What have you eaten today? (Low carb forum)

Back from pub around 9pm. Had the most amazing starter of goats cheese soufle with just the right gsrnish offinely chopped salad and 3 walnuts. The nicest looking and tasting thing I have eaten all Christmas. Then seabass and tenderstem broccoli had a smidge of Mr PM’s leek and cream sauce as was a bit dry. On reflection had I known I would have had the soufle twice.
@Annb it was just disappointing that noone turned up to your prayer group after all the effort you made to get there and back. Dont worry about one little bit of shortbread, another thing I used to enjoy and I bet yours being homemade is irresistible.
 
Bed 5.3 FBG 5.2. Was rather restless last night as my left leg was still causing problems. It's a bit better this morning. Nipped out for what had to be the smallest shop ever. They had lobsters in Morrisons today for £3.20 each! Two problems - use by was today and you couldn't refreeze as previously frozen. Sadly I had to give them a miss.
I've had a peaceful day, no requests to be taken anywhere. Apart from the short shop , like @PenguinMum it was a tidy the fridge day and transfer to freezer. Tomorrow if my leg continues to improve I may tackle the carpets. Another hangover from my Granny and Mum @DJC3 - everything had to be spotless by Hogmanay. All rubbish had to be put out and, in these days, the grate had to be cleaned of all ashes. If you don't start early you don't get it done.
B. TAG with ADOC. Slice of skinny bread - half with Dairylea 1/2 with pate.
L. Some of the still remaining turkey with coleslaw. Another TAG with ADOC.
D. Cooked a small ham with a Monk Fruit maple glaze and mashed carrot/turnip. LC Creme brulee with raspberries and blackberries.
I will succumb to LC Baileys tomorrow. @Annb that's sad no one turned up but I guess the time of year and the weather contributes to it.
 
Cream of sprouts with cheddar is nice. Fry off some chopped onion until softened. If the sprouts are raw half them and add to the mix. Touch if chilli or garlic is nice too. Add vegetable stock, lid on and let it simmer for 30 mins or so. Puree, add some double cream and grated cheddar, check seasoning and mix through.

Another one which works is sprout and ham soup. Similar to above but with a ham stock and no cheese.

Thanks for the reminder, used to make something very similar to this and always loved it. Cheese on top is a new to me idea, but def worth trying out.
 
@maglil55 the eunuch comment was another cracker! And yes, not only am I inspecting people’s faces for skinny lips, I am also biting mine gently to make them seem plumper!!!
@Annb what a shame nobody turned up, what a lot of effort for you. Shortbread was well deserved under the circumstances I’d say.

It doesn't really matter if no-one turns up - we are there to offer some sort of support if anyone wants it. A little quiet time did me no harm either.

I used to have quite plump lips but, like my mother, they got thinner as I got older. I hope I'm not unreliable though.

I remember taking Neil to the cinema when he was quite young - probably about 7 - with my mother to see the Swarzenegger version of Conan the Barbarian. We thought it was a children's cartoon but once into the film we thought it was not, after all, suitable for a child and were going to leave but Neil was laughing so much and so uproariously at it that we didn't have the heart to do so. He was certainly amusing all those around us. And this was a child who took himself so seriously. It didn't have any ill-effect on him but I made sure about any other films we took him to. He did go with his Dad to see Alien in Yokohama when he was about 12 and they both loved it. I walked out with our younger son - it was not the thing for either of us.

It helps me track my calories, keep track of my fibre, protein and fat intake. I have custom entries in cronometer for both cooked chicken thigh, and cooked chicken breast, so weighing the meat after it's cooked is essential. Plus weighing food keeps me on track and does help. Plus I am doing keto, so I count carbs, weighing foods is essential for counting carb levels.

Was doing well on lamb stew and coffee with cream until I almost, but not quite, threw out a brown bread loaf bought to make stuffing for my sister at Xmas. Just one slice...
...with loadsa butter.
From 5.5 to 8.5 on the Libre (9.7 on the Tee2+ as the Libre's running an overly encouraging 1.2 low or maybe it's reallll :) )

I guess bread's off the plate and completely neutral avocados are in. Ah well, that's testing for you but I do miss a slice with Marmite.

@Goonergal. So sorry that foot/leg isn't better yet. You must miss your long walks. Are you planning to see your GP again to get it checked out?
@Annb -- Hugs for the car. I really hate it if something is wrong with ours -- even though my husband usually takes care of it.
@maglil55 -- Hope your leg gets better soon.
@Lotties -- Did you know that there is some lower carb bread available at most grocery stores? I am in Germany, so can't make specific recommendations, but I am sure the others will be happy to fill in.
@DCUKMod, @DJC3 and @Goonergal -- I am another TK Maxx fan -- was in there on Friday, looked like a storm had swept through, lots of empty space after Xmas, also means I wasn't tempted to buy anything.

Yesterday blood sugars were still higher than normal for me, so again only OMAD (virtually).

Breakfast: Two double decaffeinated espressos with cream and erythritol. Half a wiener chicken sausage.

Lunch: Nothing.

Dinner: Big King XXL (no bun), two glasses of dry red wine, 3 packages of chicken cracklings, and 20g of 85% chocolate.
 
Blood sugars almost back to normal and also was quite ravenous this morning. Still meant to have only one meal today, but gave in.

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: Two packages of chicken cracklings, 20g of 85% chocolate.

Dinner: Lamb's lettuce with Caesar's dressing, parmesan, 3 quail breasts, and crushed chicken cracklings. Another 5g of chocolate. One and a half glasses of dry red wine.

