What have you eaten today? (Low carb forum)

Hello everyone today I for snacks I had early afternoon snack crisps cheese and onion flavour late afternoon I had two slices of toast and for dinner I had weight watchers mac n cheese I was 9.5 before I ate it but I came down to 6.4 I’ve had 6 units of novorapid in total today and noticed I’m taking 5-6 units of novorapid so I’m going to try 12 units of levemir tommorow instead of 10. Bedtime snack was toast I always give it a hour or so to go down, have a nice day everyone:)
 
Hi all. Not a vegetable in sight today.

Breakfast - none

Lunch - M&S Serrano ham and Manchego cheese rollitos and a bag of M&S pork crackling.

Dinner - kippers with butter followed by 5 hotel chocolat 100% buttons.

Chocolate is made from cocoa beans, beans are vegetables! :joyful::hilarious:
 
Although I have been watching this thread, never felt comfortable posting as I feel my meals are rubbish/not inspiring!

But I have learnt lots from others on this thread (&forum). I have found I am now planning my meals and feel more comfortable experimenting with my food . So here goes my first ‘what I have eaten post.’

B- none

Lunch- Keto Fritta with spinach, raspberries and 2 tbs of cream

Snack- adonis brownie

Dinner- Cauliflower and Broccoli Cheese with a handful of spinach followed by 2 scoops of Oppo ice cream

A mug of decaf tea
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: cauliflower, broccoli and celery salad with ham and Caesar sauce followed by Greek yoghurt and raspberries.
Mid-afternoon: lemon chia pudding and a black coffee.
Dinner: chicken and mushroom stirfry, including cabbage, carrot, red onion, beansprouts and soy sauce. No noodles of course just extra beansprouts to fool the eye! Followed by salted caramel Oppo and strawberries with 10g Lindt dark chocolate Easter egg (yes I know I still have Easter egg! It was a huge one!)

No such thing as a rubbish meal, I think we all get inspiration from what other people post and what may seem rubbish to you may be inspiring to someone else:p Quite often I have the same thing several days in a row as it is just me and there is no such concept as cooking for 1!
B: coffee & cream
L: random snack bar bought after hospital appt. 8.2g of carbs but it wasn't very tasty:***:
D: a random selection of food items based on what I had available. Wild boar burger, 2 fried eggs, baked avocado with cheese. Pudding was more chocolate brownie with vanilla Oppo.
 
I have scales that have a mls setting. 50mls = one scoop according to Oppo’s blurb

My scales say exactly the same in g or ml for the Oppo. However neither of them match the contents of a tub - if I empty the contents of one of the small 100ml tubs into a bowl and weigh it is always around 68g/ml. I don’t get this discrepancy with anything else. Makes it very hard to be confident in measuring portions out of the larger tubs.

Funny you should say that! I just read a post on Oppo’s Facebook page from someone saying they’d be short changed as their 500ml tub only weighed 300 and something grams. This is Oppo’s reply “Don't worry you haven't been robbed! In a nutshell, creating ice cream involves aerating the contents so it's scoopable and the perfect texture. Therefore a ml scale isn't set up to weigh ice cream because of the different density to water :)

Interesting. So measuring out around 60ml gets you to a 100ml portion!

1g = 1ml so it doesn't matter which unit you use.

Oppo says it’s to do with the density. 1ml of water = 1g but ice cream is different here’s their explanation “ In a nutshell, creating ice cream involves aerating the contents so it's scoopable and the perfect texture. Welcome to this thread CranberryIce. I don’t think your food looks rubbish at all - it’s very similar to what many of us have.
I’ve found a lot of inspiration and good simple food ideas here, I’m sure you will too. Keep posting.

B. Chunky multigrain porridge made with cinnamon and almond milk. Slice of HiLo toast with butter and vegemite.
Black tea, black coffee.
12pm. Black coffee, very small low-sugar flapjack followed by 7 mile walk.
2.30pm. Flatbread, babaganoush, hummus, olives, diet coke.
Snack. Black tea, Aldi chocolate nut bar (6g carb)
D. Stirfry of tofu, pak choi, Swiss chard, broccoli followed by Greek yoghurt and 3 tinned apricots.
Too much carb generally I think.
 
I had a lot of carbs today, too, but I was wondering how the testing normally goes for you with porridge because for quite a while I was having on a doc's advice whole oatmeal with nuts, tiny bits of dried fruit and cream.

I basically had to give up babaganoush and hummus which I homemake as I cannot handle pita or even lavash andcannot stand these without bread. and I have had to adjust to plain yoghurt or kefir which I drink.

Ah, you have got me! I have never tested myself. I have been in the non-diabetic range of HbA1c for the last 4 years so I have made the decision to make life as normal as possible on a LCMF diet. The time may come when I revise this though!

Gee it is so annoying when your BGs stay up despite your best efforts. Bed 7.5 FBG 7.7. Doesn't look too bad for being off colour but I've lurked in the low 8's most of today despite 1 hr of aqua zumba and swimming 600m. I forced my way through it as I was still achy but the exercise has improved the aches thankfully.
B. Just coffee
L. M&S bits and bobs. Tablespoon prawn cocktail, lettuce , 4 Santini tomatoes, tablespoon waldorf salad, 4 mozzarella pearls, roasted peppers and not quite a tablespoon of their tuna, beans and red onion.
It wasn't as big as it sounds but I was hungry after my exercise.
D. Got a turkey escalope soaking in buttermilk and I'll dress it with the leftover pork scratching/parmesan crumb I've been keeping in the fridge. Got a veg mix and will have a duck egg with it.

Got to say this is weird. I don't feel too unwell - just sore.
 
@maglil55 the turkey escalope sounds lovely. Do you just mix pork scratching sand Parmesan together to form the crumb, or is something else involved? I’ve been experimenting with rolling chicken wings in Parmesan and garlic salt (dip the wings in egg first) but find it hard to get enough of the cheese to stick.

Today’s menu was:

Breakfast - none

Lunch - all day work meeting. Bought a crayfish, avocado and egg salad from Eat and ditched their balsamic dressing in favour of the mayonnaise I’d taken with me.

Dinner - lunch time salad wasn’t enough and was so hungry by dinner which was Waitrose lamb kleftico followed by Oppo chocolate and hazelnut ice cream with cream.
 
I don't have diabetes but I did have gestational diabetes with my last child & I'm overweight so i have recently been trying to reduce my changes of having type 2 diabetes by following a low carb diet. My fasting blood sugars were 5.2 when tested 2 weeks ago, so near the top end of normal. I could really do with some tips on snacks. I work nights & I get really hungry at about 1am! I've been having chicken pieces & mackerel this week but I need more inspiration! Ideally I wouldn't eat at all in the night but it's a 12 hour shift & it's a manual job so it's difficult!
 
Woke up with a rotten headache... which has meant I struggled to keep my sugars in line!

Breakfast- cup of tea(decaf) with a splash of milk

mid morning snack- another cup of tea (decaf), more milky this time

Lunch- Keto spinach fritta, lettuce and cucumber. Followed by 3 strawberries and 2 tbs of cream & then a bite of cheese (maybe 2 bites).

Snack- strawberries and cream.

Dinner- headache still here! Grilled salmon with grilled veg (courgette, carrots& aubergine) and a dollop of mayo. Dessert 10cal jelly
