What have you eaten today? (Low carb forum)

Hi the recipe can be found on the diet doctor website, it is very quick and easy to make and I enjoy it, @Rachox has this for her breakfast most days so hopefully she will see your post and provide more info..

I have it everyday without fail! So much so I go into panic mode if I’m running low of any of the ingredients! :joyful::hilarious:
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: left over fathead pizza from last night with cauli and broccoli salad with Caesar sauce followed by Greek yoghurt and blueberries.
Mid afternoon: Hartleys 10cal jelly and black coffee.
Dinner: butternut squashetti bolognese with a sprinkling of grated extra mature cheddar followed by strawberries and cream and 1 square of Tesco 85% chocolate.
 
1pm bacon and eggs

Then we had a bit of a problem emerge...
Turns out that my little online shopping order last night happened when i was a bit peckish.
Never a good idea.
So the delivery arrived, and really, it was like Xmas.
I have no memory of ordering half of it!
The fridge is now GROANING with cream cheese, various different sliced meats, choizo, salami, double cream, a strange cold omelette thing and 3 huge packs of ribs.
Fortunately we have some freezer room, so none of it will be wasted.

The best thing so far is the counter sliced ‘italian salami’ which i microwaved between layers of kitchen paper. 8 slices for 90 secs.
Oh my. Better than the best crisps ever. Better than Kettles. Better than scratchings. Even better than chorizo crisps.
There isn’t any left.

Then at 6pm some thin rib in bbq spices.

I think your crisps are going to become a new classic on this thread @Brunneria. They sound great. I’m going to do a few now
 
@Rachox is our resident coconut porridge specialist sure she’ll post the link for you soon.
Re the eggs no they are low carb and don’t put my bloods up however I have read other posts by type ones that protein puts their bloods up - could it be a protein effect? Proteins don’t generally put mine up thankfully.

Most of my breakfast choices are based around eggs but if they cause you to spike, have you considered low carb bread? Liv
Life is one that is available from Waitrose and is very low 3.8g per slice, occasionally I have ham and cheese, hope these suggestions are helpful, I’m sure others will offer other things to consider.

3.8g sounds awesome! I will be popping into Waitrose as I love bread but have been avoiding it.. just to reduce the carbs.

I LOVE this thread/topic. Can’t wait for my next food shop.

Great idea, sounds fab! Will have to wait 48 hours to give it a try, though.

I love the livlife from Waitrose and my nearest one is a large store but have heard others say it’s often not in stock in smaller branches so hope yours has it. I buy several and split in bags in freezer. I make it into garlic bread and fry in coconut oil too or toast. HOpe you enjoy it
 
I think I have seen it in H&B a couple of years ago, but they may have stopped stocking it. There are other coffee substitutes around, but they tend to be carbier.

We get ours from Amazon, on autodelivery, because it is pretty much a staple in the B household. Much cheaper than coffee too!

Brunneria - DO you have one of those smart buttons for auto-ordering your coffee substitute?
 
If you mean the Subscribe and Save option that comes with Amazon Prime, the guilty as charged, Ma’am.

Blimey - In my mind those buttons are akin to the red buttons on Britain's Got Talent, although I'm assuming no claxon from yours!

Adonis bars have long date and presume can be taken on holiday? Not sure about date on brownies but how could you resist a cake warm out of the oven! Enjoy whatever you choose

Hi Adonis bars only on amazon or direct from Adonis they are delicious but a bit pricey good for train journeys or emergency snacks in your bag!

Only changes I made was cook initially for 50 mins and then add the lemon juice in thirds with 5 mins back in oven each time so takes 65 mins - my family love it.
 
@jayney27 How long do you put in oven for and what temp? If have oven on I could drop a tray in plus do they stay crispy for long?

I use the type of baking tin that you would use for making small fairy cakes, I line each cup with a slice or slices of salami or chorizo, depends on the size of the slice, sometimes I add grated cheese, I pre heat the oven, my oven is a fan oven, I set it around 150 to 170 and they usually take about 10 minutes. I pop them onto kitchen roll once done to absorb the excess oil and once cool they are crispy, they do soften a little bit by the next day but are still nice. The microwave method described by @Brunneria seems like it might get a quicker and crispier result so I’m going to have a go using her method.

Bread was the food item I missed and it took a while to find this one, it’s the lowest I have found that still tastes like bread, my partner eats it without complaining so it must be good :p it’s a dark bread that is seeded LivLife Seriously Seeded, toasts well and tends to have a good shelf life. I generally split mine into portions and freeze so I don’t waste any.
