What have you eaten today? (Low carb forum)

Yesterday:

B: coffeencream
L: hummus with a spoon and 2 squares 50% mint choc
S: 2 more squares. lush.
D: Salmon pate, homemade cauli cheese, homemade onion bhajis, spiced red cabbage. Weird combo and weird result. BG jumped to 10mmol/l for no reason that I can fathom, and stayed there for 3 hours. Felt fine throughout.
Scratching head, but not bothered unless it becomes a pattern.
Hi Brunneria, do you mind me asking, do you deep fry your onion bhaji ?
Ive always shallow fried & my Grandson says no, no, no!

Without a doubt, the deep fried ones are much nicer, so I agree with your grandson.

But I don't (and won't) have a deep fat fryer, so I do them in a little coconut oil.

Either way is nicer than those weird pre-made abominations that are sold to be oven cooked. :)

Hospital visit today (accompanying husband) so having read before on this forum about rubbish hospital food for visitors is
I prepared myself for all emergencies. Luckily there weren't any (emergencies) but when I saw the offerings in the cafeteria I was gobsmacked - absolutely nothing there I could have eaten - just carbs served with more carbs. [/RANT] Anyway:

Breakfast: Two boiled eggs, Lidl Protein Roll and butter soldiers

Lunch: Carvery meal (£3.99 each!) half roast chicken, cauliflower cheese (avoiding as much of the sauce as possible) a few bits of carrots and some peas. I had a tiny bit of stuffing, some gravy and a small dollop of cranberry sauce. I also had a glass of red - my first red for months and it knocked me for six - I came home and slept for an hour! 2 hours after eating my BG was 6.8 which is high for me. Probably the stuffing...and the cranberry sauce.... and the carrot probably didn't help.

Planned for supper: Mixed green leaves salad, Christmas salami selection pack (Spanish this time), olives, some brie and some blue cheeses. Yes, still working our way through the Christmas goodies.

B. Raspberries and Greek yoghurt

L. Calamari from M&S deli range and some cold chicken

D. Chicken leg with Mediterranean vegetables.

Dreadful headache though.

L: local butchers sausages x 4. I have been a bit suspicious of these in the past. They are delicious, and obviously high meat content, but with no ingredients, or carb content, i stopped eating them unless it was a treat. Then, today, i need some freezer space, and the sausages HAD to go. :rolleyes: And with my trusty Libre, i can see they are no problem at all. Delighted. 4 sausages raised me by a mere 1.5 mmol/l over a gentle 2.5 hr hummock. Brilliant result!
D: will be slow cooked belly pork in barbeque spices, with green beans, broccoli and cauli cheese. Berries may follow.
 
B - 1/2 an orange, wholemilk yoghurt
L - avocado, red pepper, tomato, spring onion, chive, spinach, mushrooms, hard boiled egg salad
Sx2 - mini packet of nuts, seeds & dried fruit, tinned mackerel fillets in tomato sauce
D - baked butternut squash, side salad of tomato, spring onions, red pepper, onion, balsamic vinegar

Edit: eek butternut squash was nice but like eating caramel, so I think I ought to avoid it in future

B fried egg, 2 bacon and mushrooms, 3 cherry tomatoes
L same as above minus tomatoes but with 1 sausage, 3 walnut pieces
(misses needs to get making me some nut balls again)
D boiled chicken breast with cauliflower,broccoli sugar snaps 1/2 a carrot, 3 asparagus stalks and 3 baby corn in lashings of butter
SF jelly and just tucking into some full fat soft cheese as still peckish.
3 decaf & lots water
Only day 3 but much improved BG compared to of late!
 
Oh hi Brunneria, HNY and all that!
She is fine ty, only just got her taste back and can finally eat chillies again, radiotherapy was horrible!!
she had an mri last week so any future scans will compare to that one, just fingers crossed for the future, but all good atm, thanks for asking, how have you been ?
 
B. White coffee with sweetener.
L. Buttered slice of low GI bread. Green tea with liquorice & spice infusion and sweetener.
S. Two buttered slices of low GI bread, bowl of potato, sweetcorn and chicken soup (needed to use up potatoes before they sprout).Royal Gala apple. Two squares of chilli & lime milk chocolate.
I was wondering how quite a high carb supper affected my BG so tested 2 hours later and it was 5.8, so ok.

Some walnuts, hazelnuts and 3 sula sweets.
i87ml bottle of Australian merlot, peperami and a bit of cheddar.

Spinach bread and lamb kofta sounds lovely- do you have a recipe for the spinach bread?
 
B - 2 egg omelette with red pepper, spring onion, tomato & chives (and some of all on side)
S - mug of hot milky coffee
L - peanut butter yogurt
S - small slice of banana & walnut bread
D - leftover butternut squash, tomato & onion salad with pinenuts, 1/2 an orange and almonds

S: latte when filling in time at a garden centre. :D
L: huge salad incl felafel - took my bg up to 8 for 90 mins :(
S: 500ml kefir (total rise of 1 mmol/l at 45 mins. Back to base at 1 hr :cat:)
D: bratwurst, green beans and a small blob of root mash and butter (no appreciable rise at 90 mins, which is interesting)
 
Saturday: all prepared so I know what I will eat.
Type 2 diagnosed 5th October 2015
Weight loss - 70 lbs +. Waist loss - 6 inches so far!!
Metformin, diet and exercise - Treadmill and puppy walk each day.
Breakfast: 4 egg whites, one yolk omlette with half a green pepper and 5 slices of chiritzo
Lunch: as above (cold) already cooked.
Mid afternoon snack: home made leek celery and stilton soup
Dinner: more soup ( I made a lot of it - stilton was going cheap after Boxing Day)
Evening snack: crumpets and butter
Drinks: black coffee, Christmas Tea (liquid mince pies!!), water
Cheats: a few walnuts
