What have you eaten today? (Low carb forum)

Sounds very good.... :) You can make the cheesecake with stevia and make the base from ground almonds and butter - bake at 170, but watch because it burns easily... my friend refused to believe me when I told her it wasn't biscuits in the base... :) lush.... the difficult part is restricting yourself to one slice a day really... :D

I make the topping from full fat cream cheese and double cream, bit of vanilla extract and a spoonful of sweetener. It keeps in the fridge for a few days and I use it as a 'fat bomb'. I've never been too fussed about the base anyway ;)

Dinner will be salad with toasted pine nuts & parmesan & I'm trying out the much ballyhooed Almond & Cheese Bread
Never baked with ground almonds before (weird 'cause I'm a keen baker) so I hope I don't stuff it up!
 
Breakfast hard boiled egg with avocado
Lunch large mushroom stuffed with chopped up peppers , cheese on top and grilled
Tea will be Salmon braised in lemon juice, dill and butter with a huge salad and one new potato .

I wish I could love mushrooms - they're so good for you. Maybe I'll grow into them as I did olives? I should give the stuffed/baked ones a go.
 
I've always wanted to give mushroom growing a go. One of those kits seeded with different interesting varieties...

I'd be divorced though. He acts like mushrooms are cockroaches lightly seasoned with rat poison. Very odd.

Mm, my Mrs is the same - well perhaps not quite so bad. I eat 'em raw, have them with virtually every meal and would probably quite happily live on mushrooms. That may explain the amount of BS I used to get at work before I retired.
 
Should I be taken out and shot at dawn I wonder? I tend to eat many bananas - maybe 3 or 4 in a day. I used to eat nearly 1000 kcal of peanut butter a day but tomatoes are the new peanut butter. I don't count carbs or calories, just bananas and tomatoes (also about 3 or 4 a day). Otherwise I eat meat and vegetables but no bread, no potatoes and pretty much no whaet containing products.

Breakfast this am: 1 banana, 1 tomato

PS: Waht does 4 messages mean and I just saw an alert flash up but missed cliking it, if that is what you do. Where do I find that?
 
Going football today and wouldn't dream of eating anything at the ground so:
Brunch: porridge made with 30g oats and skimmed milk with chopped mixed nuts, blueberries and strawberries followed by a courgette frittata with a grilled tomato, buttered mushrooms and smoked salmon (OH came back from Dublin with a side of the organic stuff - I am blessed).
S: 2 squares of 85% chocolate - will eat at half time!
Dinner: pan fried bream with a side of peas poached in chicken stock with chorizo, onion, garlic and mint and a couple of small jersey royals.
 
B: my usual flax/psyllium/berry/walnut muffin with butter & a black coffee
L: the plan is - flax/psyllium pizza with capsicum, onion & pickled jalapenos
D: the plan is - big club salad & will try out a coconut flour flat bread
@Safi any chance of the recipe for your breakfast muffin?

If I see that I look at the top of whatever page I am on right hand side and it's all flagged up there...click it and see all the bits n bobs that have come in for me and my watched threads
 
Yes, raw is best, lovely mixed with other leaves too.
Cooked is nice too! I love it in a Greek-inspired soup, shredded, with chicken, lemon juice and egg stirred in (avgolemono)

Also, you can wrap fried mince in the large leaves, then either boil the parcels, or stick it in the oven like a casserole (both require water/stock to almost cover the parcels). Delicious served with yogurt!

I used to be able to find sorrel in a market, but not for a number of years. :(
 
B: leftover stewed drumstick and red pepper, slice of cheddar with a pat of butter

L: slim fettuccine with a bacon/mushroom/cream sauce; square 85% chocolate

D: bone broth
 
B: breakfast on the run: I took a small thermos of black coffee and several slices of cheese
L: big salad, with tuna, green beans, tomatoes, anchovies, egg... Also 1.5 new potatoes and 1 small beet, as an experiment.

One thing I love in the salad dressing mix (olive oil, cider vinegar, coarse-grain mustard...) is horseradish.

Lunch....ham salad baguette....packet of Cheddars.......thought I would test out what happens if I ate my ''normal'' Saturday lunch I used to have...BG before eating it was 5.8....shot up to 14.9 two hours after eating it so I guess that tells me no more cheating thinking that I can get away with it :(

Dinner will be something VERY low carb......

I did the same last summer, with a sandwich and a scone. Mid teens BG. Took 5 hrs to go back down.

Tell me about it lol...came as quite a shock on my first day of testing. I guess bread is off the menu from here on in. :(
 
Fillet steak, asparagus, french beans. brocolli, cauli and few peas with peppercorn sauce. Plate licked clean. ... Hubbys nabbed and licked too!
