What have you eaten today? (Low carb forum)

Do you have vitamins and iron included in your annual panel, Ann?

I'm absolutely not a fan of supplementing, without a demonstrable need, but bearing in mind the proportion of the UK population thought likely ViTD deficient, coupled with where you live, I might be inclined to take some D3, plus K2 for bioavilability.

Those with struggling thyroids can often end up low in B12, ferritin and folate, so it'd be good to know where you are on those at least.

When my thyroid started to struggle, my Vit D dropped from a natural 108 to 29 in a few months. Just as an example.

If your panel wasn't recent, or didn't include these tests, would your GP support looking a them?

Thanks @DCUKMod, you are quite right in thinking that I could be deficient in vitamins - and that's with plenty of vegetables. Sunlight is in short supply here, as well, although, when it does show itself, there is little pollution to keep back any beneficial rays (or damaging ones as my apparently sun-damaged face will testify).

I did have a diagnosis of anaemia and was given an iron supplement to deal with that, although my GP did realise that the last time I tried to take them, my system wouldn't tolerate them and I had to have iron infused at the hospital. However, this time he said I should try again and get back to him on that. I couldn't tolerate them and stopped, then I bought a liquid supplement, which I also couldn't tolerate. That was about 7 months ago and I have been trying to get an appointment to see him ever since - without success. Medical services here have gone downhill very fast in the last year.

As far as I am aware, vitamins have never been included in blood tests, and although I have had blood taken by nurses at the hospital, I have never been given the results and will have to see my GP to get them. I did get a call from another GP because I had a slightly low thyroxine reading at one of the nurse led clinics and was given an extra 25 mcgm to take. Until I can get to see someone face to face, I don't expect to get any further with this.

I was advised, after a DEXTA scan to take a vit D supplement, but once again, was unable to tolerate it and gave up.

Nurses are not keen to take blood from me - my infamy has spread to most of the nurses at the hospital as the meanest giver of blood they have encountered. Usually they have to give up after struggling to get a bare half vial from me. My veins just go into hiding when they see a needle approaching. However, at the last visit - about 3 weeks ago - a more mature nurse was called in and did manage to get 3 full vials, so I am hoping that those results have been made available to my GP and will keep trying to get an appointment. I am, obviously, a problem patient. Maybe that's why my diabetes was missed by medics for so long, until I took a urine sample to a locum doctor and asked if I was diabetic.

Gah! Lost my post...Polyphenols in coffee, tea and fruits can inhibit the absorbtion of heme iron when eaten at the same time. VitaminC can mitigate a little. Perhaps eat your meat away from your veggies and beverages?

Mollasses powder if you are in the US is reputed to help ferretin levels otherwise Mollasses itself (not so diabetic friendly)

Breakfast. none
Lunch CWC. Salad, pâtè, cheese,, 2 slices of pâté en croute. Not as bad as it sounds. Cocktail size, each slice about an inch square. Same with the cake. This is a savory product. Cake texture. Olive and bacon flavour. Very different. Bought a three pack of assorted mini cakes. The other flavours were Chorizo and goats cheese with chives. Cant say i am a fan, which is a good thing. Although the carbs were not anywhere near sweet cake levels at around 20g per 100g.
CWC to drink
Dinner. Rabbit casserole again and again with sprouts. Pink cheapo wine to drink. Later one lemon macaroons and CWC.
Tummy not entirely happy with real coffee in the evening.
 
Yesterday we held a mass for my sister's its a maronite catholic traditional after 40 days for the family to gather together after the death of the family it was very long day. Went back to my brother in laws house after mass for a meal and remembering my sister. They say after 40 days we no longer can mourn the death and that the departed are no longer roaming the earth and have moved on.

My diet still has not been the best under the circumstances and I'm eating as best as I can. I've got two more weeks on prednisone and hopefully I'll be able to get off the prednisone with no flare up of my ulcerative colitis and that my BSL goes back to normal readings and no more high readings of 10 to 15 mmol/m since being on prednisone and I can cut back down on my diamcron as I'm currently on 120mg because of the prednisone so hopefully get back down to 30mg and have less appetite. My morning BSL have still been ok but once I take my prednisone after breakfast BSL spikes to high regardless.

