What have you eaten today? (Low carb forum)

Breakfast One ryvita with marmite
Lunch 1 slice of Burgen bread, avocado with coleslaw
Tea will be chicken with celeriac chips and salad

On waking 1/2 an avocado and green tea
2k cycle
B 1 egg omelette with cheese & spinach
L 4 bacon, small piece of cheese
D big bunch of asparagus with lots of butter & sea bass fillet
P young coconut

B: 2 x huge coffee with cream, in an attempt to reduce protein intake. I've been having majorly protein breakfasts over the bank hol. Time to dial back a bit.

L: crustless quiche with a smidge of taramosalata

D: 3x black farmers sausages, cauli cheese, may have Strawbs and cream later.

I just used the standard flax seed bun recipe:

1 egg
1 tablespoon of butter or cream
1/4 tsp baking powder
Pinch salt
2 tablespoon ground flaxseed

Beat well
Microwave 1.5 mins - give or take depending on wattage.

Then today I bunged in a tsp of cinnamon and 2 tsp of erythritol. So it was surprising how little the flavour came through...
Have no microwave so may have to experiment in the oven!

B. Black coffee and a couple of teaspoons of Philadelphia.
L. Pret Italian Chicken Salad and an Americano coffee.
D. 3 grilled pork belly slices with fried red pepper, onions and mushrooms and tinned tomatoes.
Dessert was a punnet of Tesco raspberries and a little squirt of Anchor light cream spray.
Total carbs today according to MyFitnessPal are 64g and bloods have been good all day.

Today's eating:

B: leftover roast pork, cottage cheese, radishes

L: same pork, cucumber, 1/2 avocado

D: courgette/aubergine moussaka, green salad, fermented daikon (homemade)

Today was a great day, low sugars all day, well one was 210 but the rest under 200. Plus my A1 C went from 7.8 to 6.8 finally under 7.
Well done - hard work paying off... :) onward and downward...

Have you seen the 'What was your fasting blood glucose in a morning' thread? We post our fasting readings - some people test as soon as they get up, some run around doing chores and getting ready for the day first...

B: Half and avocado on a small piece of 'bread'
Walked for miles looking for an outfit for my son's wedding which is looming large... unsuccessfully....
L: Bowl of home-made vegetable soup
D: Bowl of salad with sliced fennel, olive oil and salt...
Bullet Proof hot chocolate made with pure cacao pennies... and a good tsp almond butter :)

Can I please ask one question to everyone who knows about bread, I want to bake the recipes I see but why don't you use yeast to raise it, any specific reason, I am no baker but just wondering as no one uses it.

I think it's because yeast takes a long time to prove, and we want our "bread" quickly! ;) Yeast also needs sugar to grow, obviously not found in low carb recipes. Baking soda and baking powder seem to be the raising agents of choice, both act fast and require no "feeding".
