What have you eaten today? (Low carb forum)

I didn't think it was recommended for canning, but I'm happy to stand corrected. It is great for many other things though.
When we looked on that there t'internet some of the brands claimed to do canning Pressure King Pro being one example, from Lakeland

Ok, thanks. Guess I was spot on telling people to always ask as someone else would be wondering the same thing but didn't dare ask!
And I blame @Brunneria AND @DUKMod for mine. Although mine I got money off as a Good Food subscriber. I paid £69 or £59 I think. I love the thing, in fact I'd like a second one. I don't mind a slow cooker but to get falling of the bone lamb shank curry in just about 1 hour is wonderful. I was used to pressure cookers but this is a whole different world to the stove top variety. My Bolognese was made while I was at the gym/aqua and it just switches over to keep warm. Now if it would only prep everything beforehand.
 
I've only done homemade ribs since the IP acquisition, so I can't compare with before. But I can definitely say that my ribs are now better than any restaurant ribs. Hands down. And I oven pork ribs, but not beef. :)

Oh, and those Tescos buffalo cauli bits look just up Mr B's street! They have even used butter!!!! :woot:

Yesterday:
1pm the last of the cheesy mince
4pm 4 squares of G&B 70%
7pm egg mayo and salami crisps. I think I am addicted.

Also did a Tescos order online for delivery today. Am trying not to remember how much salami was ordered! haha!
Also ordered a lone tin of SPAM.
I have a curiosity to see what happens when I replace corned beef with SPAM in a cheesy eggy corned beef thing. It will either be a disaster, or a triumph. Will let you all know.

The funniest thing is that SPAM hits the keto macros almost perfectly. 80% energy as fat, 15% as protein and 5% as carbs.
But I can't actually remember if it tastes nice, since I haven't tasted it since I was about 8 years old...
Spam popcorn? Seriously? Any time I see /hear Spam my head goes with the Monty Python sketch - Spam, spam , spam , spam . Spam , spam, spam , spam......

I quite liked the buffalo cauli but I think I'll add a bit more spice.

Good evening, here is my intake for today:

B: 2 x SD mugs tea with almond milk

30 mins hoeing and raking

MMS: 2 x SD mug tea; 1 30 mls double cream; 1 Almond milk

Hedge cutting

L: Large Starbucks mug Coffee with double cream

MAS: 1 pint water; Cheddar cheese and salami (couldn’t make 24 hrs once I tasted the pieces of cheese stuck to the bowl of food processor)

Dog walk 40 mins

D: 1 glass Rioja 180 mls (3 jiggers measures); Cheddar Cheese; 3 very large eggs from our own chickens; Avocado; Chia seeds; Psyllium Husk powder; Lettuce; cucumber; radish; spring onion; Olive Oil; Cider Vinegar; Dijon Mustard; 1 pint water with cider vinegar and Himalayan salt

MMS = mid morning snack; MAS = mid afternoon snack SD = Sports direct
 
Hi all not usual Thursday no Pilates as hall being used as a polling station missed it especially as awAy next two Thursdays. No news yet - checked but not yet online.
Breakfast one rasher of bacon, mushrooms and egg
Lunch cheese and celery and one slice low carb coffee and walnut cake
Dinner chilli with one slice low carb garlic bread glass of dry red wine maybe chocolate later.

B: scrambled eggs with cream. Smoked salmon
Tea with whole milk

L: Peppered smoked mackerel fillet, 1/2 avocado homemade mayo. Still hungry after morning gardening so had a couple of rollitos. Sugar free jelly and cream. Tea with almond milk.

Late aft: slice of low carb lemon drizzle cake, tea with semi skimmed milk. I took the cake when I went to meet friends for our fortnightly catch up and gossip. They have been concerned about my non cake eating ( even though it hasn’t bothered me) so I thought it easiest to bring one I can eat. They all tried it and loved it and polished the lot off, ignoring all the cream cakes and chocolate digestives that were also on the table. ( I was hoping to bring 1/2 of it home to last the weekend here) glad it went down well though.

D: kedgeree using cauli rice ( thanks for the tip @Rachox) followed by lazy mousse.

You’ll have to have a go at the coffee and walnut one it’s delicious. I did the icing this time using inulin as icing sugar as the erythritol tastes a bit ‘cool’ I also added a few drops of stevia liquid to sweeten a bit more- it came out like a fudgy icing and was popular with a few friends and OH. I made full quantity this time but split into two loaf tins - one which I iced and the other is going to be used as the sponge part of a tiramisu that I’m taking to a birthday party tomorrow night.

Yes I must try it, coffee and walnut is one of my all time favourites.

Bought the carrots for carrot cake a couple of weeks ago too but still havent made it and the carrots are looking decidedly sorry for themselves now.

My last blood test appeared around 11pm on the patient access site. I think the consultant signing the tests out probably does it in the evening.

Never been much of a cake eater but coffee and walnut is one I would go for. We have made one and it worked yours may be even better. Where does your recipe come from please. Can it be frozen?
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: ham, cauli & brocolli salad with mayo followed by Greek yoghurt and blueberries.
Mid-afternoon: lemon chia pudding with a black coffee.
Dinner: omelette filled with mushrooms and mozzarella with cauliflower & broccoli followed by strawberries and chocolate & hazelnut Oppo and three squares of G&B’s ginger dark chocolate.

It came from link below but I used erythritol which you use in same quantities to other dry ingredients can’t remenber who recommended it @maglil55 i think! I also used @maglil55 way of doing sponges - separating eggs and whisking whites then folding in to mix at the end seems to lighten them

It seems a high carb count but I worked it out as less. I also split into two loaf tins took 60mins to cook. I would imagine it would freeze but I haven’t tried.

I used @maglil55 ‘s separated egg method for the lemon drizzle today too and agree I think it gives a bit lighter texture.
 
Had some weird blood sugar spikes today despite not eating many carbs (17g total all day). Not sure what's happening. Hope it settles down tomorrow.

L: Low carb bagel with salami, emmental, pastrami and spinach
D: Chicken and chorizo kebabs, pepperoni crisps, egg mayo, brie, lettuce, cucumber.
Snacks: Adonis brownie
And a mug of chamomile, vanilla and honey tea before bed.
 
Hi all. Been a bit absent this week - out of sorts feeling unwell and struggling with hunger/eating a bit too much all week. Extra day off on Tuesday so 4 days to sort myself out.

Yesterday’s menu was

Breakfast - none

Lunch - M&S Serrano ham and manchego rollitos, 25g mixed nuts and a few squares of M&S 100% chocolate. M&S seem to have introduced a whole new range of high cocoa content choices.

Dinner - chicken wings coated in Parmesan with buttered cabbage followed by a bit more of the M&S chocolate.
