What have you eaten today? (Low carb forum)

Funny day and now at airport hotel as leaving middle of night
Breakfast bacon, egg and mushrooms
Lunch
Chicken salad
Dinner out at local pub gammon with fried egg and salad
Off to bed in a few mins! Adios amigos ........
 
Today has left me thinking do I have diabetes well controlled or does it have me well controlled? Everything I did and everything I did or didn't eat was aimed at bending bg to my will - not a way to live really. To that end here is today's food list:
FBG 5
B: 2 x Pint mugs tea - 1 almond milk and 1 with double cream; BG at ludicrous 5.8
MMS: 1 x large mug coffee and double cream
L: 2 Pint mugs tea 1 almond milk 1 double cream bg 5.1
MAS: 1 large mug coffee with double cream; bg 4.5 finally sanity
D: Cheese and mushroom Omlette; Water: 5.2 after that does nor please me one bit.

I don't have diabetes but I did have gestational diabetes with my last child & I'm overweight so i have recently been trying to reduce my changes of having type 2 diabetes by following a low carb diet. My fasting blood sugars were 5.2 when tested 2 weeks ago, so near the top end of normal. I could really do with some tips on snacks. I work nights & I get really hungry at about 1am! I've been having chicken pieces & mackerel this week but I need more inspiration! Ideally I wouldn't eat at all in the night but it's a 12 hour shift & it's a manual job so it's difficult!

You could try bags of pork crackling or pork scratchings. The Awfully Posh crackling and the Real Prok Crackling Co pork crunch are both good. The M&S crackling (the one in the bag rather than the crisps on the deli counter) are good, but expensive. Pieces of cheese, hard boiled eggs, high cocoa content (70%+) chocolate, nuts (if you can find small bags or have better self control than me).
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream (2 tsp) washed down with a black coffee.
Lunch: left over chicken & mushroom stirfry followed by Greek yoghurt and raspberries.
Mid-afternoon: lemon chia pudding and a black coffee.
Dinner: omelette filled with mozzarella and mushrooms with salad of raw cauliflower, broccoli and sweet pepper followed by chocolate & hazelnut Oppo with strawberries (I reduced my one scoop from 50g to 34g after our convo about ice-cream density last night! :joyful:)

You may have noticed on this thread the addiction to salami crisps (or chorizo). Dead easy to make. Sandwich the slices of salami, chorizo or whatever between 2 sheets of kitchen towel and microwave for about 90 secs. @Brunneria has cream cheese as a dip with it.
M&S also have quite a few individual pots that are very good such as the mozzarella pearls, any of their prawn pots, the antipasto pot with the courgette, peppers, mushroom etc, the rollitos - bits of cheese wrapped in parma ham (they have 2 types), cracked pepper calimari.....theres loads.
 
Trying harder after carby day yesterday.
B. Scrambled egg and smoked salmon on HiLo toast black tea, black coffee.
L. In cafe. Bowl of black bean chilli, sour cream, grated cheddar, more black coffee
Snack. Handful of mixed nuts.
D. Vegetable tagine made with sweet potato, aubergine, red pepper, green pepper, green beans, tomatoes, olives, preserved lemons, dried apricots.

Thanks for the reply. I think my problem is I've done diet plans like slimming world so many times I need to get my head around eating these things as they would be a big no no on those plans! Obviously I need to be careful with my portions but I like the idea of pork crunch & nuts. I especially like macadamia nuts! I might hard boil some eggs at home & take those one day. Is there any evidence that working nights can negatively effect your blood sugars?

I do appreciate the replies, I am coping well with meals at the moment but I could see my snacking on toast & sweet treats at night starting up again without some nice low carb things to nibble on!

Hi, I worked night shifts for nearly 20yrs before I took early retirement in 2016. Nothing I can do about it now but I feel that that may be why I developed type 2. Here’s an interesting read:

@maglil55 the turkey escalope sounds lovely. Do you just mix pork scratching sand Parmesan together to form the crumb, or is something else involved? I’ve been experimenting with rolling chicken wings in Parmesan and garlic salt (dip the wings in egg first) but find it hard to get enough of the cheese to stick.

