What have you eaten today? (Low carb forum)

Evening all. Back to 2 meals today.

Lunch was another piece of the cheesy bread smothered with butter and 3 rashers of streaky bacon. It did go well with the bacon. Felt the need for a little something else so had a piece (about 30g) of the Hotel Chocolat 65% supermilk with hazelnuts and a spoon of extra thick double cream.

Dinner was a brined chicken leg followed by 5 of the chocolate hazelnuts and some more extra thick double cream.

Still feeling a bit peckish so might have to find something else to nibble on.

Haven't been here much as life has been very hard - my mum's been in hospital for a few weeks and sadly is on an end of life care plan. Anyway, having got that information off my chest, I have booked my GP appointment to get my bloods retested and find out if I'm doing any good with my low carb diet. I hope so. I had a day off the wagon for my birthday - no cake - but had a lovely lunch out and cinema popcorn.


Back to today...
Breakfast - home made 'muesli' (1/4 oats bulked up with desiccated coconut, seeds and nuts) with coconut milk and fruit. Tea.

Lunch - bacon and eggs. SF jelly

Dinner - low dough fajitas. After lo dough pizza this is my favourite use of LD!

Evening all. I’m getting this post done while I can still feel my fingers - got home from fantastic weekend break to find heating is on the blink. Its very cold in my sitting room.

Breakfast - treated ourselves to posh hotel breakfast. A little plate of Smoked salmon, mackerel and whipped cream cheese first, then poached eggs, bacon, sausage and mushrooms. Lots of coffee and cream.
Completely stuffed afterwards but really happy I eat low carb now otherwise I know I’d have squeezed in a Danish or toast and marmalade, then regretted it.

No lunch but more coffee

Probably wont eat dinner either but have nibbled on some walnuts and a CCB since I’ve been in.

It’s a hot toddy I need!
Hope you get your heating sorted out, you will have to layer all your new jumpers to keep warm. Hot toddy sounds like a good alternative though x

Sorry to read about your mum, life is very tough at times, be kind to yourself and take time to do things that bring you happiness. X
 
Looked for oomni noodles in supermarket this am but none there! So went for what I think was their closest relative naked noodles which are also high protein and very low carb and were on an offer too. Froze half packet as quite @ big portion will be interesting to see how they cope with being frozen will let you know when try the frozen portion.
Breakfast one slice Hilo toast with fried egg
Lunch nuts, cheese and coffee with a small bit of 85% choc
Dinner chicken stir fry with the naked noodles - wonderful - felt like the old days when used to have the s Harwood’s straight to wok noodles. They smelt distinctly fishy on opening but rinsed them and added to stir fry - delicious tasted like the high carb version. Glass of dry white wine. Pudding lc raspberry sponge and fage youghurt.
@Kingmidas so sorry to hear about your mum mums are very special must be a very difficult time you be kind to yourself.
@DJC3 hope you get heating sorted quickly must be difficult. Thank heavens you have those jumpers
@jayney27 hope cheesy bread works well sounds very tempting.
@Goonergal choc hazelnuts sound very tempting
 
A cold but bright day here today, lots of soul searching going on regarding my work situation and decisions to be made.
Coffee with cream and livlife toast with butter and marmite for breakfast.
Lunch was my favourite homemade cauliflower soup and small pack of pork scratchings
Coffee with cream and one Lilly O’Brien chocolate button when I got home from work, I felt in need of a little bit of indulgence.
Not decided on evening meal yet as Andy is still at work, however my kitchen smells lovely, I made the cheesy skillet bread that @Goonergal tempted me with, I’ve made mine with Red Leicester cheese for taste so it looks a little bit on the orange side

@Emma_369 That is not a good place to be -- been there, done that and still feel consequences about 6-8 months later. I really hope you can work your way to a solution.
 
After much debate with myself I/we have decided I/we like you all so much I will keep posting - unluckies.
Yesterday was a large roast - beef rib cooked overnight, roast sprouts,mushrooms and small pieces of banana shallots, mashed celeriac and swede, cabbage, kale and red wine, IP red cabbage with Christmas spice, pigs in blankets; CCB and cream; Cheese, port(s), Madeira - day lasted 3.30 am to 11.20 pm.
Today was lots of coffee and tea in local cafe waiting for recovery vehicle to take car to have wheel changed (5 hrs wait) - someone had lost/never put locking nut in. Meal was salmon fillet, avocado and big salad with chia seeds.
@Kingmidas sorry to hear your sad news; @DJC3 jumpers and base layers needed- no open fire or wood burner?

Can’t decide if it’s the metformin, the lack of foods I’ve always thoroughly enjoyed eating, or my shrinking stomach but not being hungry is literally a first for me! Maybe Subconsciously im worked up about my Hba1c. Who knows

I think the last point is probably spot on and I would also think, counter intuitively, you may be doing absolutely the wrong thing.

Ive had the Naked noodles and agree with you, they are great ( but need rinsing first) I’ll be interested to hear how they freeze. I’ve kept an open packet in the fridge for a couple of days with no problem.

A good thing about Cornwall is that everyone has more than 1 job. The landlord of the local pub is also a gas fitter. As Mr C had nipped off to the pub I sent him a photo of the boiler error message and Mick the landlord popped straight round and sorted it. It cost us a pint on his return, brilliant! Gradually peeling the jumpers off now.

Sounds like a difficult situation. Hope you can find a way through it.
Thank you. I’ve been on a secondment, it was extended as the manager wanted to keep me on his team and is now offering a more permanent role, however I have to apply and be interviewed for this. It offers more variety than my previous role and is at a higher salary but it means continuing to work with a very difficult person and in a team that I can see changing quite a lot in the coming months......

Maybe once it’s done I’ll relax a little more into life as a diabetic. Hopefully it’s a phase. I’m definitely not skipping meals intentionally - I’ve never had that mentality. I love food!! Usually :angelic:
