What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: 2 x scrambled eggs with 1 slice of HiLo toast followed by Greek yoghurt and strawberries.
Mid-afternoon: Hartleys 10 cal jelly and black coffee.
Dinner: kedgeree made with cauli rice followed by chocolate and hazelnut Oppo with strawberries.
 
10am cheesy mince
3pm a MacDonalds quarterpounder with cheese
7pm baked salmon.

Every now and then I need to prove to myself that too much protein is a bad thing.
Job done ;)
Mind you, it prevented me noticing any carb cravings after yesterday. :D

Oh blimey! I’ve just spent nearly £50 on Adonis bars. I Couldn’t decide which to get. It’s always a mistake to browse Amazon at this time of night. (Haven’t even had a drink).

Evening everyone! Did a 24 hour fast today. Broke my fast with a low carb bagel filled with ham, emmental and spinach, with an almond milk mocha. Found ready bottled almond milk cold brew in Sainsbury's - loving it!

Brownies, Blondies, Pecan bars and Vanilla bars!
Managed to check out before I ordered Greenies too. I thought they would probably need refrigeration like the Blondies and Brownies and my fridge is already full of salami, cheese, cream, avocados, bacon etc.

@DJC3 You obviously need another fridge in the new house. I looked at Adonis bars but couldn't find any love for them. Tastes vary, I can't stand using the ipads my wife and grandson love.
I really liked some chocolate bars from a place called Musclefood which worked perfectly for me at about 4 grms carb. Used them as lunch when travelling just in case. Scratched my head and decided to make my own. Bought some silicone trays with bar moulds so will make some (first lot were split so waiting for replacements). Hope to cover flaxseed, psyllium husk powder. caramalised inulin and maybe some raspberries with some of the 2.5 kgs 100% chocolate we have - there was a plan. Did do a prototype earlier in the year so mark 2 should be even better.

I like the sound of your homemade low carb bars, do post the recipe when you’ve perfected it.

I do cauliflower cheese using @Goonergal s easy method. I briefly par boil, put in oven proof dish add a bit of cream, salt and pepper, grate cheese on the top and cook in oven till brown about 40mins at about 180 fan whilst rest of family’s roast potatoes are cooking! @maglil55 suggested a dd recipe which looks lovely too and uses broccoli for the sauce which presumably thickens it but as this easy method works for me I’ve stuck with it.
I use a method that is based on "Better than potatoes Cheesy cauliflower mash". I just don't mash it.
Basically, prep the cauliflower into florets, put in a microwave safe bowl, season add some cut up cubes of butter and some double cream. Turn the florets over to coat a little. Cover with cling film and pierce it a few times. Pop in the microwave for 6 or 7 mins.
Remove from microwave and add a good handful of grated cheese ( I've used various cheeses). Mix through again. Discard the cling film and pop back in the microwave for another 6 or 7 mins (depends how powerful your microwave is) and that's it!
The best ever mash really is best ever. There's a few versions but they are really good if you crave mash.

Another good one is on low carb maven. She's not wrong that the trick to really good cauli mash is keep the moisture out which is why the microwave versions are so good. Steaming still gets moisture in. Anyway, use the microwave method but the additions from the loaded recipe - it's yummy

@ianpspurs hope dogs’ tummies remain calm. Can’t believe it was the Setter who stole the cake not the Lab though! What a relief you didn’t have inulin. I agree about icing on cakes, hate it but your ganache sounds lovely.

@Goonergal have you tried ghee for frying? You can use it at a higher temperature than butter without it burning.

@shelley262 hope you get a chance to relax on your hols. Do you know definitely if your A1c needs repeating?

Nice day foodwise:
B: poached eggs, avocado and halloumi. Coffee with cream

L: Hot smoked salmon fillet with leafy salad and olive oil/ apple cider vinegar dressing. Adonis blondie bar ( my last one, do I order more? ) another coffee with cream.

D: Tried @maglil55 s chicken Cordon Bleu. It was lovely and a great hit with everyone here ( although having walked to Tesco just to get parsley for the coating, I forgot to get it, I did get a bottle of champagne though and we drank it in the garden before eating).Had it with a mixed salad and more of the same dressing. Then strawberries and cream. Lovely.
Sainsbury's do little sealed bags of chopped fresh parsley. I always keep about half a dozen of them in the fridge. Great little things. They do coriander too.

Thank you. I have made the mash from this site, and agree it really is good. It didn’t occur to me to not mash it though!
 
I think I'm catching something again and I've done something to my right hand - pinkie is killing me. Bed 7.7 FBG 7.2 although fine during the day.

D. Tom Kerridge's gammon steak from his dopamine diet with the gerkin sauce but I had a duck egg with it and more of these Tesco cauliflower buffalo bites.

Had No 1 grandson today - schools back on Wednesday.
 
Just had Eaton mess with LC meringues - like meeting a best friend from childhood after years apart. Can't say I don't care what the reading is after 2 hours but not too bothered. Who am I kidding?

Is it just egg whites and erythitol?
@DJC3 Egg whites, triple zero stevia - about 1/2 as much in weight as sugar in normal recipe. Put half of that in at first as normal. The other half you make like icing sugar using herb/coffee grinder and fold it in at the end before placing in the oven. We had a trial and decided this method was best. Erythritol weights will need trial. After a 1 hr dog walk bg @ 2 hrs was 4.8 as opposed to 4.9 after lunch - just before eating EM, so Eaton mess stays! :woot::woot:
