What have you eaten today? (Low carb forum)

Evenin’ All

B: Bovril and hot choc
L: baked bassa in curry spices (first time we’ve had bassa. Next time will try a cheese sauce).
D: garlic pork ribs

high winds and heavy rain today, so trapped in house. Bet this weather is doing wonders for the R number. Unless ppl are just meeting up inside, instead...

I was going to make a pork terrine and (maybe) some faggots today
Ah, sometimes the language gap gets me! Looked it up, it's meatballs!

Last day of mixed veg and marinated pork belly pieces today, perhaps with a fried egg or possibly some prawn chips, depending on what my bg says. After all, I have an opened bag from yesterdays hypo's that's calling pretty loud.

Tomorrow will be whatever I can quickly fix from what's in the house as there's more work on the goat fence in the planning.
Car will be having it's yearly thing at the garage on friday, which means it will be gone from wednesday through sunday because of logistics with needing rides to and from home with people who are happy to have me in the car despite covid, so I'll need to think about food to keep me happy for a week as monday will be the only day I have time for shopping before being carless.
No public transport where I live, and I definitely don't fancy a 15 km bike ride for groceries in the flattest, most windy part of the Netherlands!

Evening all. Arrived safely at the old homestead to find we’d had a break in, patio doors smashed and the place ransacked. Waiting for emergency glazier now with rain coming down in sheets outside.
Could have been a lot worse - we hadn’t left anything valuable and the mess was only drawers and cupboards being turned out. Nothing revolting.
Lots of coffee this morning, thankfully Costa at services mostly open. Bought a Grenade Carb killer bar out of boredom late morning and had a spike of 8.6!!! @Rachox I wish my liver and yours could have a Zoom chat and yours could tell mine to stop being such a drama queen and over reacting to non carby sweet tasting treats ( bar had 1.4g net carbs!!)
Lunch was a prepacked flaxseed bun with cheese and chorizo.
A couple of glasses red wine already partaken with olives and cheese and waiting for a delivery from our favourite Indian Restaurant . Chicken shashlik and mushrooms bhajee. The proprietor recognised Mr C on the phone straight away.
@SlimLizzy I’d recommend airfryer chicken skin too. I could never abide chicken skin but since getting the airfryer ( small Lidl one) I love it! Yes I tried the lc lemon curd. Used Delias recipe which uses whole eggs so is less faff. VERY nice.
@Goonergal hugs for the busy, stressful week but yes I think a walk this far might be a big much even for you!

That shoulder looks delicious. We have leg for tomorrow's roast.

Could you not have done your lamb in the AF? Just adjust the temperature and time settings?

We're using it more and more, and the conventional ovens less, and less.

It was. Could definitely use the air fryer - also barely use the main oven - but I got very cold on my walk today (sunny start and wore shorts, but ended up in rain and wind) and fancied warming the place up a bit.

Yes, I can see how that would appeal.

It's been horrid here today too. I haven't got anything done in the garden. Every time I though I might get out there for half an hour, it poured.

I had my wellies all at the ready.....

When working on the fence yesterday I felt quite jealous of my neighbour's compressor we used for stapling.

Still at Mum’s house,
Breakfast: strawberries and cream with black coffee.
Elevensies: black coffee and raspberry phd bar.
Lunch: 1/2 an avocado with mayo and prawns followed by Greek yoghurt and chocolate chia pudding.
Dinner: left over bolognese with mushrooms followed by SF jelly and cream.

Our meal tonight was curry and all the bits. It was absolutely delish!

This afternoon I properly broke out the Soda Splash and infused some gin. It's ages since I've infused anything, and previously, always did it sous vide, in the water bath. Whilst the SV might be fantastic for really tough stuff, what I did this afternoon was blackberry. It was really excellent.

I just lobbed in a few berries I had defrosted, then added a few glugs of gin to that. Screw in an N2 cartridge. Shake for about 30 seconds. Allow to stand for about 5 minutes, and all done.

With that short an investment in time, and the ability to make small quantities, it almost facilitates a make to order, on the day.

Well weather has been really nice here today. @SlimLizzy - when I first got the air fryer I spent a lot of time air frying chicken skin. It is really delicious. @Goonergal Hubby got another 2 double yolks today. We obviously have a batch of them. @ DJC3 - that is awful. I really feel for you. We were burgled when we were in Australia one time. I had to do a conference in London before we flew home and I spoke to my brother who wisely didn't mention it when I had to prep for a presentation. Then sister phoned and told me! How I got through the next day I don't know. Regretfully our house was a mess. Pulled all our clothes and linen out, threw it all over the place then proceeded to pour oil, sauce, soy....anything they could find. My sister did clean the kitchen after CID/forensics had been in. It took her 4 days. Couldn't believe they even stole my kettle and the hanging cutlery I had in the kitchen. Amazingly the police caught them - there had been more burglaries. They got 7.5 years. The lead crook, his Mother ended up getting 18 months since, when they raided their house they found drugs and she insisted they were hers rather than admitting they belonged to the slimeball son.
Anyway, bed 5.6 FBG 4.3. BGs a bit more settled today.
B. TAG and 2 slices of skinny bread with pate.
L. Nothing.
D. Remains of yesterday's seafood salad with a slice of skinny bread and butter.

