What have you eaten today?

Bacon,sausage and egg. Two handfuls of nuts, a pepperami and chicken with mushrooms and lardons in white wine and double cream. I may even stretch to homemade ice cream! You have to love Nigella - that woman can cook!

Afternoon snack:
Apple (apparently good for cholesterol)
Hot mug of PG (dash of milk)

Supper:
Baked haddock topped with cheese, poached in milk and butter. Spinach, broccoli.
Fage yoghurt with oats (pleasantly chewy)

Brekkie - coffee with coconut oil and butter well mixed

A slice of buttered flaxseed toast, a poached egg, black pepper, steamed asparagus spears, and slices of grilled pancetta. An adapted Jamie.
 
How do you make cauliflower rice?
Blitzed cauli in a food processor until it looked like rice, fried in a little oil in a wok for a few minutes with some lemon juice and a couple of tsp of Schwartz Thai 7 spice.

Great texture, but still tasted a bit funky to be honest. Will try again with different spices. Maybe Indian spices for a pilau rice kind of thing. It works amazingly as couscous with the Moroccan spice blend el ras hanout, lemon, veg, nuts and feta. I am addicted to that!
 
Breakfast: 2 quorn sausages, a fried egg, ketchup.
Lunch: Fage yogurt with strawberries and walnuts. Creamy decaf.
Dinner: Spicy kidney bean and veg wraps with avocado, pickled jalapenos and cheese.

Got some 85% chocolate for later.

Dinner last night, crustless bacon, asparagus, cheese and tomato quiche with coleslaw and green beans.

BS this morning was 4.0! Well pleased with that meal!
 
Alpen sugar free yogurt ...almond milk

Tomato and roasted red pepper home made soup ....sliced of seed and oat bread....fruit

Afternoon snack will be....small slice of homemade date cake

Tonight will be home made quorn chilli with small jacket potato

Followed by a sugar free jelly and raspberries.....

Hoping for my afternoon 4 mile walk which I do in one hour now. :) but it is sleeting and very cold....
Ummmm walk or blanket with a book......big decision ......x

Was going to make casserole but work got in way so Pan fried chicken mini fillets in garlic butter and slung in pack of Puy lentils, spinach and juice from half a lemon. Had dessert - 150g frozen raspberries, 150-200ml double cream and 1 tsp trubia blitzed in food processor. Only problem is it made 6 scoops and doesn't freeze so the girls who were in bed but not asleep had to come and eat the other 4 scoops! :grin:
