What have you eaten today? (Low carb forum)

Breakfast: the usual 2 boiled eggs and buttered Lidl protein roll soldiers

Lunch: Spicy chicken wings and a side salad

Dinner: Slow cooked lamb with aubergine and maybe a few butter beans - not sure about veg yet probably cauliflower rice

2 squares 90%

Plenty of black decaf coffee, flavoured teas and a Friday G'n'T
 
Breakfast - skipped

Lunch - usual Friday visit to Nando's. 5 plain wings with salad

Dinner - bolognese with courgetti and grated cheese; 2 squares Lindt 90%

Woke up to 8.7 so maybe the Lidl roll was a carb too far

Today:
Cheese omelette and mushrooms
Smoked salmon, avocado and mushrooms
DD hamburger patties with tomato sauce and cabbage
 
Strange last night - BG went down to 4.4 at bed time!!!
Woke up this morning to an FBG of 5.5

Breakfast: Two boiled eggs and buttered Lidl protein roll soldiers

Lunch: Maybe some raspberries while shopping

Dinner: Steak, celeriac chips, romaine lettuce, tomatoes, red onion and sour cream dip

Snax: Prosecco and 90% Lindt
 
Yesterday was an Eating Day:

B: Dietdoctor feta pesto chicken olive thing with cauli rice
L: ditto
D: Dietdoctor aubergine pizza

and I think there were 4 squares of 70% in there too, but I can't quite remember when

Today will be:

B: none
L: bacon and eggs, while out
D: probably Dietdoctor stuffed peppers with broccoli on the side

Also, if I can wrangle it, I want to try a gluten free brownie at a cafe I trust. Purely to test a theory, you understand. :angelic:
 
Forum was a bit iffy yesterday so here goes 2 days worth. I keep relapsing with this flaming cold but hubby kindly informed me that's what it's like. BG still mostly OK - sticking in the 6's bed and FBG and low 7's pre breakfast. Early afternoon it gets down to the 5's. I noticed that during the night I dropped to 4.5 and stayed there a while. So still coughing at night but otherwise not too bad.
Yesterday
B. Another boiled egg from the stock on the way out the door.
L. Lettuce, 1 san manzano tomato, fresh anchovies, tablespoon prawns, Tassimo morning coffee and a dash of cream
D. Aubergine parmigana with oven baked hake dressed with tomato and harissa
Like @Brunneria, I too had to try something in the interests of Scientific research. Tesco have a 90% dark chocolate on offer for 80p. Makers are Chocologic. You can have 4 squares which are a little smaller than 2 squares of Lindt 90% but they are thicker. The carb count is very slightly more but not a lot. Have to say though the Lindt is a smoother chocolate. But yes the Chocologic also lowered my BG.
Today - Saturday
B. Another from the boiled egg stock
L. Very late lunch of lidl high protein roll with lurpack and Smoked ham, lettuce, tomato and helmanns. Tassimo morning coffee and a dash of cream
D. Probably some ham, pork and chicken cold meats with lettuce, tomato, 1/2 avocado, and helmanns. Will probably have a little cheese too. Can't be bothered cooking.
I also feel a wee prosecco coming on and a couple of squares Lindt 90%.

Despite the cold I was still at aqua yesterday and swimming with the grandson today. Got caught in some torrential downpours today but it has cleared now.

@Chook- I got 2 hardy fuchsia at Morrisons today and a pack of 20 mixed geraniums for £3.
 
Completed my first 24 hour fast today (from dinner last night to dinner tonight).

Started the day with a 50 minute brisk walk - sun was out and much of the route was along the Thames. Lovely.

Breakfast - none

Lunch - none.

Felt a bit light headed around 1.45 so had a couple of spoons of cream. Also tried a cup of bovril a bit later on but really didn't like it, so reverted to tea.

Dinner - home made burgers with onion, tomato, spinach and feta; broccoli; sugar free jelly with cream

Have you tried Marigold Swiss Boullion powder? I use the vegetable one but I know there is a reduced salt version as well. Much prefer the taste to bovril.

Lunch: 3 Brazil nuts and 3 walnuts

Dinner: Roast chicken, Mr C's sausagemeat stuffing balls, roast parsnips, roasted carrots, cauliflower, broccoli, runner beans, h/m low carb cranberry sauce, gravy

Pudding: Low carb raspberry crumble with full fat Greek yoghurt. (Crumble topping is made with butter rubbed in to ground almonds and coconut flour, then add in splenda, pumpkin and sunflower seeds and linseed crunch . I had this last week and it didn't affect my BG at all.
 
After a better BG number (bed 5.2 FBG was 6.6 and pre breakfast 6.9) finally decided on today's family dinner
B/L 2 rashers crispy bacon with a fried egg and a Lidl high protein roll. Tassimo morning coffee with cream.
2 squares Lindt 90% Excellence.
D. Usual campari and soda and a wee prosecco.
Sardines grilled with oil, garlic and parsley and fish cakes with cauliflower mash binding not potato
Diet Doctor stuffed cheese chicken breast with @Ultramum's find the best ever cauliflower mash

@Ultramum I found the recipe on the Internet, I make the mixture into 6 in a muffin tin. I find them handy as a bread substitute.

LAUREN'S FLUFFY BISCUITS
1 cup plus 2 tablespoons almond flour (4 ounces)
1/4 teaspoon salt
1/2 teaspoon baking soda or 3/4 teaspoon baking powder *
1 1/2 tablespoons cold butter, shortening or pork fat (18 grams or 1/2 ounce) **
4 egg whites

In a medium bowl, mix the almond flour, salt and baking soda or powder with a fork. Cut in the fat using the fork until the butter is all incorporated and the mixture is crumbly and not dry (I used my fingers to mix the butter in). Chill this mixture for at least 5 minutes and preferably longer to get the fat as cold as possible (I skipped the chilling step).

In a small bowl, beat the egg whites with the fork until they look foamy. Add the egg whites to the almond flour mixture and whisk together with the fork for just to break up any large chunks of flour. The batter will be thin and lumpy. Divide this into four portions in a muffin top pan greased very well or lined with nonstick foil. Bake immediately so that the fat doesn't start to get warm. Bake at 400º for about 12 minutes or until golden brown.

Makes 4 biscuits
Can be frozen

* The recipe seems to work with either one. I used baking soda. Although baking powder does have carbs, there are not enough to affect the counts.

** I made half a batch of biscuits so I had to weigh out 1 1/2 tablespoons of fat and then remove half of it to get 3/4 tablespoon. I used pork fat because I thought it would give the biscuits a nice flavor.

Per Biscuit: 221 Calories; 19g Fat; 10g Protein; 6g Carbohydrate; 3g Dietary Fiber; 3g Net Carbs


I prefer to use baking powder as the bicarbonate of soda has a strong taste.
 
And can I just say the 'better than potatoes cheesy cauliflower mash' is indeed better than potatoes. I had my doubts but it works. The cauliflower does look like mash and you have none of the phaffing about trying to get liquid out of the cauliflower. One thing I would suggest is to use white mature cheese. I used orange and it is a sort of Trump tan colour
White would be preferable. Colour aside it tastes great. I have had to cover it and put it to one side to stop eating it before dinner. No 'gloopy' bits at all.
