What have you eaten today? (Low carb forum)

B - 125g greek yogurt with 30g Paleo muesli
L -lamb curry with cauliflower rice
D - double celery soup with 1 slice Hi lo toast & buter
Snack - some roasted almonds
Drinks - 2 x non dairy cocoa + 2 litres sparkly water
1170 cals 40g carbs
Decided to move things about a bit and make my evening meal a bit more carby - my Libre is telling me my blood sugars are in target but Im at ‘moderate’ risk of hypos overnight - my readings overnight have gone as low as 4.0 but seem to generally pootle about between 4’s and low 5’s. Personally Im not that worried about hypo risk as things seem to automatically go up by a few fractions of mmol whenever I get into the low 4’s - its more that I sttart to feel very hungry and that affects my already abysmal sleep

Edit - plus 20g Montezumas 100% dark chocolate with orange and cocoa nibs. A very satisfying way to consume another 2g carbs. With thanks to @Goonergal for reminding me about my not insubstantial stash of Montezuma bars

Seems I am getting a bit of normality again. Still have a niggling sore throat but no fever. Bed 5.8 and FBG 6 which is much improved.
B. Another Diet Doctor favourite of mine - a very simple 2 rashers of fried back bacon with 2 eggs fried in the bacon fat with parsley. Tassimo Americano grande with a dash of cream.
L. Nothing
D. Diet Doctor Keto cauliflower soup with pancetta (Not adding the pecan nots). Slice Hovis lower carb seeded with lurpack.
Diet Doctor smoked salmon and avocado.

(The rest of them are having steamed jam sponge and custard hence why I am having avocado and smoked salmon).
I will still have my Sunday campari and soda and a wee prosecco.
It's nice not having to think about what to cook. Enjoying my last few hours of freedom. Schools and pre school back tomorrow as are swimming classes, karate, gym monkeys.....back into the routine again. Never mind only 5 weeks to half term.

How was the DD cauliflower soup? Ive wondered a few times about making it, sans Pecans, and currently have a large cauli in the fridge

Hi.

Breakfast - none

Lunch - wasn’t planned, but having trekked to Lidl to stock up on protein rolls (I had my first one last week), I couldn’t bring myself to put them all in the freezer. Lunch was one of the rolls with copious amounts of that nice butter with sea salt crystals in it. Followed up by a few squares of Montezuma’s Absolute Black chocolate with orange and cocoa nibs.

Dinner - tried Waitrose lamb kleftico - https://www.waitrose.com/ecom/products/waitrose-lamb-kleftico/860851-498291-498292 - with a small portion of cauliflower cheese and a touch of tzazikik. Dessert was chocolate chia pudding with clotted cream. Kleftico was pretty good, although I’m not convinced it would feed 4 as claimed on the box. About to put the leftovers in the freezer so will see how many portions are left.

I had 2 mugs of coffeesubstitute and cream, a gluten free muffin (carefully didn't try calculating the carbs!), some M&S chorizo crisps, some M&S pork scratching crisp things (won’t bother again), some diced chicken breast cooked in butter, garlic and with cheese on top. Then a big mug of pork rib bone broth. Oh, and some G&B mini 70% chocs.

A very scatty, busy, disorganised day.
That muffin was the first carb containing item i have had in 10 days or so. No digestive grumblings at all. Yet veg give me spasms. Go figure.

And have actively tried to increase the fat today, which worked well i think. And no upsets there, either.

I like cauliflower soup. I make my chicken stock with chicken though not a stock cube (although I use stock pots to enhance it). Although they are using cream cheese to make it creamy double cream works as well as does some grated cheese. Very tasty and versatile.

I found a use for these M&S pork scratching things. Grind them, mix with parmesan and parsley and you have a very acceptable crumb coating which is low carb.
 
I really need to copy this into copy me that. Lakeland have started doing a chocolate mirror glaze which would be great on this but I need to check the nutritionals- I have a feeling the carb count will be too high.
Scrub that - ingredient 1 - glucose syrup followed by sugar tells you all you need to know - 270mls 154g carbs - enough said.

Sunday ...

Breakfast: Two double decaffeinated espressos with cream and xylitol.

Lunch: Some dietdoctor seed crackers with butter, guacamole on the side.

Dinner: Asian-inspired mixed vegetable soup with oxtail. The last of the low-carb Sacher torte with whipped cream.
 
Breakfast coffee with 35% cream.
Lunch 2oz Genoa salami and 4 thin slices of old cheddar cheese.
Dinner 1 tomato cut open and filled with taco meat, some avocado, sour cream and old cheddar cheese and topped with lettuce.
Kale salad with poppyseed dressing and pumpkin seeds.
 
i dont eat "meals" per say
i just mainly graze on low carb foods

so today i had berries and orange juice for
lows(which im working on reducing)
and two fat bombs
and roast beef with gravy
and diet pepsi
 
Yesterday went back to ham slices for a rising liver block and a block before sleep. A rough night sleep but always sleep better on high bgs. I think my body clock as I'm sure I've never not been diabetic. (47yrs)

Egg stocked up too for omelettes.
Frozen cabbage and frozen cauliflower rice for stir fries.

Going to buy pork scratching again to crush for low carb fishcakes. Might mix fish with cauliflower rice then egg for crumbs to stick.
Downloaded some new recipes over the weekend. :) :) :)
 
My alcohol day left me slightly higher but still within range and at least my DP seems to be curtailing itself again after my latest cold and 'back to school run' today. It is seriously cold too. -7c when I went out to defrost the car this morning. Bed on 7.3 FBG was 7 but DP only got to 7.4 before descending again.

B. I really like this DD no bread breakfast sandwich. Wasn't supposed to be on the menu today but I had ham left plus it is really good. Tassimo Americano grande with a dash of cream.
L. More leftovers - the avocado and smoked salmon thingy I had yesterday. I didn't have a whole avocado yesterday so am using up the other half.
D. Fried salmon with cheesy broccoli- another DD Keto recipe.

Made a couple of changes to my new breakfast favourite. I cook one egg longer than the other so one yolk is hard , the other runny. I put the cheese on top of the egg I was cooking longer so that it melted and gave the ham a quick blast in the microwave to warm it. Stack as per the recipe and a few drops of hot sauce and you are all set.

It is and weirdly it lowers my BG. I don't know if it is down to there only being 2g carbs or what but it is very filling too.

Protein/fat breakfasts always lower my BG. I always think it is because as soon as my body realises it is getting real food it can stop worriting about liver dumping to provide the energy to start the day.

This is why I started having coffee (now coffeesubstitute) and cream in the mornings, whether I eat or not - it knocks my rising BG to a flat line or a gentle decrease, instead of just rising and rising until I eat lunch. :)
