What have you eaten today? (Low carb forum)

@jayney27 and @ianpspurs thank you for the encouraging comments, I know it’s daft in the great scheme of things to stress about what is actually a good result ( esp compared to this time last year!) I’ll get my sense of perspective back by the morning ( unless fbg is sky high!)
Whatever the number is celebrate, you are here to enjoy another day and that’s more important x
 
8D5FC6A0-ED20-48BB-A2E7-BDB691DB7B9B.jpeg Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: bacon with salad leaves, cucumber, two cherry tomatoes (forgot the pork scratchings, just realised now typing this out! :joyful:) followed by SF jelly, cream and LC chocolate granola.
Mid afternoon: raspberry phd bar and black coffee overlooking the lake :)
Dinner at Bella Italia: lamb in rosemary and red wine sauce, with green beans and mushrooms in place of mash, followed by CCB bar when we got back to our holiday lodge.

I’m missing my IP as it is in Cornwall and I’m not.
I made a vat of tomato soup this week in a saucepan and thought how much easier it’d be in the IP - it’ll be in good use again next week when I’m back there.

You need another one, or a large, round bag!
 
Hello Tassie, You know, Moggely, forums are strange, always people dont see eye to eye, its added info received, albeit it one wants to learn from it, try it, store it in the knowledge and tool box, and I am sure as yourself and thousands out there including myself, the main aim, whatever, we are not doctors, or professionals, only speaking of self experience, or of people we know experience, but sometimes perhaps that experience, is more sound, can be appreciated, more trusting, and have confidence, that what currently seems a decline in the medical professionals non updating of issues and situations of Diabetes. Everyone can read, say, dont agree, thats absolutely fine, but perhaps someone will appreciate a little bit more info whether its worthwhile or not, and its sincerely nice to have someone, yourself in this case, actually say your learning from a particular person whose aim is to share info they have, thats the whole aim at the end of the day to help someone, who may have a confusion, wonderment, not sure, so much info to take in, they can take from all, and then go to their doc, or whoever, and put forward info to obtain medical answers if the need be. Thank you or the kind comments, and hope any input I give will continue to add to your knowledge and took box as Dr. Fung says, without the knowledge and tools, one cannot reverse diabetes, I am sure he is not wrong his this??

Have a lovely evening from a warm but cloudy Mallorca. it remindes me of my home in Byron Bay Australia, on end of summer days, when the wet season is about to creep in, the whaling season.
@pollensa Well well i never knew you were from Byron Bay Pollena. I love that place. I am currently in Tassie but selling the cottage and going back to Queensland. Having a bit of a stay over in Byron Bay though, as well as a couple of other places. Yes to all that you said and especially about Dr Fung.

Well, what a small world Moggely, if you go to Byron although its changed now I believe very busy, here on Island also thats tourism, I once owned a cute little beach bar on Clarks Beach, Le Kiosk, did sunrise breakfasts, and other now taken over fabulous restaurant called beach amazing location and views of julian rocks. Worked many years in Law for the local lawyers. You my have eaten or know Mexican Micks best mexican food ever, Mick sold it. I resided Byron Bay 14 years. Lived Suffolk Park Beach. Byron is special, due to its prestine white beaches, most easterly point, hinterland rainforests, it has it all really. How lovely to hear you shall be going there and moving back to Queensland. Give a big Hello to Byron Bay I miss it. Please go to Beach on Clarks even if just for a coffee early when the sun is coming up, its just magic.

Last time I made the bars I just heated the butter till bubbling and brown lobbed in the cream and even though it split just carried on regardless. I only used about a spoonful of erythritol, stirred in at the end.
I think @shelley262 ‘s latest incarnation of the bars just involves heating the butter till it browns and bubbles and just stirring in erythritol ( no cream)
In either case dont bother boiling the butter and erythritol together, its the butter that gives the caramel flavour.

Congrats on putting that rogue bar of Lindt back on the shelf!

Bless you, I think we all get a bit hung up on our numbers, but as you say, this is not a race, we are definitely not sprinting to a finish line, there isn’t one, it’s not a marathon either it’s one of those long indurance races. I hope that any test I have going forward sees my result within the normal range, that’s a positive and to be celebrated as far as I am concerned if it’s lower fantastic, same as before ok still happy, higher but still normal obviously not estatic but content to still be in the race.

Well said, its all about putting it into perspective, ensuring we have a quality day, and its getting out of control and to get hung up on numbers I agree as you state, agree going forward personally myself also,if I am normal range whether its a slightly lower normal, mid way or higher normal but its "normal" all zones Normal, thats the best positive possible no good worrying I wanted it to be lower because I ate this or that yesterday, Oh its higher than I expected why, ask the question to oneself, be kind to oneself life is too short to question a higher or lower number within reason, if the results are normal, yes, your 100% right in this positive approach, a normal range is to be celebrated whether its a higher or lower normal...its normal, and that makes great day to be enjoyed happily.

I do feel for you you’ve put lots of effort in and you should get returns on it just shows what a strange thing diabetes is and how individuals bodies are different too. There doesn’t seem to be one solution either.
Having said this you’ve done really well and you’re in the normal range - thing to get worried about i believe is if it starts to climb towards the pre diabetic level. I’ve decided that I need to set myself a maintenance level for my bgs and hbaca1 to live to over the next few years. It’s a long game and a very difficult balance between weight and bgs. I’m eating more to maintain my weight and do wonder if it will put my next hbaca1 up but if I’m healthy and happy think that’s key.
You seem to have found a way of eating that manages your general health, maintains your low weight and keeps you active plus it gives you a normal hbaca1 well done and hope things feel more blue skies today. But I do understand how you feel I would have too at your stage of the journey big hug on way.

Breakie only so far, delicious recipe I tried from Moggley who shared on the forum, its a quich which I have nicknamed, I call it, Tassie quiche, thanks for sharing, no pastry, added on side, raw crunchy fresh green asparagus, green tea , 4 pieces grapefruit no sugar, find best to eat the grapefruit after food, stops any spikes on the blood sugars, although low low on the fructose content, it gets absorbed in the food eaten before, trick well worth popping into your "knowledge and tool" bag.... tip from a friend who works in a lab testing foods re sugars and contents when eaten v. medications, and she informed this tip, and todate, I dont spike even if I eat it breakie, lunchie, or after dinner evening......speak from own experience only.

Dinner
Leg of lamb, lots of veggies,pumpkin roasted in substitute of roastie potatoes, and mint sauce made with fresh garden mint, you guessed cider vinegar and guess again No Sugar, I know a good homemade mint sauce requires if best raw brown sugar, but not to be, and really its the minty taste at end of day, so why complain, something is better than nothing. Followed by handful walnuts, almonds and 3 fresh strawberries.

Thanks for your kind words and encouragement. I do feel better about it today. Lchf is a way of life and I’m happy with it. Even when I was feeling quite down yesterday I wasn’t tempted to eat a packet of biscuits which I may well have done in a past life, so that’s an improvement in mental attitude.

Oh wow @pollensa . That's lovely. I have been to byron Bay twice but only for a day. This time were staying for a few days. I loved the shopping there on the streets, is that your restaurant that u use to own.We will definitely go there go a early morning coffee with those views. Thanks for sharing.

Your welcome, the Le Kiosk as I had it, what a simple beach bar, breakfasts I used to do sunrise, fresh orange juice, croissants home made, with strawberries, scrambled eggs on macadamia nut bread and cream cheese, I charged only one dollar fifty cents!!!!! I had cars lining up from Surfers Paradise, home made hamburgers for the surfers for lunch, Jennys special wiht pineapple and bacon, surfers icecreams, macadamia nut, run raisan, choc and vanilla, evenings, snapper or steak BBQ with salad, so simple, new owners have turned it around to a fabulous restaurant, but still do coffees and drinks. If you go, ask if owner is there, and say you have conversed with "Jenny" ex owner of the original Kisok now in Mallorca, you never know he may invite you to a glass of champers ?? Shopping on streets is bliss so many chic boutiques with original styles to choose, this is where I became organic eating, everything if not most is organic in Byron Bay, healthy style of eat, restaurants too, its town of many different vibrant cultures from the hippies to the social bees of famous people, all merge happily together in harmony, thats Byron Bay unique for this, you have good taste to enjoy and like best places on the planet. Enjoy.

I lost my heart to a wonderful spaniard here in Mallorca, mind you fell in love with Spain when I was 14 on school excursion from UK, Went to Oz for 3 months stayed 14 years loved it and the people and way of life, so I am British passport, mentality of Australians and love of your country, and now my adopted home is on par with Oz Byron Bay and love Perth Oz too. Yes, I can confirm still organic how funny I have just mentioned that to you on post! they grow coffee now also organic of course....

lol @pollensa, well you can't help but lose your heart can you, thier gain"spain" oz. loose. But hope you do go back now and again.I have seen many places in spain on the internet and would love to go there, but finances at times won't allow it. Thankfully you are happy and that's all that matters. Yes we aussies are a strange lot but the best about us is that we can take it on the chin so to speak. Take the flak out of each other and still get on.:hilarious:
