What have you eaten today? (Low carb forum)

Mine was a Black Friday, last year purchase, and I think I'll have a baby one, when the 3ltr comes out, to go alongside the cauldron. I just love it, and my most recent, in a whole line of delicious concoctions was this:

I didn't add the palm sugar, just a bit of sweetener at the end, then saute to reduce the fluids a bit.

For second time around, when heating it, I added a bunch of stir fry veg and beansprouts to make a sort of main meal soup. Nom, nom.

My IP + CopyMeThat have made life a lot simpler. I'm sort of tempted by the 4 minute roast beef concept, out of curiosity more than anything. :)

Agree - @Brunneria awakened me to Copymethat and it is great as I kept losing my favourite adapted recipes.
It's on the go again today making chilli for hubby and Grandsons for tonight.

Saturday:

Breakfast: One fried egg, two rashers bacon, grilled tomato and about half a dozen grilled mushrooms

Lunch: Two crackerbreads with 100g low fat pineapple cottage cheese

Dinner: Probably our last barbeque of the season - One huge prawn, three chicken wings, one lamb chop (small), a small piece of steak, some yoghurt / garlic / coriander dip and tomatoes and lettuce

Dessert: I had Alpro choc and hazel nut icecream while watching every one else pig out on gateaux (the desserts were supplied by our guests)

Drinks: Black coffee with breakfast, mid morning and lunch then sparkling water until neighbours arrived for the BBQ - after that it was red wine all the way except for one glass of Prosecco

Sunday:

Breakfast: Egg, bacon, tomato and mushrooms

Lunch: Nothing

Dinner: Roast beef, a tablespoon of carrots, broad beans and parsnip - then filled my plate up with cauliflower, purple sprouting broccoli and runner beans

Drinks: Black coffee with breakfast and mid morning then sparkling mineral water until I had a couple of glasses of red just before and with dinner.
 
Today:

Breakfast: 2 egg Sweet omelette with 40g raspberries

Lunch: One BFree wrap wrapped around a bit of salad and a spoonful of houmous

Dinner: Chicken thigh with baked Mediterranean vegetables

Drinks: Coffee with lunch and mid morning and then sparkling mineral water for the rest of the day
 
Bed 5.8 FBG 6.8 and pre breakfast was 6.5. Today is a leftovers day for me but chilli is on the go for Hubby and Grandsons.
B. Slice of Bfree toasted with lurpack. 2 scrambled eggs with parsley. Tassimo Americano grande with a dash of cream.
L. Marigold Swiss bouillon.
D. The last of the Tom Kerridge's lamb shank madras (only one left), cauliflower cheese (using the better than potatoes recipe for cauliflower mash but not mashing it).
Another bit of that delicious low carb black forest gateaux from yesterday. Will need to feed some to brother and Hubby as my mind has calculated 4 portions of the black forest gateaux is 19.6 g carbs and 1300 calories.

Back to fasting today to counter some of the excesses of the weekend.

Breakfast - none

Lunch - none

Dinner - initial plans were looking a bit light on calories and fat so have added in a couple of treats. Sea bass fillet cooked in butter with a splash of lemon juice, sautéed kale and broccoli, 10 raspberries and cream, 3 squares (20g) of the Hema 85% chocolate. All about to be prepared.

Drinks - 1 mug tea with cream, 1 mug tea with milk, 1 Diet Coke, 1 sparkling water, about 1.5 litres still water

L: an ilumi chicken curry meal thing (7.5g carbs and 200cals) that we got a long time ago for Mr B if he should come home from work at 3am ravenous. Obviously this hasn't happened, because the thing was hitting its use by date. Which is why I had it. Basically a mildly curried soup like sauce with a few blobs of chicken in it.
D: a huge portion of spag bol sauce made with vast amounts of courgette, pepper, 2 carrots, tinned toms, GARLIC, a dash of red wine, and all the little twiddles like worcestershire sauce, a pinch of chilli, oregano, etc. All done in Instant Pot. Since it is based (loosely) on a dietdoc recipe, there will also be spinach stirred in to wilt at the last moment, and mozarrella ripped into chunks and scattered on top.The proportions of mince to veg are OK so I don't need anything else.

D Cod baked in butter, parsley and lemon juice with broad beans and DD cauliflower mash (PS mash made with individual Boursin garlic and herb portion. Tastes like heaven, try it! :) )

Today ...

Breakfast: Two double decaffeinated espressos with cream and xylitol. Half a low-carb roll with butter, a small piece of low carb New York cheesecake.

Lunch: Nothing.

Around 4 p.m.: A large bowl of tuna with celery and mayo.

Dinner: Nothing.

I will have blood tests tomorrow morning -- keep your fingers crossed for me.
 
Out of bed around 0700. At 1100 I had a green and red onion salad with maybe 4 oz roast chicken. For supper at 1830 I had a delicious chicken (2 drumsticks as a serving) curry recipe (from a website called keto connect) I made over some chopped steamed spinach. The taste and aroma were awesome. Best of all, some leftovers for this week.
 
First good luck ziggy and Goonergal on your upcoming bloods. Sure you'll be fine. Bed on 5.8 , had quite a drop at 3am which kicked into a FBG of 7.3 and pre breakfast was back to 6.7.
Can I also say the Tom Kerridge lamb shank curry and the black forest gateaux is even better second day. Fed a large slice of black forest gateaux to Hubby and brother yesterday so it's finished now before I get any ideas of a black forest gateaux diet!
B. Fry up as hubby wanted one. Small slice black pudding, 2 rashers of crispy bacon, 3 cherry tomatoes, 2 chestnut mushrooms, 2 black farmers daughters GF chipolatos, fried egg and Tassimo Americano Grande with a dash of cream.
L. Slice Bfree toasted with lurpack. Black tea.
D. Salmon fillet, tablespoon prawns, 1/2 avocado, lettuce, tomato, 2 Walnuts, 20g red Leicester cheese and of course Helmanns.
Need to get another batch of chia pudding made.

Good evening.

Was quite hungry today, but had lunch planned with a colleague so didn't need to hold out too long!

Breakfast - none

Lunch - colleague wanted a kebab. Fine by me. Small mixed lamb/chicken doner (no bread) with salad. Unusually managed to eat it all.

Dinner - small portion of sea bream fillet with lemon and chervil butter and tenderstem broccoli, 20g Hema 85% chocolate. Will have to get some more of that, it's very good. Only a few Hema shops in London though.

Drinks - 1 mug tea with cream, half a mug of tea with milk, 2 Diet Cokes, 2 litres water

Really very annoyed today.
I skipped breakfast, and was on a work training course today. I specifically requested a gluten free lunch, because up until now that usually gets a nice salad and some fruit. But my work recently changed the catering company they use.
Lunch turned up - no gluten free special. The catering company were called and were advised "The chicken satay sticks are gluten free". There was one satay stick per person. I was too bullheaded to give in and eat the flobby white bread sandwiches they had laid on.
So, I was a very Hangry Luceloo by the time I left for the day.

Stopped by my parents house to pick up the poochlet on the way home (my dog goes to Nanny Daycare everyday), and they must have felt sorry for me (a) being hangry, (b) being on my own tonight due to Mr Luceeloo being at a Tractor Club night. My lovely Mom cooked me a dinner of Chicken breast, Cauliflower cheese mash, and green beans.
It repaired the damage caused by stupid caterers at work. I am taking my own lunch tomorrow.
