What have you eaten today? (Low carb forum)

Double yolk eggs are normally produced by very young girls just coming in to lay or ladies coming to the end of their laying career. Because of the way commercial farmers manage their flocks its almost certain that supermarket double yolk eggs are from very young girls.
I have both very young and pretty old ladies but never a double yolk :(
Or to be more precise, I've had one, a couple of years ago, and I felt very sorry for the chicken as the egg was double size as well

I also had a complete egg, shell and all, inside an egg once!

Skipping breakfast only lasted 2 or 3 days this week.
Today had greek yogurt with strawberries and seeds before an hours hilly walk
Was cold when got home so fancied a warm lunch. Cheese on toast was calling but resisted and did cheese crisps under the grill with added seeds. Mixed Bovril half and half with veg stock and it worked well as I find Bovril too strong usually. Did succumb to 3 squares 85% choc after but found no effect on meter.
Dinner was cauliflower cheese made just with cheese and cream, green beans and 2 crispy rashers bacon. Finished with 80g melon which again didn't have any effect on my meter. Have been comfortably under the 2 point rise all this week

Busy day again including shifting 850kgs of gravel from drive at front where delivered to and into back garden. It was for a large area around raised beds - used to have bark there but over five years it’s deteriorated and weeds galore were coming through so have cleared large area put new weed suppressant fabric down and then gravel. Satisfying job in terms of results but I’m aching! Did half of it a few weeks ago with our first 850kg gravel bag but needed another to finish it! Gravel delivery isn’t quick! Gather there has been huge demand for it with lots of people trying to do lockdown projects.
Breakfast one chipolata Waitrose 1 sausage, one slice of bacon, half a slice toasted lc bread and -yay- another double yoker egg - @maglil55 funny that we are both getting lots of double yokers - maybe lockdown effect!! I’ll now feel let down though if I get a single yoker!
No time for lunch too busy
Dinner - small pack of cheesies whilst cooking then celeriac chips, salmon with lemon butter and green beans with glass of dry white wine followed by lc raspberry mousse and spoon of yoghurt. Planning some 100% montezumas choc with orange oil with coffee in a bit.

I feel your wheelbarrowing aches and pains. We have a few tons of slate to shift a few years ago. It seemed to go on and on,............ and on.

Whom did you use (we likely need some more for another project)? We used these guys, who were super-efficient and very competitive. https://www.stonewarehouse.co.uk/

Had 3 eggs scrambled at about noon with an Atkins cracker.
Dinner - the rather large T-bone steak with mushrooms. Very nice. I thought it would do more than one meal, but I didn't leave enough of it for a second meal, so I just ate it!

Spent quite a long time trying to sort out this darned Zoom thing on the Fire Tablet. My friend set up a meeting and I tried to join but couldn't get sound. Tried all sorts of things and ended up with a totally blank white screen - no video and no sound. Kept trying but eventually my friend said she would come over and help. She did and got me to set up a meeting, which worked fine. Sound, video and all. So she left and I tried to get in to the meeting at 5 pm. First I had vision but no sound although I tapped the screen as told, I couldn't get the mute button up. Even so, I couldn't hear the others. Pressed buttons and ended up with a white screen again. Turned off and on, tried again. Restarted, same result. Power off and on again. No luck. Gave up! Something to do with my fingertips, I think.

Coffee all morning until nearly 2pm then BLT salad followed by the yoghurt/lemon curd/ strawberry dessert.
Dinner chicken breast wrapped in bacon with fried mushrooms and broccoli. 1 glass red. More lemon pud. Trying to finish all the bits and bobs in the fridge that I know my daughter won’t eat so they’ll just go off next week.
We are travelling back up to West London tomorrow to finally finish clearing the old house so the sale can hopefully get back on track. We’ve hired a big van to go there and back and a skip to be delivered when we get there. It’s going to be an exhausting week I expect
@maglil55 I was thinking I need to follow another couple of weekend of DD keto plans. My BGs are all over the place at the moment. Massive peaks and troughs for no apparent reason. I’m glad you’re feeling a bit better - long may it last.
@Rachox I’m so impressed at your menu choices, and under such difficult circumstances.

Just as likely to be the Amazon fire. Found mine terribly frustrating and now never use it. Somehow it has " forgotten " the Wi-Fi but only tells me my password is wrong without offering chance to input another.

Breakfast, but granola and CWC,
CWC
Lunch: couple of vegetable galettes, fried mushrooms and an egg. Like chook had thought two meals with mushrooms but ate them all. Tea.
Yoghurt and mixed berries.
I know I am eating because I am bored and lonely. but can't seem to get on with anything or stop eating.
Half a dozen walnuts.
Several squares of 85% chocolate during the day.
Chicken crackling. Mmmmm must make more of this.
Munched on some mangetout while picking and preparing them for freezing.
Finally managed to get going about 3pm.
Finished off a couple of painting jobs from the list.
Walked around the garden, accompanied by the cat. She has never followed me before. Found my missing bucket, spent ages looking for it yesterday, today it has appeared along with a plant pot and seed tray by the boundary fence. Am assuming they were swept into my neighbours land by the flood and only discovered yesterday when he topped the field.
More tea and then gjass of wine.
Dinner: took the breast off the chicken and mixed it with leeks, pre cooked from the freezer, topped with roast celeriac slices and warmed in the oven on middle shelf. Top shelf I put tray with all the chicken skin. salted and sprinkled with herbs. Made great crackling and I ate it all during the evening.

