What have you eaten today? (Low carb forum)

Yesterday, I had my usual stroll around the little local market for MrB's breakfast mangoes and my fried pork rinds. Of course, I always come back with more than I go for, but that's the beauty of markets.

Anyway, yesterday on my way around, I sampled some fabulous belly pork strips, with crackling - except the rind had "something" on it - probably to ensure the stupendous crackling, so passed on more, in case it was wheat/gluten based. So far no symptoms. Phew.

Today's surprise steal of the day was purveying the attached. There were 4 different bugs there, but somehow managed to pass them by - even at the bargain Brice equivalent of 50p a tray, or 3 for £1.25.

My portion was less carbs than the recipe states as my darling other half took one look at his plate and whinged ‘is that it I’m starving’ - so I donated him more of my share as I’m more used to smaller portions. Served with lettuce cucumber and spicy mayo
Will no doubt have more coffee later

Like the recipe of the week and have copied it to my CMT files - might go down well as a one pot wonder when number two son and family arrive on Friday evening.
Spicey mayo - I use a mix of mayo and hot sriracha for my Poke Bowls - is that it?

I just add a few drops of Tabasco sauce to my mayo

@javfra wow if I were to eat those carbs, I’d have sky-high blood glucose...(toast, honey, macaroni, fruit). The meals look tasty, I will admit!
Way too much to catch up here now. Probably in a few days. Tomorrow is a travel day; fly, bus, then we’re THERE! Any time I’m not walking around, I’ll be asleep. Have too much prep to do to get lots of sleep tonight.

Never mind us. Safe travels and then enjoy the company of friends/loved ones. They are soon gone (within 5 hrs in one case.)
Lightening the mood a tad - does celeriac dauphinoise freeze if made with totes cream or do I need to mandolin a whole one and freeze some? Food fairy deserves better than to be taken for granted as an LC fixer so I need to step up to the (very small) plate.

Julie is now bed ridden with flu like symptoms so very good day but caution needed as I must be mobile right now. I will try to head off #jointgate as Friday and Saturday are also Ember days. Probably eat lunch tomorrow.

I'm coming round to the idea of fasting two days a week - a bit like the 5:2 diet but without the worry of how to 'spend' 500 calories. I wad thinking of fasting on Mondays and Thursdays.

So, today I decided to have breakfast when my original plan was to fast through to this evening - mainly because even with the central heating turned up and being dressed head to toe in 2-3 layers of fleece I still felt cold.

Breakfast: Smoked salmon, boiled egg, rollmop herring, M&S Whipped Cream Cheese

Lunch: Nothing

Dinner: (if the Fish Man turns up in his little Postman Pat van it will be) Mussels in a white wine and garlic sauce over konjac spaghetti. - If he doesn't turn up it will be salmon and tuna from the freezer poached in the white wine and garlic sauce with konjac spaghetti.

Drinks: black decaff coffee, still spring water

Thanks for the good wishes. Don't think you recover from being in your 60s. Also a very humbling lesson on what my dad did in a much bigger and longer way. Very easy to blithely say in sickness and in health without engaging brain properly when at your peak.
 
Breakfast : slice of Bergen toasted bread with 55 grams of liver pate. Washed down with a mug of tea.
Break : handful of walnuts and 50 gram bar of 80% chocolate
Dinner : A mix of Brie cheese, tuna with light mayo and 1 single fresh tomato. Mug of tea.
Dinner will be: Minced beef in an off the shelf low carb tomato and mascarpone sauce, with broccoli rice fried in butter. And ground chia seed pudding made with coconut milk, heavy cream and cocoa powder.

I have frozen dauphinoise made with potato before but only when almost cooked. You couldn't freeze it raw as the starch in the potato turns to sugar when they are frozen and that just about changed it to a dessert as it was horribly sweet. Cooked it doesnt happen to the same degree. I also left the top layer of cheese off and vacuum sealed it in the dish. Thaw in the fridge overnight and top with cheese about 20 mins before it is ready. That , of course , is potato and celeriac is a different animal altogether. My logic tells me there is no reason why it wouldn't freeze but I'd follow the same track as the potato version, no topping,almost cook, cool, seal and freeze. Not tried it as to be honest it is usually all gone second day in this humble abode.
