2 hour meeting at mum's with a specialist dementia/ end of life care nurse so maybe that affected my levels?

you should really both OFF the scale with all that amount of stress.
been there with my mum.(RiP, God bless her)
Was also dealing with dad having terminal cancer, and if i am honest i think looking after dad was LESS stressful, as i still felt i could DO something, make him comfortable, spend time chatting, just watch a movie and chilling out in silence, simply enjoying each others company.
Not so with mum, she didn't even know who i was, bless, just that i was someone important, judging by her beaming smiles..
As you know..the understanding. i suppose consciousness of the world around her had almost disappeared completely, not sure where your mum is at conscious wise,, but i hope she's at peace inside herself with her surroundings..<pray>
My mum seemed to be, i think.
always humming and tapping to some music in her head, when she wasn't sleeping
( OR laughing with the lovely carers at her home.)
I was heading for burn out and i knew it... full time work,.. up to see dad,...make tea see him right for the evening, ...then off to see mum, ...then home,.. sleep and repeat.. for 9 years.

BEST thing i did was take ONE day off each week..I made arrangements to cover, and that ONE day was mine..
Maybe do the same ?