MrSlim has had an eye test. (How do they manage that with social distancing) and been referred for a remedial operation on one of his eyes. Another thing to worry about.
2 slices of toast with a camembert flavoured cheese spread.
More wine. And more wine.
I had better go to bed
Lemon tea.

Not much change in our menu again this week, it seems the cooler weather has clagged our taste buds down.

The Indian woman that has a unit next to us, has been cooking some rip snorter curries up, makes ya eyes bleed some of them.

Yappy dog owner on the other side of us, has been cooking school dinner cabbage or some thing putrid.

I will be glad when things go back BC and Iso, lot more cooking aromas available...

Morning all. Didn’t get to post yesterday - very early to bed yesterday after the most stressy week at work in ages.

@Rachox lovely to see you back. Another hug from me too.
@DJC3 I’d offer to come and help but walking all the way to your place and back might be a bit far even for me: don’t think it’d count as an essential trip for public transport!

And all this talk of double yokers @maglil55 @shelley262 and @Chook is making me jealous. Don’t think I’ve ever had one.

Yesterday’s food was indicative of state of mind - extra thick double cream, peanut butter and Lindt 90% in the morning.

Then nothing until dinner which was more sensible - corned beef fried with onions, two eggs and some grated cheese. Yum.

It’s chilly this morning but the sun is out, so means only one thing in this household - walk in planning!

SlimLizzy - If you enjoy the chicken crackling, then an airfryer really does have to be in your future.

I know you missed the bigger one in Lidl, but this week, they have a smaller, traditional drawer style one fore £40.

On a Friday, of late, MrB had been fancying fish and chips from the village chippy. Actually for him fish is a higher risk option, as it quite often will lead to an increased relationship shared between bed and the big white telephone, but the village chippy has been very successful, so far!

Anyway, when he has that, I steal a few chips from the "mini" portion that could feed 4, and do a chicken portion. MrB, who isn't a huge fan of chicken, unless in a curry or such like, has even looked at it longingly as I cut through the all over crackling.

Once tried, you'd be converted, I reckon.

(Your chicken dish sounds very tasty.)

@DCUKMod Had help to get to Lidl last tuesday and did remember to look, but could not see any air fryers.
Is it worth sending MrSlim on another airfryer hunt in the UK?

@DJC3 you made the lemon curd?

@DJC3 you made the lemon curd?

Only you can decide on sending MrSlim shopping, but to be honest, in your shoes, knowing what I know now, with the experience of an AF, I would.

The current Lidl one, in UK, is this: https://www.lidl.co.uk/en/p/kitchen-kit/salter-3-2l-hot-air-fryer/p32285

I have never used a drawer style AF. I went straight for the chamber, but @Goonergal has experience of both, @Brunneria has a drawer gizmo, and I think @maglil55 maybe has used both sorts too.

Chicken, bacon, sausages, belly pork, steaks, lamb chops, chips, and almost anything you could put in the oven can be done in it. The things I mentioned work very well in it, and of course, they don't push out the warmth of a full oven, which is lovely in summer.

Yes, I've used both. Much prefer the chamber. It is just so much more versatile. It's certainly bigger but Hubby has reorganised the worktops and I have to admit it looks way more spacious. It's in constant use and lives on the top with the IP and my Tassimo.

Agree with @maglil55 much prefer the bigger airfryer with shelves - fit more in, easier to clean and seems to cook quicker than the previous one too. Highly recommend.

The first day of my 'staycation' (is that the new word for having a holiday at home?). Went to Scunthorpe to get some more kimchi and some gullajong - a rest chilli paste that Mr C has been wanting since we saw the John Torrode cookery programme on South Korea - also impulse purchased some other stuff like sambal oelek that we didn't really need but thought we should have. No wonder I can't find anything in the cupboards. I then sat in a Scunthorpe car park in the pouring rain drinking a red hot cup of black Costa decaff from a drive thru while watching Mr C scoff a large tray of fabulous looking chips with mushy peas while discussing where we should go to buy a new loo seat. I really know how to live the high life.:shifty:

Breakfast: boiled eggs and buttered Burgen soldiers
Lunch: aforementioned cup of red hot Costa decaff
Dinner: leftover salads from yesterday's dinner with a Linda McCartney burger and some grilled halloumi and a big bowl of baby chard leaves from the garden.

Had a few small slices of gammon about 9 am, thinking I would have some brunch, but I didn't bother. Now it's 5.15 pm and I've just put some sausages and vegetables in the oven to roast. that'll take about 40 minutes. Very easy to do, which is what I need today. I guess so my meal today will be some of that in about 3/4 hour+.

The vegetables are 2 sweet peppers, about a dozen Brussels sprouts and some onions. I was going to make a pork terrine and (maybe) some faggots today but have been feeling a bit off again (my stomach I think, not the virus) so have contented myself with hard boiling some eggs for egg mayonnaise or Russian salad and blanching a whole green cabbage to make stuffed cabbage leaves, possibly tomorrow. That's if I feel like it tomorrow.

Cooler day today, especially later on - full on thunderstorm right now - so used the oven for the first time in ages. Lamb shoulder. Yum. So good I had to go back for a bit more, and drink the remaining, salty, delicious juices.

That shoulder looks delicious. We have leg for tomorrow's roast.

Could you not have done your lamb in the AF? Just adjust the temperature and time settings?

We're using it more and more, and the conventional ovens less, and less.