Today’s menu was:

Breakfast - none

Lunch - all day work meeting. Bought a crayfish, avocado and egg salad from Eat and ditched their balsamic dressing in favour of the mayonnaise I’d taken with me.

Dinner - lunch time salad wasn’t enough and was so hungry by dinner which was Waitrose lamb kleftico followed by Oppo chocolate and hazelnut ice cream with cream.
It's a Tom Kerridge thing with the turkey escalopes. He used sesame seeds, coconut flour , onion flakes and parmesan. I used well ground pork scratchings, parmesan and parsley. Turkey escalope had been soaking in buttermilk all afternoon. I dusted it with coconut flour , dipped it in beaten egg then into the crumb mix. Popped it back in the fridge covered with cling film for about an hour then repeated the egg then crumb bit and just kept it in the fridge until it was time to fry it.
I found with the salty pork scratching you really don't need the onion salt or seasoning.
Amazingly , after lurking about the low 8's my BGs have dropped into the 5's after eating this. It's really tasty.

The salami crisps are very addictive and really yummy. One I should have mentioned is the breakfast muffins. There are numerous permutations. Here's a few of them

I use paper muffin cases and I'm a big fan of whisking the egg whites separately to soft peaks and folding them in (gives a lighter texture). Quick warm in a microwave once you want to eat or just as delicious cold.
 
Another 23:1 fast today hence my 'hodge-podge' dinner tonight to make sure I ate enough for the day!

D: Two chicken and chorizo kebabs, a toasted low carb bagel topped with salmon pate, pepperoni crisps with chicken tikka mayonnaise dip, and two slices of ham wrapped around brie. Washed down with an almond milk mocha.

I wanted to try @maglil55 s crunchy coating earlier this week but forgot parsley and didnt know quantities so I ended up mixing equal quantities parmesan, almond flour and ground pork scratchings. Dipped chicken in egg first then in mixture and fried in ghee. It gave a lovely, tasty, crispy crumb.

Tried a 16:8 fast today, but I always end up eating more later in the day...

B: tea with whole milk

L: chicken strips coated in leftover ‘crumb’ fried in ghee, with avocado and leaves. Coffee and cream.
Adonis brownie ( they arrived!)

MAS: handful of pumpkin seeds

D: while cooking had 2 glasses red wine. DD Indian Butter Chicken with DD naan bread. This was lovely, I was surprised by the naan, the dough looked horrible but they were really good.
Choc chia pud with 5 raspberries and cream.

Another Adonis brownie just now. ( Probably due to will weakening effect of wine) @vanillapie I think you’re right, the blondies just take it, but I do like the marzipan-ish-ness of the brownies.

@shelley262 have a great holiday. Hope you manage to keep the old ‘uns under control.
 
That's interesting. I was 2 stone heavier with my first son but never developed gestational diabetes & I was working 9-5. I started working nights a year before falling pregnant with my second son & I developed it. I know my weight is obviously a big factor as even 2 stone lighter I was still very overweight but I've always felt the night shifts just pushed me over the edge!

I think I'm going to need more eggs! I've had bacon & scrambled eggs for tea plus I had egg salad yesterday.

This is interesting @Rachox I didn’t work shifts as such but was was part on the on call team at the hospital lab where I worked. This meant doing a day’s work then being available all of the following night, often having to get up and come in to the lab in the early hours.
European working directives have changed work patterns so people don’t have to come into work the following day, until 11hrs after their call out now, but it wouldn’t have made a difference to me or many others as I still had to get up in the morning to see to children. And it doesn’t alter the broken night
Like you I am sure this must have predisposed to diabetes. My eating habits the day after were always dreadful - lots of greasy, carby comfort food.
 
Hi all, holiday over so back to normal from tomorrow. Hoping that when I step on the scales I won’t be too shocked or disappointed as for the majority of my hols I was able to eat fairly low carb, I did indulge in dessert most evenings but they were bite size portions and I did take my monitor with me and readings seemed to match those I generally see, there was a low 4.3 one day and a high 7.2 but otherwise they were around my average of mid to high 5’s and low 6’s. Breakfasts were easiest to stay in track with which I hope helped me to stay on track.
I must say I’ve missed keeping up with everyone’s food diaries and have been trying to catch up to make sure I haven’t missed any great tips like the salami microwave crisps :)
