What have you eaten today? (Low carb forum)

Are you enjoying your avocado and is it doing great things for your BS numbers?

Mashed up with garlic & lemon juice? Aye, it's a lot better on the old palate.
It's not making any change to my BG but I didn't expect it to - my levels are well under control anyway thanks to my LCHF diet. I'm just changing the type of fats I eat - a bit less dairy and a bit more fish & avocados.
 
I too am trying to find better fats. Avocado of course but need to limit my nuts/seeds as they are hard for me to moderate. I do use Just Mayo, a canola based mayo a lot and wish I didn't have to but EVOO just doesn't cut it. If I don't eat enough 'heavier' fats my BS drops but with guac and mayo it doesn't. I am a big fish eater so no problem there. dairy doesn't work for me either. Tough situation...
I also only eat fat as snacks so I don't have to bolus so I often use mayo and hot sauce of some kind as a dip and dip celery or lettuce in it. I just seem to eat a lot of mayo! But I guess I have all my life. I will even thin the hot sauce/mayo with water and use as a creamy salad dressing, haha

Evening All. I picked up some courgettini in M&S yesterday (along with posh profiteroles -slaps hand). I'm feeling excited about a possible spaghetti replacement but fear I will be disappointed! Has anyone tried this and, if so, what did you have with it? I'm thinking pesto....please let this be the answer to my pasta withdrawal!!!!

I'll be honest - I'm not a fan. I tried a carbonara with it and basically ended up with courgettes in scrambled egg. I also fear it would get lost in a big hearty bolognese.

If you're after pasta replacements you could try unrolling leeks and using them as lasagne sheets. I got that trick from the hairy bikers. It's not bad.

Problem is, all these pasta replacements just serve to remind me that I can't eat pasta anymore. I've decided to try justmoving on and trying other things.

I make my own using a spiraliser. Took a while of experimentation to work out the best way of cooking. I firstly dry off as much water as possible using kitchen roll then put them into a hot, dry frying pan and leave to dry fry. This evening I added salt, pepper, chilli flakes, toasted pine nuts, fresh coriander and a squeeze of lime and served with Thai chicken kiev. I tend to use them as a side dish rather than as a pasta and mixing wet sauce into it. Normally after dry frying I just add a knob of butter and seasoning.

D: Thai chicken kiev with courgetti as detailed above!
 
Brekkie: egg and bacon
Alpro yogurt
Lunch: cream cheese and jalapeno lidl roll
Din: chicken stew no potatoes or dumplings (sad face)
Snack: lindt 60% with mint...mmmm probs had too much of that lol oops
 
B - McDonalds sausage patties and egg
L - Mackerel salad
D - broccoli and stilton soup with pancetta
S - Mars Bar! pork scratchings, merlot

I had the Mars because I came over quite sleepy mid-afternoon and obviously needed something.
BG very high for hours afterwards.

In case you find it interesting, Snickers Bars are much better tolerated by me.
Something to do with the nuts, meaning they are (somewhat) lower carb and slower release.

They are my Go To emergency choc bar, when all other options are unavailable.
Cos, sometimes, you know, it happens.
 
Mars Bar..... Mmmmmmm

After being very good yesterday and only munching through 18g carbs my FBG this morning was 8.3. Makes no sense.

Today:

B: Some of that Lidl 10% Turkish yoghurt - wow, lovely stuff. I've always had the Total full fat but this Lidl one is nicer. With a teaspoon of caramel sugar free syrup.

L: None

D: Spiced Belly Pork roasted over fennel and leeks with kale.

Back to work tomorrow.
 
Hi all yesterdays menu [still experimenting a little ]
BG reading before breakfast 7.2
B 2 egg omelette / tomato / 1 slice of ham. BG reading 2hrs after breakfast 6.6
L 3 rivitas/ liver pate [ from Aldi ] 1 plum
D 2 lrg mushrooms/ cheese and bacon [from Asda ] oven cooked. 3slices chicken. 1 pear.
BG reading 2 hrs after dinner 5.9 :happy:
treated myself for a night snack of 1 crumpet with butter. BG reading this morning 5.1:happy:
 
B: Fried Egg 2xBacon, 2xChipolatas, Tomato
L: Coffee with Cream (Starbucks) and a Flapjack
D: Galician Octopus, Lamb Stewy thing, Croquettes with Pine Nuts and some Rioja