Hope the glazier gets things sorted @DJC3. xx

I feel your wheelbarrowing aches and pains. We have a few tons of slate to shift a few years ago. It seemed to go on and on,............ and on.

Whom did you use (we likely need some more for another project)? We used these guys, who were super-efficient and very competitive. https://www.stonewarehouse.co.uk/
Hi we used
https://www.gravelmaster.co.uk/
Found them efficient and competitive. Delivery though took a while but think it’s the case at moment about two and a half weeks but gravel was much cheaper than others we found.
Good luck with your project.

Coffee all morning until nearly 2pm then BLT salad followed by the yoghurt/lemon curd/ strawberry dessert.
Dinner chicken breast wrapped in bacon with fried mushrooms and broccoli. 1 glass red. More lemon pud. Trying to finish all the bits and bobs in the fridge that I know my daughter won’t eat so they’ll just go off next week.
We are travelling back up to West London tomorrow to finally finish clearing the old house so the sale can hopefully get back on track. We’ve hired a big van to go there and back and a skip to be delivered when we get there. It’s going to be an exhausting week I expect
@maglil55 I was thinking I need to follow another couple of weekend of DD keto plans. My BGs are all over the place at the moment. Massive peaks and troughs for no apparent reason. I’m glad you’re feeling a bit better - long may it last.
@Rachox I’m so impressed at your menu choices, and under such difficult circumstances.
Good luck with getting house cleared can imagine the thought of sorting it out and big journey will be stressful- I’m so sensitive to this sort of stress even when don’t feel stressed it shows very quickly in erratic bgs. Hope it goes well thinking of you

Thanks Shelley. They are priced very similarly to The Stone Warehouse, but it's fab to have an alternative. I do agree availability could be patchy at the moment.

@DJC3 - I can't imagine how you feel. A burglary is one of my real fears.

I've had a couple of failed attempts here, although on one instance, I had left an outbuilding unlocked. They stole much of the contents of a freezer, taking it away in as many buckets as they could pay their hands on.

My own fault, but it rattled me nonetheless.

Hope the clearing and sale goes through swiftly.

Not your fault. Their fault.

@DJC3 poor you what a thing to welcome you back! Hope it gets sorted - thinking of you.
@Rachox thinking of you too. Sounds like you are managing to stay lc despite difficult circumstances and lovely you are looking after your mum during a very sad time.
@Goonergal sounds very stressful at work - great you managed to get out on a great walk today
@maglil55 our next box of 6 is also double yolks again. Mine are Burford brown extra large and they are very big eggs!
@Antje77 your fence is looking good hope it keeps goats in their space!
@Chook feel for you - this bad weather was bound to appear as you are having to have a staycation but as @Brunneria said will be interesting to see how weather changes peoples behaviour and possible infection rates. In the UK we do seem to go a bit over the top in the brief periods of hot weather we have. Hope weather settles for the rest of time off.
@Annb hope your tablet issues get sorted soon - technical problems are so frustrating.
@SlimLizzy sounds like you are having a bit of a stressful time - must be difficult living in a different country away from family. Be kind to yourself.
Back to topic cold hungry day so had more food than usual and also made batch of lcseeded crackers in oven - like you @Goonergal needed oven on to warm house up!
@MrsA2 i find it difficult to skip breakfast and generally find it easier to skip lunch. My bgs also seem to prefer it when I have a lc breakfast too. I only skip breakfast when in a rush or early start as can’t face eating too early or if rushing out! But my bgs always rise in am when I skip it! When miss lunch they do opposite and go lovely and low in the afternoon!
Breakfast one each of sausage, bacon and egg (yep a double yoker so two eggs technically!) and half slice toasted lc bread
Lunch seeded crackers with cheese followed by coffee with 100% montezumas with olive oil
Dinner starter seeded crackers with pickles and raita with a gin and soda. Lc chicken curry pudding lc raspberry mousse with spoon of yoghurt.

Not your fault. Their fault.

My fault was not locking up properly.

The silver lining was, it was a large chest freezer, so emptying it that far provided an ideal opportunity to properly defrost it and reorganise the contents.

Ah, sometimes the language gap gets me! Looked it up, it's meatballs!

Yes - meatballs, but uses offal as well as other meat plus some finely chopped veg. The best part is probably the onion gravy that goes with it. It's one way of including offal and making meat go further.

No. Things not being locked up doesn't mean they are free to take. If you encountered an unlocked freezer and took everything in it you would still be at fault.

I agree @Antje77, insurance companies may say that it is your own fault if you don't lock doors and I believe it is a different crime as far as the law is concerned, to enter and steal rather than break in and steal but that doesn't change the fact that the thief is to blame for his/her own actions. The victim is not.

Luckily, here on the islands, there is little crime so it is really pretty safe not to lock things away. For example, the only time I have ever used my door keys was when we all went away from the Island for 3 weeks. Not sure that the locks work any more after 40 odd years. The only reason we lock the cars is to stop electrical things being left on and running the batteries down. Some difficulties here I have commented on in the past, but this is a big plus!