Yesterday morning BSL 4.8 mmol/m

Yesterday Breakfast toast with grilled cheese
Lunch/dinner zartar pastry sushi coffee Lebanese sweets

Today breakfast scrambled eggs with toast and butter black coffee.
Lunch/dinner Cheese and crackers two glasses of rose gin and tonic and handfull of nuts and an apricot.

Firstly @Tipetoo and @annabell1 - on most of our news programmes we are seeing the awful devastation Australia is suffering with these dreadful bush fires. I hope both of you are far away from them or are able to stay safe. (The picture of the little koala bear drinking water from a bottle had me in tears.)

@Brunneria - thank you for your really helpful post - its given me a lot to think about. I can empathise with you about the firecracker knees - I've got the same and a firecracker thumb (which is pretty weird). I really found the nightshades connection interesting as I eat quite lot of the peppers, aubergine and tomatoes, especially in the big salads I've been eating recently. I've also looked at my food diary and found that one or twice a week I've eaten breadcrumbed quorn products (carbs have been counted but they are a recent introduction to diet) AND I've recently started drinking coffee with caffeine (one large mug first thing in the morning) which Dr Google says can contribute to arthritic pain.
( @Brunneria and @Goonergal Do you get a buzzy feeling in your hands with your arthritis - feels like a very mild electrical current running through them all the time? )

@Rachox - I wish I could lose some weight, I really do. When I first started keto it was after five years on ever increasing insulin injections and over the course of those five years I'd gained five stones - a stone a year. After discontinuing the insulin and starting keto I lost those five stones quite quickly but it stopped there and I've never permanently lost any more. :shifty: I'd love to permanently lose another 3 stones but I've accepted its never likely to happen.

@SlimLizzy @Tipetoo and @Lotties - Mr C's favourite way of eating Marmite is stirred in to a fairly stiff egg mayonnaise and I have used it a few times as a flavouring in a vegetable casserole.

@Goonergal - OMG - please don't say that!! I eat a lot of cruciferous veg and they would be the hardest to give up!!!

I think that I'll discontinue the caffeine and gluten immediately and then start an exclusion type diet after we've got this next traumatic weekend safely out of the way. (*This Thursday, Friday, Saturday and Sunday morning are likely to see me hiding under the table with a bottle or two of gin and a big tub of icecream!!) So, first to be excluded will be the nightshades (which I've just deleted from my next Asda order), then my beloved cruciferous veg. Then IF - and its a big IF - those exclusions don't work then I'll try removing cheese from my diet as Dr. Google says it can cause inflammation. :eek: Do you think a month's exclusion (before reintroducing) would be enough before moving on to the next one?

*You may remember that several people were looking to find free board and food during MIL's funeral weekend (Thursday to Sunday) - well, guess what, they've invited themselves here!! Just what I need.

Honestly? 3 months exclusion for gluten. Sorry if that is bad news.
And if you want to do it ‘properly’ then it will be a major reassessment of EVERYTHING from stock cubes to seasonings.
You can get GF vinegars and soy sauce, and so on if you look, but it takes a major rethink.
Some people even react to gluten in toiletries and skin creams.

i went Uber Strict for 3 months, then (because I am human) started drifting. It too 6 weeks for me to think ‘wow, things really are better’.

yesterday’s food:
B: LC hot choc that I forgot until midday.
L: goatsmilk yog that I remembered at 3pm.
D: burglars, with a garnish of coleslaw and 100g of mincepie cheese
 
Now back on topic and on to my food for yesterday....

Breakfast: Half cheddar/half mozzarella chaffle with fried eggs and fried mushrooms
Lunch: A mince pie (oops - bad Chook)
Dinner: A huge salad - torn up lettuce, with chopped cucumber, tiny plum tomatoes, celery, spring onions, fennel root, radishes, red pepper, avocado and cress, with a Moroccan salad dressing, cubed cheeses and uncoated Quorn fillet dusted with garam masala then cooked in ghee (cooled and diced before adding to salad).

Drinks: Coffee with caffeine at breakfast, Diet Pepsi to take meds, then water until mid evening when I had a glass or two of red wine (that was after the phone call I got about next weekend's visitors).

I might swap it round a bit then and exclude the gluten first and then exclude the nightshades after three months... (then the cruiferous.... then the cheese.... I need to exclude them all separately because if I exclude all of them at the same time I'll never know which one is causing the problem).

