What have you eaten today? (Low carb forum)

@DJC3 thanks for your dd lasagne suggestion I just used and modified a bit the pasta recipe from the dd site https://www.dietdoctor.com/recipes/keto-lasagna
I’ll put adapted recipe in the new updated recipe booklet as just made it for two of us and did my usual bolognese sauce and topping what a revelation it was. I’m now wondering if I could play with pasta recipe a bit more to use in other pasta dishes. I used to do a chicken pasta bake I loved. I think this pasta using psyllium husk ground into a flour mixed with eggs and cream cheese is similar to fresh pasta and much nicer than the fake pastas you can buy. Will report on results of experiments over next few weeks! Meanwhile wow first lasagne in over 18 months OH loved it too.
Breakfast bacon and egg withone slice of Lidl low carb roll toasted
Lunch tin of mackerel in olive oil and ACV, a few nuts and three of my new lc seeded crispbreads (0.5g carb in total) plus with coffee two 100% hotel Chocolat buttons.
Dinner lc lasagne with salad leaves followed by lc lemon mousse.

Looks a bit complex - this diet dr one is very easy so going to experiment with this first. Plus no impact from this pasta my bloods pre dinner were 4.8 and only 4.9 two hours after! So will def be doing again.....
 
Just a quick post before I read back and see what I’ve missed. Today has been a day of ridiculously high bgs for no reason at all

B:none as still fasting

L: At a friend’s who tried very hard to make a low carb meal ( butternut squash soup, crusty bread, then quiche, lots of couscous and lentil type salads) luckily there was some cold meat too and green salad so I just had that, felt bad at refusing the rest, and hope she didn’t take offence. I brought the pudding-trusty lemondrizzle cake so that was ok, although a larger slice than I would have cut.
Guess what my 2 hr reading was? 8.6!!!!!!!! Repeated 8.3 How on earth can that be possible? It’s like being in the same room as bread and pastry caused a reaction. It was quite hard to carry on being sociable after that, I couldn’t stop thinking about it. By the time I got home and tested again with a new batch it was still 7.6

D: fathead pizza. Levels still higher than I’d expect at 6.7

What a blooming depressing day.

DJC3 - There may have been something unexpected in what you'd eaten or the ubiquitous sticky finger, perhaps?

Sometimes, we just have to shrug and move on.

@ianpspurs that is a great way to have fruit! Maybe my neighbor up the street would take my apple donations! Or... one bite would lead to one bite every day. Not good.
I have a feeling that I’ll be having my labs in Feb, after Thanksgiving, Christmas, and my bday— every time.
@DJC3 I am sorry... I have read someplace long ago that just the smell of sweets (or bread maybe) can indeed cause your body to react as though you’d eaten it. Wish I could remember details..
Bfast 1/2 avocado, egg, I think a few nuts, decaf/cream/soy
Lunch celery, 1 cherry tomato, tortilla (La Tirtilla) with butter and almond butter, 2 sq 90% chocolate, cream
Supper at at carby restaurant with mom and bro. 1 (oops glazed) pecan, 1/8 tsp cheese bits, skipped the tiny piece of pear; spoonful of butter while bread was served; plate of sweet tasting roast 1/2 chicken with glazed sweet kale and cauli which I’m sure was quite delicious but couldn’t eat. A sip of very boring local Belgian style white ale that was quite dark and not worth the money. Bo-rring!
Very late evening so no walk. Will really regret that at 0500 but that’s life.
ETA: and some oat fiber came today, so for snack now I had yogurt with cream and oat fiber. It was Just Like eating buttercream frosting, minus the sugar and with a certain gentle graininess. There is an adaptation in there somewhere!
 
Got back very late from holiday last night as my daughter sprung a surprise visit for the last night and day so we wanted to spend as long as poss with her before she returned to Uni.
So here’s yesterday’s food:
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: cold bbq chicken with leafy salad, one cherry tomato, cucumber and duck scratchings followed by SF jelly and 2 x LC lemon shortbread biscuits.
Mid afternoon: too busy socialising, so just sipping on Diet Pepsi.
Dinner at Bella Italia: I had their new butternut squash ‘lasagne’ again followed by a coffee with cream.
 
@zauberflote - yes, pastry was another of my lessons and same instruction, gentle use of the finger tips only. I only ever made puff pastry once just to prove I could do it.
Going feral? I have a few and oddly it's only things I had once in a blue moon. A pack of salt and shake crisps with no salt used, a Morrisons scotch pie - freshly baked and still warm, free choice in a Chinese, freshly baked artisan bread, still warm with butter melting on the slice. I'm stopping now!
@dunelm - we always have Burns on the Sunday closest to Burns night. Tinged with sadness this year as it was the last proper meal my brother had last year at ours. Difficult to believe we're coming up to a year already since he died.
Anyway, yesterday bed 5.7 FBG 6.1.
B. Tassimo Americano grande with a dash of cream. I wanted something different so I made the ricotta souffle pancakes with 5 blueberries, lakanto sugar free maple syrup and 4 rashers of very, very crispy streaky bacon.
L. Nothing - 1/2 day at school so got boys and off to Lego club and library book change and son wanted to go to Tesco after to get everything they needed for burns night.
D. Hubby decided he wanted Chinese so I went for what I had handy - chicken wings rubbed with some Nandos stuff and sour cream and chive dip. Few mixed berries and cream.

Today - going OMAD. Bed 5.4 FBG 5.9
B. Just my usual Tassimo Americano grande with a dash of cream.
L. Nothing - going in search of more tripe and a few odds and sods I didn't get in the M&S shop on Thursday.
D. Has to be a burger - bunless with a portobello mushroom, coleslaw, cheese slice , veggie chips and a little salad. Hubby wants mince round! No wonder my feral feelings have come to the surface!

@maglil55 feel for you remembering last year keenly just now. What are the veggies in veggie chips please and can anyone suggest a LC Chinese sauce for stir fry ideally sweet and sour oriented (DD recipes need not apply. Would have cream cheese in it):arghh:

I've used this one before. He has a few Asian type recipes on his site.

Veggie chips - originally I used the strong roots veggie chips but I cant have too many as they're dusted in something. Just do my own now and freeze them - beetroot, parsnip, celeriac, carrot - Morrisons do the fancy beets which make it quite colourful. Thin chips.
