What have you eaten today? (Low carb forum)

And the Keto creme brulee experiment is underway @@DCUKMod.
As I sit doing this they are in the IP with their foil hats on. Regrettably they will have to cool on extraction for a few hours before the comparison can be drawn between inulin and monk fruit. Hubby is already eyeing them and may have to set aside his usual objections to substitutes.
I was going to make just 3 but getting 2 double yolker made it necessary to do the full 6 portions.
And they're out and cooling. They look and smell right. Just the right amount of wobble in the set.
 
Hi all. Plenty of meat today.

Breakfast - none
Lunch - Shake Shack. Bunless double cheeseburger with onion, tomato, lettuce and mayonnaise
Snack - lunch had been preceded by thorough flat cleaning and a 6 mile walk, which caught up with me mid-afternoon. 65g bag of salted almonds hit the spot
Dinner - 2 Waitrose free range Cumberland sausages with 3 rashers streaky bacon followed by 3 Hotel Chocolat 100% buttons

@DJC3 I found the Polish cream cheese. Will let you know how I get on with it.
 
Evening all. I must bring bad weather to Southampton, on every visit it seems to pour down or snow.
Another day, another attempt at this. May not be Keto but fairly paltry carbs compared to the occupants of the Clapham Omnibus. Well, Spurs won, I went to soft play with 1 granddaughter and cuddled the other. Suffolk P girl has names - Isabel Alessia (SIC)- and we have a beautiful picture of her and her brother. Menu below

Breakfast Lots of tea; soy latte with cinnamon at soft play; more tea
Mid morning snack: Tea
Lunch: Tea
Afternoon snack: H/M High fibre chocky bar; h/m flaxseed flapjack; filter coffee with cream
Evening meal: 2 Lo dough wraps with a slice of beef in each; salad leaves; h/m mayo; handful cherry tomatoes; cucumber; maybe a few strawberries and fage 5% later

Bed 4.9 FBG 4.5. Didn't sleep well last night. I have decided that birthday cake Halo Top does not agree with me as I felt rotten the last time I had it too . Sad, because it is nice but I'd rather not have a miserable night. Sis is really happy with her morning nurse but she's still pretty much wiped out. Will see what the next few days bring. I got out early for the shop.
B. Tassimo Americano grande with a dash of cream.
L. Pack of Morrison's goats cheese wrapped in salami. Another Tassimo Americano grande with a dash of cream.
D. Slice each of haslet, ox tongue and ham and 1/2 Slice of roast pork loin. 5 bistro tomatoes and a spoon of coleslaw. A few sweet potato chips.

Awaiting me is 2 , yes 2 creme brulee. To be fair I did split one into 2 smaller ramekins so I'm not being a total pig.
Will still have 5 left until Hubby gets his hands on them. One will have blowtorched inulin the other blowtorched monk fruit. Ah the anticipation. Will have a few raspberries with it.
 
Happy birthday @Rachox. @DJC3 hope your BGs are stabilising again. I hate when they do that for no reason.
@ianpspurs I admire your resilience. Soft Play is not for the faint hearted during school holidays. Soft Play with 2 boys during school holidays is even worse. It's kind of up there with the Natural Science Museum at half term when it is poring rain. Lovely names for the new addition as well.
@Pipp like the others I don't see anything amiss with your menu. I focus on my BGs but I still have a lot of weight to lose. I tend to stick for weeks on end then suddenly start losing again. I just don't let it bother me. Like the others I mix it up a bit. I'm very low carbs, don't count calories but I record everything I eat/drink on My Fitness Pal. One thing that helped me and many others at the start was the 2 week low carb challenges. There's one on this site and the one I followed was on dietdoctor.com. I liked the regimented structure (although it was way too much food so I had to remove some meals). @Brunneria did it at The same time and I'm sure she remembers cabbagegate when we all got our cabbage purchases horribly wrong! If I stick too long then I've discovered one meal a day OMAD gives it a kick. Anyway, welcome.
 
A busy day today and I got to spend my Waitrose vouchers so a yummy dinner was had!

Breakfast-nothing
Lunch, was uncharacteristically hungry so had 3herta chicken sausages wrapped in maasdam cheese, and a square of 90% Lindt which was surprisingly sweet.

Dinner - Waitrose chicken tikka fillets fried and put with a quick ratatouille and cheese. Jelly and cream for pudding.

I’m down 7lbs in the last 2 weeks and sugars have all been under 6.4 today.

These are delicious!! So easy to make too.

2 cups whipping cream
1 tablespoon vanilla extract
6 egg yolks
3 tablespoons monk fruit sweetener

Basically put everything in a bowl and I gave it a good mix with a balloon whisk. Pour into a jug and split between 6 ramekins.

With the instant pot put a cup of water in the inner pot. Put a silicon trivet in. Put foil hats on the ramekins and make sure they're secure. Put 3 ramekins on the trivet then offset the other 3 on top so they are balanced.

Lid on the IP , set valve to pressure, put on manual high pressure for 9 mins. Leave for natural release. It says 15 mins but I left it 21 mins and it was fine.

Leave them to cool. I sprinkled one with monk fruit and one with inulin. The inulin was the most brulee like. Caramelized very quickly, hard crack and a pleasant burnt toffee taste.
Monk Fruit works too. Takes a little longer to caramelize, still has a crack but not as firm ( a bit more torching may help) but a pleasant taste.

I will of course have to repeat this again tomorrow to ensure the results are consistent

Didn’t eat breakfast as I wasn’t particularly hungry and had a busy morning.
Did a spot of cooking, I promised to make a diabetic friendly cake for the fair tomorrow so while that was cooking I made a lo dough quiche, OMG nicest thing I’ve eaten for a while.
L half of my quiche with a drizzle of mayo, cherry smoothie
After a long dog walk I had a frothy coffee and a ham and cheese bake, made with a little bit of the leftover egg custard from the quiche
D pork loin, Stilton, leaves, cherry tomatoes, gherkins, mayo and a loaf size clafoutis with fage yogurt
 
Hi all back home safe after getting mum settled back and happy at hers and pleased I’m indoors this evening it’s so cold and wet with an almost autumnal feel and I’m sure some leaves are taking on a yellow or orange tint!
Breakfast one slice LC bread with fried egg and one slice bacon
Lunch on way home one slice of lc bread made into sandwich with chicken and mayonnaise
Dinner some nuts while cooking, chicken curry and raita with mint and Greek yoghurt and glass red wine followed by one scoop of oppo chocolate ice cream and one cup of coffee with one of my birthday chocs as was still hungry - think it’s because it went colder well that’s my excuse! Will be interesting to see bgs later and in am............ still they have been low today so hoping they don’t react too much.

It was amazing, I hope the remaining half is just as nice cold as I’m taking it with me tomorrow. I’m manning a stall at a summer fair, as staff we will be supplied with a sand which! No idea what they will be filled with so don’t know if I will be able to extract the filling so taking my quiche to be sure I get something to eat, going to be a long day especially as the forecast is not good.
I’ve placed an order for more lo dough, I think there will be many more quiches made :)

Evening all, it’s been grotty here too, miserable weather but I cheered up reading your post @ianpspurs - at least I didnt go to soft play with grandchildren, you have my sympathy. Lovely name for the little one btw.

The LoDough quiche is good isn’t it @jayney27? I must admit I wasnt impressed with LoDough til I tried that.
Well done on the weight loss @purplepenguin and the good bg average. I had a bit of Lindt 90% a couple of weeks ago and, like you thought it tasted surprisingly sweet ( still nice though, such a lovely smooth texture)

Today I had....
B: a scrambled egg and smoked salmon. Coffee and cream.
L:Lamb stew done in IP this morning, and used the ‘keep warm’ function till we were ready. I just had a bit of meat and the broth - left the veg for the others. Followed by Greek yoghurt and a spoonful of chocolate granola ( thanks for the recipe @Rachox - you’re right it needs VERY close watching). I made this mostly for my daughter who wants to follow lchf but thinks she’ll miss her overnight oats in the morning. I think this is nicer.
D: Mackerel salad with olives, walnuts, avocado,feta and leaves. Sf jelly and cream afterwards.

There’s a bit of wine left in the bottle so Ive bagsied that as Mr C is going down the pub in a few mins.

Chocolate mousse with a couple of table spoons brandy in it plus the whipping cream I have left and 90% chocolate and sweetener.

Boring but egg white omelette uses some more. Thinking about it could probably make egg white breakfast muffins too.

I was thinking the egg white souffle omelette, but forgot the choc mousse, which would disappear rapido courtesy of my OH.

Thanks @DJC3 . Soft play was really good. so no sympathy needed. Looks like some real love for Lo dough quiche on here but I just know I would turn the air blue for miles around with that base if you are all following their recipe. Different strokes and all that.
@shelley262 Interesting observation re autumnal. We passed through a few counties on the way here and previously into Suffolk. Oxfordshire and Bucks some tress look autumnal. Cambs, Northants, Norfolk, Suffolk not at all. Hampshire - wet:angelic:
