What have you eaten today? (Low carb forum)

@Chook so glad you treated yourself *and* got dropping bgs! And that’s so funny about the turmeric stains on the tablet! Hope he can wear yellow to work!!

@BibaBee I had one of those car inspections a few weeks ago! I was three months out of date anywY, so terrified as I mostly drove around with my high beams on (one low beam inop, also a traffic offense) for fear of getting pulled over and fined for the inspection sticker! I did get pulled one night in Dec, nice ossifer only gave me a warning about a taillight that was ALSO out! $2 grand later, got my car back. No more used car dealerships for me! Yay working from home, boo big bill coming up... if it’s a Honda or Toyota, it’s worth the money to keep it going another 2K miles....and phooey! You just reminded me I was going to eat the leftover cauli rice. Just now.
 
Today started out higher bgs again, but I saw two nicer ones later in the day. Forgot to check before bedtime...here’s hoping for a brighter tomorrow. PPs are acting as usual; rise of less than or much less than 1, or as sometimes happens, dropping. But it’s all higher in absolute numbers.
Bfast 1/2 avocado, egg, two cherry toms, , <1/4 cup mixed nuts mostly pistachios because it’s the very bottom of the jar, decaf/soy/cream and I think more cream.
Lunch 2 cherry toms, some mushroom slices, celery. Took the lc tortilla with almond butter, and the 2 squares 90% choc on the road.
Snack the beginnings of soy/cream cocoa. Not warmed, and couldn’t begin to finish it, so most of it is stored in a pint cream bottle in the frig for tomorrow.
Supper mushrooms, a tomato?, an egg white spinachlette (spinach wilted in microwave with olive oil and 3 egg whites) and..,,, an industrial ladle of almond butter . Debated more chocolate but common sense won the day.
 
Have you tried chia pudding? We have it for breakfast most days and you can make it the night before a bit like overnight oats / Bircher muesli. It's full of fibre, healthy fats and is really filling. Or there is @Rachox 's famous chocolate granola.
Not tried chia pudding. Bit resistant to buying special, strange, new foods just for me. Sorry, of course you are trying to be helpful, thanks anyway and I promise to at least look at the recipe and the chia seeds in shop.
Think my sons vegan partner uses them.

That's completely understandable. :) There are tons of recipes out there if you do decide to give it a try. Personally, I prefer mine quite solid, so make it with Greek yoghurt with almond milk and a splash of cream. I then just change the flavourings based on what I fancy or have in.

It might sound strange but the way I have it is a like a cross between blancmange and cold rice pudding. But healthier.
 
Can I pls ask advice on two questions :
I notice many of you have LOCal jelly with cream. I cannot eat cream unless it is in something eg fish piewith other flavours. Do you think its ok to eat the jelly on its own?
Second, has anyone made pizza with Lo dough and how was it?

funnily enough my Diabetic nurse recommended rice pudding...as low sugar.

The jelly issue seems easy enough just eat it on its own - could use Greek yoghurt if the aim is to add fat

I'm not ignoring you - it's just I haven't had any experience of lo dough. As for the jelly, I have eaten the 10 Cal ones and my BG was fine but we are all different so you might want to do the 'usual just before eating then two hours after' testing to see how it affects you. :)

It's lunchtime, minus 2, with thick freezing fog out there. Take care everyone.

Today,

Breakfast: Bacon and eggs

Lunch: lettuce, 3 cherry tomatoes, 3 spring onions, 2 baby beetroot, May and some Brie (yes, an odd choice of lunch for such a cold day but I enjoyed it)

Dinner: What my butcher calls a 'mixed grill' - little bit of lamb, little bit of steak, little bit of pork and a couple of his best sausages - with mushrooms fried in butter and garlic then finished with a splodge of double cream.. Followed by vanilla chia pudding

Drinks: Black decaff coffee, mug of tea with skimmed milk, Tetleys sleep tea - plus a lot of still spring water

Glad the fbgs are on the way down. It colours your whole day doesn’t it?

Fine to eat on its own or you could serve with yoghurt or low carb ice cream. ? I mix a bit of cream in when making jelly and some fruit beat together and it makes a wonderful mousse or maybe you don’t like texture of mousse?