I had no idea there was gluten in toiletries and skin creams.... :confused:

I've found if I use my phone to do the Asda order I can filter out anything with gluten in it. Surprising how much Quorn product has gluten in it.... :(
 
Been making stuff for Wednesday's lunch this morning and forgot about food for me. But I've put some bacon into the oven and will scramble some eggs to go with it - probably about 2.30.

If I have anything else today it will be a beef burger with cheese.

I'm now avoiding all veg for a while to see if that helps. The idea doesn't bother me too much at present but we'll see how it goes. I might regret my decision when everyone is tucking in to veg soup on Wednesday.

The Kangoo has been towed in to a garage in Stornoway now to see if 1. they can fix it and 2. if it will be cost-effective. If 1. but not 2. or if neither condition is met, then it's a tow to its final resting place and SORN very rapidly (before the end of the month - that will save on insurance). No 2 son was just in and very apologetic that it was when he was using it that it broke down. Can't be helped - it's old and served us well. I am attached to it for some daft reason but it is, after all, just a machine. Must be stern with myself.
 
Already worn out today.

long dog walk yesterday, plus painting the hall walls this morning, and I need to spend the rest of the day OFF my feet/knees. But v pleased with the transformation.

B: didn’t happen
L: will be scram eggs and smoked salmon in a minute, when I stand up again
D: will be the last of the smoked salmon and the last of the mincemeat stuffing, and the last of anything else I spot in the fridge. :D
 
FONDANT!!! That's the word I was trying to think of. Celeriac fondant is what I made on Christmas day. It's taken me that long to remember the word.

Reports of the demise of the Kangoo were premature, I'm told. It was just a loose cable or something. I'll find out in a while, when it arrives home. It still might not pass its MOT, but it will keep going for another month anyway.

Still felt hungry after my bacon and eggs and fell by the wayside - took a Penguin biscuit out of the biscuit barrel. Didn't enjoy it and am now feeling a bit nauseous. Serves me right. Tomorrow is a new day and I'll try again.
 
Evening all.

Two meals and two treats today.

Went for a glorious walk in bright sunshine in Kew Gardens and then along the Thames Path to Richmond. Stunning colours in the gardens.

And one of the best parts of this day out is that Five Guys in Richmond is very close to the river. Bunless bacon cheeseburger with mayonnaise and grilled onions. Yum.

Between Five Guys and the railway station is a London branch of the naughty ice cream shop I discovered in Nee York. Didn’t manage to walk past it today, had a small cup of ice cream containing some 82% chocolate sorbet and 75% chocolate ice cream. Delicious. And, spike peaked at 2.5 mmols above (low) starting point and was back down again within 2 hours. Then visited the pick and mix section - I mean, pick and mix of 75%, 85% and 100% chocolate. Who can resist :D?

Dinner was leftover lamb, warmed up and some gravy, followed by 3 of the pick and mix choccies.

Where I live in Bundaberg in Queensland the fires are mostly under control around the area where our block of land and shed is on.

Where I am now in West Australia there are fires but a lot further east out in the middle of nowhere really, but none in where we are staying on the coast.

According to the environment minister 30% of the Koala population have died in the NSW fires

Sussan Ley’s estimate suggests up to 8,400 koalas may have perished in the bushfires

Wonderful sunny day today - really cheery.
Brunch two boiled eggs, 2/3rd of a toasted chaffle and lots of coffee and frothed up lacto free full fat milk
Dinner - a very eggy day! - frittata with prosciutto chicken mushroom and cheese and one and a half lc cheese scone ( madethis pm and froze some for other days!) glass of dry white. Pudding lc lemon cake warm with full fat Greek yoghurt - delicious.

Dinner: Spicy spag bol, only had a small portion of pasta that was reheated.

Drinks: Black coffee no sugars, beer, rough red ned from Margaret River, water.
 
Repeated coffee with double cream until I ran out then butter instead.
Finished off a 'well-aged' Farm Foods steak which, without veg, piqued my appetite. Another steak 2 hours later with 1 After Eight (bad, bad move today as it wacked up my BG which it didn't yesterday). Had to get some cat food in and still craving food so ate 2 kippers and a packet of porky scratchings. Now v. small sipping Xmas Rhubarb & Ginger Gin Liqueur. Could polish off more grub... time for a coffee...
...two meals at friends' tomorrow. 3 day fast starts NYD.
Edit- forgot the two handfuls of pecans whilst trying to resist the kippers.
