What have you eaten today? (Low carb forum)

That cut of shin beef is called osso bucco at our butchers here.

Makes sense. The traditional Italian dish called Osso bucco is made with that same cut of veal.

This is me up again at 2 am - couldn't get to sleep and my restless leg sydrome was active and spreading to my shoulders and arms. No point trying for any more sleep for a while. Just took some Co-codamol which should deal with it in about half an hour or so. My tinnatus is kicking in as well - not that it will keep me awake, just annoys me while I am awake.
 
Went back to bed about 5 am and did get some more sleep but was up again by 7 am. BG at that point was 13.8. The plan was to take my basal dose and a correction dose. I wrote down in my diary that I was taking the basal dose but then, a few minutes later, couldn't remember actually taking it. (Another senior moment.) I wasn't sure if I had taken it or not so elected not to take another dose. That's probably why by 9 am, BG was 15.7.

I took a larger than usual dose of the bolus insulin and had bacon and eggs for my breakfast. BG dropped to 11.3 by lunch time.

Hungry again by 2 pm so I had my 2nd meal - veggie casserole from yesterday. Not sure if that will be all for today.

If I need anything else later on, it will be an avocado salad.

I am expecting Em this afternoon - it seems she likes nothing better than to visit Granny. If she's looking for sweets from my emergency supply, she'll be disappointed - the last of the boiled sweets went soft and sticky so they have been dumped and the jar washed out. Next week we have to plan for a sleep-over so that her Mum and Dad can go to the mainland on the ferry to pick up a young St Bernard they have bought from a friend who can't keep it any more (he has become disabled and can't control a big, young dog).

I did ask my son why (their house is small and they already have a newfie and a labrador); he shrugged and admitted he wouldn't have any big dogs, but the new dog needs a loving home and DIL has always wanted a St Bernard. He has to go to help bring the dog home because it is both young and big as well as being untrained to walk on the lead. DIL wouldn't be able to hold it back. How both big dogs are to be taken for walks, I have no idea. I actually do love big dogs, myself, but I wouldn't have one!
 
@maglil55 and @Annb I agree about slow roasting shoulder of lamb - wonderful, though I’ve never seen gigot or flank as far as I know.
Today I had breakfast of a bit of leftover ‘pasta’ sheet from yesterday’s lasagne ( it’s a bit like a flat chaffle) fried in butter, topped with cheese and an egg.
Lunch was salad of leaves, Turkey breast, cottage cheese chilli sauerkraut and pumpkin seeds. A DGF raspberry coconut bar to follow.
Dinner was an airfried duck breast with green beans and a large mushroom stuffed with walnuts and blue cheese. Choc chia pud to follow. 2 glasses red.
Maglil55 the butcher did me some pork mince today but our little Co op doesn’t stock Mexican cheese. I bought one of those log shaped smoked cheeses and thought I’d roll it in a little cayenne to use as stuffing for the Mexican melts. Do you bake or fry them?
 
Cheese on low carb toast, small pot of chobani 15% protein greek yoghurt for breakfast.
Ham and salad wraps for lunch.
Liver and bacon, onions for dinner.

B: ff greek with seeds and one flat peach. Bg only went to 7.5. Peach was slightly underripe, will test again tomorrow.
2 exercise classes
L: chunk of camembert and some marmite nuts.
A dash into town followed by another exercise class. This one was a pilates taster.
D: late in a pub with slow service so about 2 and a half hours later than usual. One glass white wine, shared whitebait, then , treat of treats, fish pie. First potato mash in 16 months. 2 hour bg 8.7. Still waiting to see length of curve.
 
Got up at 6.30 this morning - longer than usual in bed, but I paid for it. BG 10.9 and I took Co-codamol and had a cup of tea. Dozed in the chair for a while and checked BG again at 8.30 - it was 15! Took Lantus and Humalog and had an avocado squashed onto Jacob's crackers. By 3 pm, BG was 9.2.

At that stage I took more Humalog and had a chicken leg. I had baked a gammon roast and thought I'd better use the heat for some chicken - I'd taken off the 2 breasts and one leg to put in the freezer and baked off the carcass and the one leg. Currently making chicken stock with the carcass.

