What have you eaten today?

Haha!;) I'm just thinking how to adapt coz have no coconut. I might just use almonds...

I put a wee edit in the recipe post. Just use all almond flour.

I didn't have enough butter so used half butter/half coconut oil. Nom.
 
I'm still thinking.... Just checking if I have stuff to make the almond biscuits, to go with cheese tomorrow...;)
 
Breakfast - eggs on one slice of wholemeal toast, (last of the) rhubarb and cream.

Lunch - on holiday, after a one hour walk, had a very nice homemade 8 oz beef burger, only had some of the chips and half the bun. Didn't test before, but 8.2 2 hours later, not bad but not something to repeat often. It was nice though. Another two hours later, before eating again, 6.6.

Dinner - avocado vinaigrette, 'tapas' of chorizo, houmous, salmon pate, tomato, olives and salad. 6.4 at +2.
 
I prefer not to admit it, suffice it to say my readings were:

before 5.3
+1 hour 9,4
+2 hours 10.5
+2.5 hours 9.3
+3 hours 7.8

OK ..... I had some of my hubby's home made steak, kidney and diced potato pie - thin top shortcrust only, but hells bells it was delicious! My own fault, I had seconds! Not to be repeated for a while. :(

breakfast sausage, bacon medallions, mushrooms, toms
lunch crustless quiche with red onions and mushrooms, slice ham, huge salad
supper steak, garlic mushrooms, salad and red cabbage coleslaw; spoonful of stewed rhubarb( no sugar or sweetener as I'm hardcore) and large tablespoon greek yogurt
 
A fried egg, 3 rashers streaky bacon, mushrooms and tomatoes for brekkie.

Low carb rye bread sandwich with liver pate, butter, cheese and lettuce and full fat greek yogurt and berries for lunch.

Home toasted nuts for snack.

2 egg omelette with a dash of cream, 2 slices of ham, yellow peppers and spring onion with a big green salad on the side. A few olives. Dinner...

Now resisting chocolate and crispbreads...

Very nice! What is low carb rye bread? Sounds like it could be a winner!
 
I bring it back from Finland. Over there the low carb movement has brought products like low carb breads and yogurt into normal shops. It is a bit like a sandwich thin made from a dark continental rye bread.
