfect example...
 
Breakfast (10:30am) Bacon and Mushroom Omlete
Lunch (2:00pm) mug of homemade Brocolli and Stilton Soup and 4 Homemade cheese 'Nachos'
Snack (3:30pm) handful of cashew nuts
Dinner (6:30pm) Homemade pork, leek eggs and cheese 'muffins' - 1st attempt and turned out really well.

Also made a Latticed bacon based 'Pizza' with a cheese and peppered german sausage topping for tomorrows Dinner
 

Glad you enjoyed them. Going to make some more so I can keep some at home: not generous enough to donate them all to colleagues
 
Exactly as you say, especially with museli too, they can be there I guess time of packaging so not the shop distributors fault, just one of those things, agree normally its flour for example, I just had a little shock when it was flax seeds dont know why, just never expected, but there you go....keeps us on our tip toes...have a nice day, totally agree with you.
 
Exactly take it o chin, take the flak is one of the reasons I love Australians and style of Australia, it taught me to basically call a spade spade approach, sometimes gets one in deep water, and not appreciated by some, I remember first two months in Oz, I asked a work colleague about an outfit I was wearing, she replied, its OK, but I have seen you wear nicer outfits, now in England, no way, no way, would one speak to clear and open, at the time, I thought hmmmm didnt expect that, as the norm may be it looks nice, in order not to offend, but think other, I put it in perspective, and thought, I like that clear to the point answer, i asked a question, I got an answer back and it was a truthful and honest answer whether I liked it, or not, it was honest, and thats what I love in Australian approach, and as you say, we continued a fantastico working relationship, and I admired the person more for been just that Honest, so thank you Australia/ Australians love your take on chin and take flak approach its refreshing. Miss it and you all.
 

Just ask for Ben Kirkwood at the "Beach", he may not be there if he is, as mentioned, Just say you know Jenny from Pollensa Mallorca, if your lucky time you go, you may see a Whale going by, that would be the icing on the cake as it were.
 
@Brunneria have you given up coffee because of tummy upsets or bg spikes?
I had to give up coffee because it was pushing my blood pressure up.
To the point of needing bp meds

As soon as I stopped it all (coffee, even decaf, and tea, even decaf), my numbers reverted to normal levels.

V sad.
I only used to drink one up a day. One perfect Nespresso. But even that was too much for my irritatingly delicate little snowflake of a body.
I love coffee.

But then they always say that the foods you want the most, the ones you LOVE are most likely the ones you have intolerances to.

today,
No breakie, or lunch
24 hour fast today from 8pm dinner last night up to dinner this evening. Its green tea, water, green tea water.

Benefits of this day as always with intermittent fasting, feel full of extra bounding energy, think better, move quicker and really dont feel hungry or crave for anything to eat, always have a good size meal night before before any fast, could be the reason? but its strange what one would normally think would happen, feel lack of energy, hungry, its not the case, I suppose its not the same for all, thats my experience, dont know if anyone out there, feels the high energy burst the same?? feedback welcome on that, curiosity nothing else...

Dinner
this evening, is a very nice recipe low carb from diet doctor suggestion box, although in spain, having a taste of greek this evening, variety is the spice of life as they say, a simple yet delicious moussaka recipe, here is the link with recipe which may be of interest out there if you wish to try it out sometime.

After is greek natural yogurt, usual 3 raspberries, handful of nuts, and seeds.

This was my tea last night- beef, chorizo chilli with one spiralized carrot in the whole pan, two peppers, chillies and onion. Spiralized courgette too. Hard cheese on top. Had half a slice of lo dough bread with garlic and cheese on. My levels went up by 4mml! I'm trying to work out what spikes me, I'm not in ketosis or anything I'm just trying to get my levels down. I'm thinking possibly carrots and peppers? Thanks in advance!
 

if I may take liberty to ask, what do you refer as levels that required meds, interested. Here in spain they put myself with meds when in surgery white coat syndrome situation were showing 130/80. I had no idea of levels at this point, after this I did homework and researches and found out not one number fits all and age also is important. To indicate or compare when my blood pressure is taken at home environment, using I might add exactly the same brand make blood pressure monitor as the Doctors office uses my numbers are 107/62 heart 74 for example this morning, and highest ever over 3 years have been 117/78 heart 80, I drink coffee two times a week black no sugar, each body and person differences re tolerance zone as you say, curious the level coffee upts one to a degree it requires medication, as for sure, my Doc medicated myself, unnecessarily, after I did research, his thinking was 130/80 a one off level test, was higher than my majority normal, due to worry, anxiousness, nerves as always in the surgery, and yes it really does exist white coat, my current doctor refuses to wear a white coat, its so funny he has it hanging behind his door, why, to try and save people having a white coat syndrom.

I’ve run out of chocolate now so these will have to last me until Thur when I go back to Cornwall and the 2.5k bag of Callebaut.
 

Looks yummie, I am sure you can continue to eat with some modifications, as you asked, here is my personal input not a dietician or doctor, just personal comments, levels up foods that may/may not have contributed to this as I see it could have been for example...

1.
Onion. Only little onion should be used, unless your using scallions as he green stems on these have less carbs
2.
Carrots, cooked have much more carbs, than eaten raw for example

3. Lo dough bread could be the main culprit out of the three?????

Just a suggestion, why dont you make the same dish, yet modify
use scallion onions, dont put in carrots, add more courgette instead, and dont eat any bread, eat seed crackers instead

I am sure with all the other super ingredients, these will not be missed, and then test to see if any difference.

Thank you so much. The lo dough bread could cause the spike?! Wow. See i just assume that the fact out is low carb would be safe as houses.

I also didn't realise cooked carrots were higher in carbs.. will definately avoid those. Sadly I've just made a slow cooked beef stew for tea- filled with carrots and swede.

Oh that is sad! Poor you, I’m amazed you stay so upbeat.
I guess when you can see the effect its having it focusses your mind a bit, still rubbish though. Hug coming.
