What have you eaten today? (Low carb forum)

Took 5 hours but finally dropped to 6.6 last time I tested. These 9.5 mornings thanks to the plague are getting a bit much. I may steam myself once the Grandson goes home.
B. As always 2 scrambled eggs with parsley and a dash of cream, 2 rashers crispy streaky bacon, 2 portobello mushroom and a Herta chicken sausage for a change.
L. Was going to be nothing but I still had a portion of the Diet Doctor Chilli trout from yesterday and it is as delicious cold as it is hot.
D. Diet Doctor cheese filled chicken breast with stir fried courgetti (finally got my spiraliser working properly) , aubergine, mini sprouts and asparagus.

Ah, well when I made that I couldn't get the whole toothpick thing to work. After half an hour of fiddling around unsuccessfully I bunged it all in a casserole dish and just baked it. It was really nice but not particularly impressive to look at. :(

Yes indeed! I looked at the filling, and looked at the chicken breasts, and didn't even attempt to stuff one into the other.
I sliced the chicken across horizontally, so that each breast make 2 flat slices, spread them on the baking tray and spooned the stuffing over the top. It baked beautifully.

Ah, well when I made that I couldn't get the whole toothpick thing to work. After half an hour of fiddling around unsuccessfully I bunged it all in a casserole dish and just baked it. It was really nice but not particularly impressive to look at. :(

Toothpick was a bit of faffing about so I did what I do with the Balmoral Chicken breast - roll out a rasher of streaky bacon and wrap the stuffed chicken breasts like a mummy. Keeps them neat.

L. After 28 miles around the local forest trails on my bike I decided a treat was in order ham salad sandwich, fruit scone with cream and raspberries, large coffee with cream.

D. Tuna steak with grilled tomatoes and some potato salad.
 
My eating over the last couple of days has been a bit chaotic. Looking forward to getting back to Diet Doctor menu organisation.

yesterday
B: none, then Mr B developed a passion for American pancakes, went out and bought a pack, and had them with cream and fruit. Which set me off. I made a sweet mug cake and served that with cream and 2 strawberries. lush.
L: none (too full), then around 4pm I remembered that I had defrosted a slice of orange and rum cake, that needed eating. So Mr B and I shared that, with cream.
D: mince with cheese on top and a huge salad.

The next few days will mainly be DietDoc - aubergine pizza puree, chicken with feta and olives, baked fish with broccol and peppers.

I make low carb ricotta pancakes which are pretty tasty. Pancakes were one of my 'misses' until I discovered the low carb version.
 
It's a fasting day - and due to logistical reasons I won't be able to eat dinner until 8pm at the earliest :(

So,

Breakfast and lunch: Nothing

Dinner: Beef and Stilton burger with salad and sliced avocado with a drizzle of tzatziki - might cook the burger before going out so I can eat it cold or zap it in the microwave when I eventually get home.

L. Cold roast pork slice. ( leftover from yesterday)

55 minutes swimming

D. Grilled smoked mackerel fillet with salad of shredded lettuce, cucumber and tiny plum tomatoes with homemade raita version 1. Strawberries and raspberries with yoghurt.

I will have a pomegranate pot but I may have a few salt n pepper cashews too :)
 
Woke up at a less silly o'clock today so:

B: bacon, egg and mushrooms

L: 1/3 avocado plus broccoli and Stilton soup

D: chicken Garam masala with stir fried cauli and broccoli with spices

1/2 Lidl roll with smoked salmon and avocado for supper - seems to help with FBG
 
B. Bulletproof coffee

L. Strawberries and cream .. can't wait for the British ones, these looked good but were hard with very little taste :(

D. Left over roast beef stir fried with veg, garlic, ginger, cumin and turmeric. Sugar free jelly and cream.

Snack.. none yet but I can feel a packet of pork scratchings calling me.
 
B. Omelette with spiralised courgette, bacon and mushroom.
L. Nothing as going out tonight.
D. Full menu on Diet Doctor challenge thread but I had
Amuse Bouche - that bite of rare beef with the thinnest crisp ever and the cottage cheese with the shrimp and balsamic cherry tomato. There was about 2 bites in the cottage cheese one and one in the beef. Starter I had the sole with the cauliflower and walnut couscous. It was delicious. Soup was unbelievable. Wild garlic and spinach. Only 2 tablespoons but I could have had a full plate.
I have the venison. Could not believe it was served with celeriac and finished with the pineapple. Coffee and I had one of the dark Bailey filled chocolates. White wine all night. A mere £10 per head. Loved it. .
 
Experiment day:

Breakfast: 3 eggs scrambled with soured cream and butter and two grilled rashers of bacon

Lunch: Nothing

Dinner (another late one): romaine lettuce with sundried tomatoes, cheeses, cold continental meats (Parma ham, chorizo, etc), taramasalata, houmous, olives, stuffed chillies, pickled garlic, lidl roll.
 
B: egg bacon mushrooms
L: salad + avocado + mayo + scrummy soft garlic cheese from Lidl
D: more chicken garam masala plus DD naan bread - assuming I get the recipe correct - never measured dry ingredients in ml before!
