What have you eaten today? (Low carb forum)

Really very annoyed today.
I skipped breakfast, and was on a work training course today. I specifically requested a gluten free lunch, because up until now that usually gets a nice salad and some fruit. But my work recently changed the catering company they use.
Lunch turned up - no gluten free special. The catering company were called and were advised "The chicken satay sticks are gluten free". There was one satay stick per person. I was too bullheaded to give in and eat the flobby white bread sandwiches they had laid on.
So, I was a very Hangry Luceloo by the time I left for the day.

Stopped by my parents house to pick up the poochlet on the way home (my dog goes to Nanny Daycare everyday), and they must have felt sorry for me (a) being hangry, (b) being on my own tonight due to Mr Luceeloo being at a Tractor Club night. My lovely Mom cooked me a dinner of Chicken breast, Cauliflower cheese mash, and green beans.
It repaired the damage caused by stupid caterers at work. I am taking my own lunch tomorrow.
Got to ask.....Tractor Club Night?

Good morning all. Thanks so much @maglil55 and @Chook for your kind words. Got my bloods done yesterday, but won't find out the results until Monday. I convinced my GP to include HDL and trigs -- as the usually only do overall cholesterol in Germany.

Yesterday ...
Breakfast: Nothing.
After doctor's visit: Two double decaffeinated espressos with cream and xylitol.
Lunch: Nothing.
Snack: Two babybel cheeses and a handful of pecan nuts.
Dinner: Oven-baked zucchini chips, stir-fry of red onions, bell-peppers and lamb with sour cream and cheddar.

We will be off for a two-trip to Amsterdam today. The first vacation I had for a long time. I am really looking forward to this. Packed a lot of goodies just in case, I get hungry and don't find any low-carb food. The goodies include different nuts (macadamia, brazil, almonds and pecans), Greek yoghurt, low-carb rolls, butter, babybel cheese and 85% chocolate), so I defintely won't be starving.

The plan for today (Wednesday) is

Breakfast: Two grilled rashers bacon and one fried egg

Lunch: houmous wrapped in lettuce leaves - (the BFree wraps I've been having are lovely but are spiking my BG so the rest are going in my husband)

Dinner: I've got a courgette in the garden the size of a small marrow so I will be baking that and having it stuffed with chilli - and maybe some cauliflower

Drinks: Black coffee with breakfast and mid morning then sparkling mineral water for the rest of the day. Target for water is a minimum of 2 litres.

Bf turkey slice avocado slices on a lettuce wrap
Lunch will be either egg salad avocado burger ( avocado bun!) or tuna salad avocado bun burger. Lettuce and onion
Dinner. Whichever lunch wasn't and asparagus

2 Nespresso's and sparkling water.

5:00 piece of melted cheese with toasted pecans and a cocktail.

Yesterday:
B: lc paleo porridge (I LOVE this stuff, and it is only 115 calories and I think only about 9g of carbs with nil bg impact)
L: carvery meal with inlaws. masses of veg, surprisingly low fat, and none of the carby and gluteny options
D: coconut wraps filled with lettuce, tomato, diced peppers and chipotle chicken (think coronation chicken except I put chipotle chilli in the mayo instead of curry paste)

Today

I've missed out so many days on this thread! I'll Never catch up!!
So I'll just put todays meals in (Wednesday 6th)

Today (Thursday)

Breakfast: 2 bacon and 1 fried egg

Lunch: 100g pineapple cottage cheese on two crackerbreads

Dinner: Its Thursday so its fridge clearance day..... the last of the roast chicken thighs with (baked or cooked in a saucepan) ratouille - aubergine, courgette, onion, red pepper, mushrooms, tomatoes and any other suitable veg I can find in the fridge that needs using up - if calories and carbs allow it I will also finish up the cauliflower

Drinks: Black decaff coffee until lunchtime then sparkling mineral water after that

School/nursery run done, physio done, now just my taxi driver role and I can get on with something practical. Bed last night 6.3 FBG (to my surprise) 4.7 and pre breakfast was 6.4.
What I liked less was when I remembered I'd better scan the Libre it revealed a rapid jump between the 4.7 and the 6.4 (which was on rapid descent). It hit 8.7 and turned. Can only assume liver didn't like 4.7 and dumped a fair shot into the system.
B. Slice Bfree GF bread toasted with ox tongue and 4 cherry tomatoes. Tassimo Americano grande with a dash of cream.
L. Ox tongue, mortadella, 4 cherry tomatoes , 4 mozzarella pearls and 3 Walnuts. Tassimo Americano grande with a dash of cream.
D. Rib eye steak with mustard and salad of lettuce, tomato, 1/2 avocado and 3 Walnuts.

I've seen that pasta made from red lentils for sale in Sainsbury's (I think). I was very, very tempted - please let me know how your BG gets on with it. :)

There's a few places got it. Low carb it isn't. It will be low GI but I suspect it will fall into the same category as porridge - some of us can tolerate it others can't. The carb count is anything from about 24g to 50 odd g per portion. Sugars are low though.

Bloods taken for HbA1c this morning. Despite a 50 minute early morning walk and drinking copious amounts of water, blood did not want to appear. Eventually came out of the back of one of my hands. Results won't be known until next Friday - my surgery is one of those that doesn't put info online and getting information from reception is even harder than getting blood out of me, so have to book an appointment with the GP.

Breakfast - none

Lunch - out at meeting so picked up something to eat in M&S. Santini tomato salad with wafer thin roast beef.

Dinner - home made burgers (mince, feta cheese, spinach, onion, tomato) with sautéed courgette and broccoli; 10 raspberries and double cream.

Drinks - 1 mug of tea with cream, 2 mugs tea with milk, 1 Diet Coke, about 1.5 litres water
