What have you eaten today? (Low carb forum)

Evening everyone. This is my first post, however I've been a member of the site for a few months and joined just after I was diagnosed. Apologies, as I have been a lurker(!) and it's taken 'til now to post anything. Anyway, this is my favourite thread, and you guys have given me lots of inspiration for ideas of what to eat with high fat, low carb. So much so, that when I went to receive my results yesterday from my three month blood test the HbA1c had reduced to the pre-diabetic range. Will continue to follow everyone, and might even get up the nerve to post something (hopefully interesting):rolleyes:....
Welcome @Tori71 th this thread we’d be delighted if you joined in you’re clearly eating the right stuff to get your bgs down - what did you start out at on diagnosis?
 
Even German milk wouldn’t get in to my tea - I hate whisky ! My tea needs to be weak enough to see the bottom of my mug.....
Not sure that qualifies as tea.:angelic: Whisky in tea and brandy in coffee is often the only alcohol I have from one month to the next.

Welcome, it’s great to know you have found inspiration and that this thread has helped, we are a fairly regular bunch of posters who support and motivate one another, we share ideas and recipes and occasionally put the world to rights, new comers always welcome x
 
let us know how the CCBs taste - at least flaxseed is good for you and low carb!

Well, transferred CCBs to a box so I could wash the mould and couldn’t resist trying one. Not so rock solid as last time, but definitely too much flaxseed. A work in progress. Next time less flaxseed, more butter and a touch more erythritol (they were so sweet last time I reduced erythritol from 150g to 60g). Also added cream to the ‘caramel’ (think I lost my nerve and took it off a bit early) rather than the chocolate - would be better the other way round, I think.

Remaining 11 bars definitely on their way to work!

Welcome @Tori71 don’t be shy! We’d love to see some of your meals and food ideas - the more the merrier. And congratulations on your blood results.

Definirely add the cream to the chocolate and personally, inulin rather than erythritol in caramel. I also now use sucralose in the mix no erythritol anywhere.

Do you know of a source of inulin that won’t break the bank? I’d only use it for CCBs and can’t justify that. I have bought some monkfruit sweetener as recommended by @maglil55 so might try that in the caramel next time.

Not really for the source. I use lots of inulin. 2 tsps in most coffees and also mix it with flaxseed for any sweet food e.g. the flaxseed in the bars has inulin mixed in a day or so before making. We have 2 big sacks as a buy 1 get 1 free from Bulk Powders

Thanks, I'm looking forward to it. Just need a decent profile pic. My first reading was 72 three months ago and it frightened me to death! My current reading is 46 but this is due to cutting out my bodyweight in carbs, boy I must have eaten a lot! Still taking 1000mg of Metformin which I hate as it's making me lose weight which is making me look scrawny! I'm a TOFI (Thin Outside Fat Inside):arghh:
 
Toffee and caramel are quite sensitive topics (see what I did there) in this thread
Do you know, prior to being diagnosed those were two things I didn't really like. Strange that if someone offered me a caramel covered toffee now I'd bite their hand off. I do see what you did, is that a good thing I wonder??

You sound like you need to increase your fat more to stop you losing any more weight. More olive oil, seeds, nuts, cream etc etc. Well done you though on turning the diabetes round please accept a congratulatory hug from me and give yourself a pat on the back.
 
Brekkie: low carb toast and peanut butter. Tea

Snack: Atkins bar

Lunch: chicken and bacon salad, black coffee with cream
(As an aside I looked at how different mine and my husband's lunches were - he had a portion of chips, a slab of white bread and butter and a latte with hazelnut syrup!)

Dinner: takeaway chicken wings with salad (again) husband had a HUGE pizza.

Since I've been trying to low carb I'm sure his diet has got worse!

Lunch: bacon with salad leaves, cucumber, two cherry tomatoes (forgot the pork scratchings, just realised now typing this out! :joyful:) followed by SF jelly, cream and LC chocolate granola.
Mid afternoon: raspberry phd bar and black coffee overlooking the lake :)
Dinner at Bella Italia: lamb in rosemary and red wine sauce, with green beans and mushrooms in place of mash, followed by CCB bar when we got back to our holiday lodge.
Could you please tell me which low carb coconut porridge recipe you use? I found found several different ones, but feel it might be helpful to try one that a 'real person' actually uses regularly. Thanks, Rachox.

Hi @Tori71 Well done for getting your numbers down so well. What’s been your typical daily diet? Also like me you’re one of the few on here that doesn’t want to lose weight. Was weight loss a symptom of your diabetes? I was eating loads but losing weight, pre diagnosis, so I’m puzzled to see how I can keep the weight on now?
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: found Burgen Soya and Linseed bread here on holiday which I’ve never tried, so I risked a slice toasted with peanut butter and a leafy salad followed by SF jelly, cream and LC chocolate granola. BS 5.3 before and 5.8 two hours post, enjoyed the Burgen more than HiLo so going to switch for an occasional slice of toast.
Mid afternoon at Starbucks, Americano with a dash of milk with a CCB bar.
Dinner: chuffed to find the café at the pool do naked burgers, so I had two burgers, two slices of cheese, two rashers of bacon and salad followed by chocolate phd bar.

Edit to add CCB bar!