Thanks for the suggestion. I haven't bought bread for years either but had been eating a daily sandwich from the van that comes to our work until July when I started fasting/low carb. I think it was the texture I craved. Self-loathIng has kept me up really late-what's your excuse? :)

Hugs. No need for self-loathing, I think. We all sometimes miss foods that we can't have anymore. I certainly do, and to be honest I sometimes pinch a tiny amount of real bread from my husband (also helps not to feel too deprived). We are only human after all. Actually staying under 10 mmol after bread is really quite good, I probably would have gone higher than that.

As to being up now -- I am kind of used to it as I often get home late from work. After this, I exercise, eat and then watch some TV. So, guess some kind of habit.

Wow! I'm only up late as no work until after New Year.
Thanks for the support. It maybe didn't go too high, but like my rising blood pressure, it looks like I've tipped over the point where my insulin could cope after 15 years of unstoppable weight gain despite regular enthusiastic exercise and am sliding down into full-blown T2; it's the grief talking. ;)

Breakfast was late
BG 6.1 so decided to let it come down before eating. Ofc this time it rosé to 6.7.
Nut granola and two CWC.
Lunch is where it goes even more wrong.
Still high at 6..6
Somehow we have managed to come home without the smoked salmon and various other meaty/fishy treats but with the pâté an Croute. Similar to pork pie, and the macaroons, as well as several other carb laden "goodies" Fudge, Why have i been given three lots of home made fudge this year? And four boxes of chocolates. Thats a lot more sweet stuff than normal. The homemade onion marmalade though, thats delicious. MrSlim did better gaining three bottles of fizz and one of gin, amongst the usual socks etc.
Dinner MrSlim cooked a delicious rabbit casserole. With sprouts. But I couldn't resist the macaroons.
MrSlim is back on the building programme. Today outside with the chainsaw. Logged the two fallen trees, the started on the ones that are visibly swaying. Three more down. Can't keep up with him so only managed to get the one large tree into the woodshed. The others are slightly smaller,.will be moving and stacking logs again today....and probably tomorrow as well.
Thank you Mum for the lovely thick welliie socks, toasty warm feet all day. That's real luxury.

I weigh the occasional bit of veg to check my portions aren’t creeping up but other than that I don’t weigh much, That’s one of the reasons I like keto/ carb counting: I’m a lazy cook and find it easy to choose from low or no carb foods then no weighing or measuring really needed. I think too many years on Weight Watchers has put me off weighing everything, I got a bit obsessed with it I think.
 
FBG 9.0 - not the worst ever but not good. So I thought I might take insulin and eat early but it didn't work out - first I had to take co-codamol to let me move my legs at all and after that spent a couple of hours in my big chair with a blanket to get some heat into my legs until the co-codamol worked. Neil did warn me that, having walked into the hospital chapel (all 3-400 yards of it) using a wheelchair as support the previous Saturday, I was showing signs still (yesterday) that I had over-done it, which is why he insisted on wheeling me in yesterday. I assured him that someone else would help me get back to the entrance where he could pick me up. But, of course - the best laid plans ... I guess I'll have to stop trying for that level of independence for a bit.

Anyway - no food yet but I have put some vegetable hash and some ready cooked sausages straight from the freezer into the oven and will have that when it is hot enough - probably about 2 o'clock.

I did get a bit hungry yesterday evening but had a mug of milky coffee which filled me pretty well. Maybe that's why the FBG was a bit high. So I will have something else later - it'd better include one of the packs of cauli rice (for medicinal purposed). Might make a kind of "jewelled rice" with some peppers and courgette. That should do the job.
 
Good afternoon everyone. I hope you all had a lovely Christmas. :) We turned of the house phone and all devices that receive emails and phone calls and had a lovely quiet time. Just what we needed.

Apologies in advance for the quality of my typing skills - something seems to have gone radically wrong with the arthritis in my hands (and knees), its sort of ramped itself up from a steady level rumbling level 5 (out of 30) with occasional sharp pains from level 10 to a steady level 15 with occasional shooting pains up to level 30 - the most pain is when I wake up in the mornings but it does wake me up in the night. I'm not sure why its happening and I'm hoping that getting back to normal eating and less stress will help. @Brunneria - what is it that brings on the arthritis in your hands?

My meals have been relatively low carb - it was all the other stuff I've eaten between meals that wasn't a good idea. Its normal work day for Mr C so I've sent him off to work with a carrier bag full of stuff to eat while there with his work colleagues.

The funeral inter family bickering is still going on. Everyone has agreed that what my Mother in Law actually wrote down that she wanted she should have, so Peter Rabbit and Daniel O'Donnell it is. They've now moved on to bickering about the 'do' after and those that think its okay to demand (free) meals and accommodation for 2-3 days! At the moment its between Mr C's (grown up) children in Kent and his older siblings in Wigan - I'd like to keep out of it but sadly Mr C is stuck right in the middle and wants to make everything right for everyone which just isn't possible without forking out hundreds of pounds for hotel rooms.

Three things have made me really laugh though - one was people in Kent thinking Doncaster was minutes away from Wigan, two was having a SIL on the phone to me in tears because the florist hadn't been able to get the exact shade of blue for Peter Rabbit's coat..... bless.... and the third was a very cryptic WhatsApp message from Mr C's younger brother routed through a very distant cousin that a) he had received my text message but b) he doesn't use that phone any more (so how did he get the message?) and c) he can't come back from America for the funeral (where he lives with someone he calls his second wife) because he'll get arrested and will not be able to go back ..... the mind boggles! I've since found out (from his actual wife) that they aren't divorced...... Maybe its me but they all seem determined to out do each other in weirdness.

@Goonergal - that hot chocolate drink looks amazing.... and I don't like chocolate drinks at all!
