What have you eaten today?

Doesn't the almond flour and the coconut flour taste ... well to almondy and coconutty?
Do you mean generally or in the pizza? I find almonds don't taste too almondy in cakes, bread etc. On the pizza, there are so many jalapeños, you can't even taste your own tongue :p

I have loads of coconut flour but have not managed to make anything successful with it yet.

Dunno I just don't like the sound of flour with such a strong taste .....

The almond flour is just ground almonds. Lovely for making low carb muffins. And low carb marzipan sweeties if you like that sort of thing.

So far my fat coffee in the morning and a double espresso with whipped cream in town. Planning to have a couple of home made burgers made from grass fed beef mince, some asparagus, kimchi and butter, yummu.
 
Breakfast bacon.mushrooms, quorn sausage
Lunch Small portion Poulet Basquaise( chicken and pepper stew!), green beans, broccoli
Dinner- out to help at BBQ for choir Mr E is chairperson for. Burger 2 incinerated sausages, slice cheese- no bun or crisps, or cake
Home to slice ham, cheese snack portion, pickled onions.
 
Ok, so today I had a miserably failed attempt at low carb Gouda cheese Doritos.

I put the triangles on my silicon sheet, popped them into microwave and watched them melt into a single bubbly blob. I think it took about 2.5 mins.

But, when cool, I have to admit the blob was gorgeous. Crispy, hard and rather like a cheesy poppadom.

So now I'm wondering what my blob would be with scattered bacon crumbs, or onion shreds...

Diagnosed prediabetic Easter 2014. Just left to get on with it, no guidance or help from GP. Every day I'm learning something new.

Aha! That was obviously my mistake! Got confused with my Brie puffs...

Hmm... Obviously have to try again. Mind you, my Gouda poppadom was brill.
 
Nothing so far today, but am going to have a spinach fritata when my husband gets back from wherever he's dissppeared to.

Breakfast: 45g of berries, 100g Onken full fat yoghurt, sprinkle of ground flaxseed, freshly brewed coffee

Lunch: cucumber, sweet red pepper, feta cheese, sun dried tomatoes, olives, fresh tomatoes, mayo dressing

Snack: unsalted home roasted peanuts, water

Dinner: homemade tomato soup, low carb chocolate cake with fresh cream (made with tinned black beans), very yummy!

Ooh recipe please. A cake made with black beans sounds great idea especially as I have a bag to cook in pantry.

Lunch slice ham, bit of st Agur, celery, spoonful of tuna mayo
Dinner steak burger. Portabello mushrooms, hummus, salad , lashings hot pepper sauce