I was intending to have some more of the veggie casserole for today's 2nd meal but the chicken might have been enough for today.

Neil actually found me some broad beans when he went shopping so I'll need to use them. Haven't taken them out of the pods yet but they do look a bit elderly (not rotting, just as though they were on the vine too long and are very mature). We'll see. Might make some kind of bean paste, if they are old enough to be bitter.

Em came in again - she has decided that she will come in every afternoon that I'm free (that's most afternoons) and having had a treat and a cup of tea, she wants to go to my bed and be cuddled. That's OK for a while, but my legs and hips won't take it for long.
 
So my trial fish pie last night did peak at 8.7 and took 3 hours to come back to normal. Although it was very tasty I know an lc version using celeriac mash takes just as good and is better for me.

Today
b: yoghurt with seeds and one flat peach and straight into a dance class kept bg nicely under 6.

L : 90 second mug bread with stilton. 2 sqa 90% chocolate
Nice sunny walk, brisk through the field full of young bullocks!
D: chipolata sausage stew with aubergine and cabbage. Tasted much tastier than it sounds. Boys had theirs on cous cous. A Berry bake for pudding
 
I ended up in hospital yesterday and am still here, more of that on the parallel chat thread.
Food yesterday very low carb as I only ate breakfast!
Today mid morning I was allowed to eat but only til midnight so I’ve avoided two breakfasts of non existent low carb options!
Lunch: rubber omelette, improved taste wise by adding salt and pepper, not something I usually do, with cauliflower. Followed by a raspberry yoghurt 7.6g carbs so not too bad.
Supper as it’s so grandly called here!: another rubber omelette more salt and pepper, this time with mixed veg, the yoghurt at this meal was over 16g carb, it was toffee flavour and turns out it’s pot luck what flavour you get, so I had a sugar free jelly that hubby bought in as part of a low carb rescue stash!
I’m nil by mouth from midnight so I’ll have some dark chocolate almonds from the secret stash of LC stuff, before I go to sleep.

I fry them first to seal the outside then put in the oven. I get the Mexican cheese in Morrisons but cayenne in it will work too. Just don't overdo it. Cayenne can be mouth burning hot

Seasoned rubber does not sound appealing! I do hope all is resolved soon and you get back home quickly.
 
Sardines on low carb toast, small tub of chobani greek yoghurt for breakfast, eating something different for a while as I seem to be not eating the usual stuff.
Cocktail prawns in a low carb wraps for lunch.
Pickled pork, and green veggies for dinner.

Hi All
Usual brekkie today of slice HiLo toast and lots of tea.
Lunch will be rollitos, side salad and small spoon coleslaw.
Supper will be stirfried beef and peppers.

Breakfast: at 10 am. A bit late but BG was pretty high still and I wasn't really hungry, so there seemed no point in eating. Decided that I had better, though and had 2 rashers streaky bacon (unsmoked) and 2 fried eggs.

Nearly 2 pm now and still not hungry but eventually I will have some of the veggie casserole and maybe the few bits of chicken salvaged from the carcass. (A litre of chicken stock in a pot and in the freezer.) Em will be in in about an hour so will probably not eat until after her Dad comes to pick her up after work.

I'm hoping to get that 3rd freezer that I have been after in the next week or so. I'll have to move furniture around to find home for it.

For the first part of the summer, I didn't use a quilt on my bed but have recently started using it again. And I've found that I can't remember how to get the cover on it. @maglil55, do you have the link still for the video that shows how it is done by rolling the quilt and the cover together?
 
I'm not going to post here today as doing my carb eating experiment which I'm reporting elsewhere.

Halloumi cheese of toast (that was Plan A consigned to never bother with it again meal), small tub of chobani greek yoghurt fot breakfast.
Chicken pie without the lid for lunch.
Corned breisket and veggies for dinner.
 
Breakfast: usual bacon and egg (2 thin streaky rashers and 2 dry fried eggs) - back to cutting the bacon into small pieces to save my sore gums.

Lunch: veggie casserole with a few thin slices of cheese.

Dinner: baked white fish - not sure what kind; might have been some rather sorry-for-itself haddock but I'm not sure. Tasted quite reasonable with butter, mustard seeds, fennel seeds, paprika and garlic.
