What have you eaten today? (Low carb forum)

Mars Bar..... Mmmmmmm

After being very good yesterday and only munching through 18g carbs my FBG this morning was 8.3. Makes no sense.

Today:

B: Some of that Lidl 10% Turkish yoghurt - wow, lovely stuff. I've always had the Total full fat but this Lidl one is nicer. With a teaspoon of caramel sugar free syrup.

L: None

D: Spiced Belly Pork roasted over fennel and leeks with kale.

Back to work tomorrow.
That belly pork sounds scrummy. What spices do you use?

Fennel seed, cumin and a little oregano mixed with salt all crushed or lightly ground together then rubbed in to the oiled and slashed rind. Lay pork out over a bed of sliced fennel and leeks. Pour a glass of white wine around but not over the meat (important that) then bake long and low for 3 hours with the last 20-30 mins on very high to get the crackling nice 'n' crispy. Let it rest for 10 mins before eating. :)
 
B - smoothie with avocado, cabbage, apple, ground flaxseed
S - lapsed, slice of cake at a coffee morning; some ground almonds
L - tinned mackerel in tomato sauce, steamed leeks & butter; green smoothie - cabbage, spinach, chunk banana
D - not sure, probably a green smoothie

L. 2 slices of ham and piece of Camambert

S. Blueberry cake- low carb

D. Leek and Stilton soup with a low carb roll
 
@neil1945 that recipe is brilliant. I cooked it in the microwave for 2 minutes. Fabulous. I logged it in myfitnesspal and it came up with 251 calories and 6g of carbs. Thank you for posting the link.

Yes the FBG is a mystery lol, i've eaten nothing in the evening and it's been 8.8 last night i had a bag of peanuts and it was 6.6 lol
 
Bacon day!

Breakfast - 2 Bacon, 2 sausage, 1 fried egg.
Lunch - Two Chinese chicken thighs
Dinner - 4 Bacon, 1 egg (dinner was going to be some roast chicken breasts but they had gone off)
S - Babybel, coffee & cream.
 
3 ryvitas with cream cheese and bacon
Alpro yogurt
Packet of crisps
3 sugar free wherthers originals and a lindt choc
Leftover stew
Slice of toast 2 fish fingers and a fishcake
 
L: ready brek, provamel almond milk, walnuts, coffee and cream
S: Apple
D: roasted butternut squash, broccoli spears, roasted kale, 5 mini chicken and garlic kievs (M&S) 10 Maltesers :wideyed: went from
5.5 to 7.5 think I got away with the Maltesers?
 
Returning to work today after being off with a bad back. So not such interesting food as recently- I work 3-10 most days and can't get myself enthusiastic about cooking for lunch. So today:

Breakfast: Lidl 10% Turkish yoghurt with a teaspoon of hazelnut sugar free syrup
Lunch: Chicken thigh meat in Loyd Grossman Puttanesca sauce with Tesco cauliflower couscous
Work meal: big bowl of mixed salad (lettuce, cucumber, celery, radishes, spring onion, raw mushrooms and a little bit of red pepper) with 150g of Asda ready to eat Texas BBQ steak slices.

No supper.

14g of carbs yesterday and my FBG was still 7.6 this morning :( I'm increasing my carbs to 30g today divided fairly evenly between lunch and work meal.
 
Yesterday :-

Breakfast (at work)- Tinned Sardines in olive oil.
Lunch (at work) - Chicken breast with raw cabbage
Dinner - Mexican chicken and cabbage (add fajita powder to the boiled cabbage)
Supper - Sugar free jelly and high fiber crackers with benecol margarine (Which has LDL lowering properties)

Copious amounts of Green tea throughout the day :-0
 
Yesterday Morning BG reading 5.1
B 1 poached egg / 1 tomato / 1slice of Burgen bread.
L 3 multigrain crackers with Liver pate / 1plum.
D 1 stuffed red pepper with chicken / onion / tomato / garlic. baked in oven, then added some cheddar cheese for last couple of minutes. Delicious ...
BG reading 2 hrs after dinner 6.4
Happy with this today. :happy:
