What have you eaten today? (Low carb forum)

Hi Goonergal. I keep reading on here about this chia pudding,what or where do you get chia,and how do you make it. Their seems to be different flavours would you please send the receipe would like to try it. I try not to do sweets after meals but it's hard sometimes so having something I could eat occasionally would be Goodtoknow K
 
Yesterday's food
Breakfast nothing only drinks coffee and fruit tea or green tea
Lunch 2 slices of smoked bacon on 2 slices of M&S Spelt,pumkin seed and honey loaf dash brown sauce cup tea
Evening meal pork chop sweet potato chips done in oven fried egg cup tea
Supper usually nothing after evening meal only drinks but fancied something so had 2 small plain biscuits,can't say I enjoyed them just a craving.K
5 lb from weight target of 5 years ago! K
 
OMG - I'm well behind with this, so....

Friday:

Breakfast: Lidl protein roll bacon and mushroom sandwich

Lunch: Soya coconut yoghurt with a spoonful of chopped brazil nuts

Dinner: Chicken and salad, Alpro hazlenut and chocolate icecream

Drinks: Decaff tea with soya milk - think I'm going to give up the soya milk because it makes me feel a bit queasy.
Sparkling mineral water until dinner time then red wine with dinner and another glass in the evening


Saturday:

Breakfast: Lidl protein roll toasted with melted cheese and baked beans

Lunch: 150g fresh raspberries

Dinner: Grilled lamb steaks, salad and Nando's sauces, Alpro hazlenut and chocolate icecream

Drinks: Tea with lactofree milk, sparkling mineral water and red wine with dinner and another during the evening
 
Sunday:

Breakfast: Bacon, eggs, low carb sausages (Asda chipolatas), grilled tomato, mushrooms

Lunch: 150g fresh raspberries

Dinner: Roast Lamb, small amounts of roast parsnips, glazed carrots and broad beans - filled plate will cauliflower, brussel sprouts and runner beans - mint sauce and gravy - dessert: some more Alpro icecream

Drinks: Decaff coffee with breakfast, decaff tea until dinner then red wine


Monday:

Breakfast: Two rashers grilled bacon, 1 dry fried egg

Lunch: 125g Some very nice Muller latte yoghurt

Dinner: Sundays leftovers - roast lamb plus veg - no dessert

Drinks: Decaff tea until lunchtime then sparkling mineral water

I don't post here everyday just occasionally but today been so busy not eaten anything yet just finished a cup coffee.
May have some soup and a slice bread later
Going to cook a chicken curry for evening meal with no rice for me,if I can muster up the energy I will go out for a cabbage and have shredded cabbage has a rice substitute. But it does depend on how I feel later. May just have any veg I have in.
Suppers are usually just drinks.
Not a very inspirational menu but I'm shattered after cleaning conservatory for 5 hours and I have to go to sons tonight has its my daughter in laws birthday tomorrow.K

Hi @Granny_grump_

I'm reading this in my lunch hour at work, so will give a full response once I get back home tonight. Chia refers to chia seeds - you can get them from most supermarkets. I'll send a link to the recipe tonight - I also hadn't heard of this before joining in this thread. The chocolate version I make isn't sweet - I put just enough sweetener in to take the edge off the bitterness of the cocoa, but not enough to make it sweet.

I've just made a batch of the chocolate one. I use a mix of that Green & Blacks unsweetened Cocoa and the Crusha no added sugar milk shake stuff. Felt in need of more chia pudding!

Not quite home but here is the recipe for the chocolate chia pudding:

120 mls single cream
240 mls unsweetened almond milk
64g chia seeds
25g unsweetened cocoa (I use Bournville as it is the lowest carb I can find at 14g per 100g)
25g xylitol

Makes 4 portions.

Mix everything together thoroughly and pour into serving bowl(s). Then put into the fridge to set. I usually leave overnight but usually sets in a couple of hours.

All these ingredients are interchangeable- some people use coconut milk for example. The key is to get the balance between seeds and liquid right so you get the consistency right. The first time I made it there was too much liquid and I didn’t enjoy the texture. The quantities above set the pudding solid. Delicious served with extra thick double cream.

Yesterday
B: LC paleo porridge - had forgotten how much I love it - and how filling it is!
D: butter chicken curry with courgettes, onions, peppers and aubergine, followed by berries and cream. Huge. All that veg... I could barely move!

Today
B: forgot
L: about a 1/3 of the butter chicken portion I had last night!
D: stir fried med veg with chicken breast strips with a scattering of diced salami and grated cheese. Will be berries later once I have recovered from the veg. Again. :D
 
Hi all.

The fasting continues so just dinner again. Got very hungry this afternoon and was down to 3.8 by around 230pm. Liver kicked in and 4.6 before an early dinner at 445.

Dinner was at Nando’s- 3 plain wings and a plain chicken leg with salad and mayo. As got so hungry added 30g mixed nuts to up the calories and fat.

All this plus 3 cups of tea with cream still only came to just over 1000 calories and just under 8g carbs.

I'm one of the coconut milk group. I use one 400 mls tin of coconut milk (full fat) to 4 tablespoons of chia seeds. From there the flavourings are variable. The Crusha sugar free milk shake stuff is not bad although as I said earlier, the chocolate one I also add a little of the Green & Blacks cocoa powder. Or it can be as simple as 1 teaspoon of vanilla extract.
 
Bed 5.2 FBG 5.1 - Happy Halloween. Busy day again. I pick up No 2 grandson for lunch then off to Gym Monkeys. He was dressed up in his first outfit which I said 'Oh look Robin Hood' only for him to inform me he wasn't Robin Hood he was Peter Pan. Still I flummoxed him by asking where his fairy was . He changed later into his outfit of the Emporer from Star Wars.
B. Black coffe
L. Nothing
D. Chicken thigh with peppers, green beans and peas and a creamy mustard sauce. Mini cob and a portion of better than potatoes cauliflower mash. A wee prosecco and chocolate chia pudding with 6 raspberries.
Needed food - BGs were at 3.7 and dropping but returned to 5.5 post food.

Update on evening Meal had curry but hubby call supermarket and got me cauliflower rice to go with it,followed this with 4 strawberries and a spoon of Creme fraise cup tea,
I did end up with Mexican bean soup and 2 slices of M&S Spelt and pumpkin seed bread
Before bed I tested BG it's 5.4 . See you all tomorrow K

Hi Goonergal thanks for the recipe will look out for the ingredients at supermarket and let you know how I get onK
 
B = Fresh coffee
L = none
D = Tin of Asda stewed steak in gravy, tin of sliced mushrooms topped with mashed swede and crated cheddar baked in oven. Plus a bit of brie nibbled whilst cooking.
S = 2 bags pork scratchings and a sandwich made with 2 slices of Burgen bread, Blue Wensleydale cheese and mayo.

Tested before bed and 3.9mmol thought this might be false reading so tested again and 3.8mmol.
