What have you eaten today? (Low carb forum)

@DCUKMod my sister lives in Cambodia and while I can’t claim to have tried it (way too much of a coward), one of the local delicacies is to eat chicken embryos from the shell

Oh yuk and double yuk!

Dinner was another slow cooker winner. Beef short rib. Followed by the whipped creamy cheese chocolate mousse and some salted almonds.

I haven’t been able to get the M&S whipped creamy cheese for at least a week, I was going to ask if you’d experienced problems but it looks like you can still find it.

After my post on Monday, we ended up with more stress. Mr B's vision got worse on Monday evening and he had more pain than usual. He got himself in quite a state and has only just started to calm down now. After seeking advice, it would seem that he has developed a sensitivity to the iodine they use. This has delayed his recovery from the injections and made him panic. Rest and using shed loads of lubricating eye drops has helped hugely and he's almost back to normal.

Anyway, today's menu has looked like this:

Breakfast: Coffee and cream
Mid morning: Almond milk cappuccino with a splash of cream
Lunch: Tomato, basil and radicchio salad, mortadella, provolone piccante, emmental. Baton of Hotel Chocolat 85% choc.
Afternoon: Almond milk cappuccino with a splash of cream. Square of a Green & Blacks Velvet Mint choc.
Dinner: Just about to have halloumi with roast pepper, aubergine and courgettes. Followed by decaf coffee.

Oh goodness, poor man, not surprised he panicked. Glad things are back to normal now

It’s not as widely available as it was. My local store in Greenwich no longer has it, but the branch near work does. Since it has a long shelf life I buy a few at a time and keep it in stock.

He’s having a really rough time. Must be very hard for you too. Take care.

Oh no boo! Looks like I’m going to have to go on a magical mystery M&S tour.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: chicken soup and LC cheesy bread followed by Greek yoghurt and raspberries.
Mid afternoon: raspberry chia pudding and black coffee.
Dinner: ‘meatzza’ (100% beef burger rolled flat and topped with sour cream, cherry tomatoes, mushrooms and cheese) with cauliflower and broccoli salad followed by SF jelly, cream and LC chocolate granola.

That’s exactly what I’ve planned for tomorrow’s dinner. I also prefer the sour cream topping to tomato puree.

B: usual peanut & chocolate protein bar with coffee
L; 100g mature cheddar cheese and then 2 squares green & blacks mint chocolate with coffee
D: hollowed out and roasted a courgette and then stuffed with minced beef, red pepper, tomato, mushrooms, a little tex-mex seasoning and then melted cheese on top

I have a spare one in the fridge which I’ll have for tomorrow’s lunch. First time I’ve made them, loved them :hungry:
 
XBX as usual,
breakfast: tea, two types granola mixed with milk, tea
lunch: homemeade leek and mushroom soup, 20g grated cheddar. water.
before dinner BG 5.4
dinner; prawn and vegetable stir fry, added some extra veg as portion seemed a bit mean.
then 100g Halotop Salted Caramel icecream to follow, not very impressed with the flavour, bit bland.
checked after an hour BG 8.8
Checking carton, seems my portion was actually one-and-a-half portions.
another hour later BG 5.8
time for a glass of wine. and 30g brazils to get the calories up.
Have a suspicion my metabolism is running fast. but doc says all is ok. Still losing weight though...
update
only had one glass of wine so scratting round looking for non carb calories,
in the end sort of scrambled two eggs. and still 94 calories short:meh:should have put some buter in them!

Dinner: Chicken drummies and salad,
Breakfast: Usual omelette and bacon, tomato. Start of no Metformin with the breakfast medication.

@DJC3 -- Yes, reducing the eating window and increasing weight lifting exercise really seems to work for you. Takes a lot of dedication, though. Really well done.

@BibaBee -- Hugs. No wonder your husband panicked. Glad everything is on the mend now.

@Hungry19 -- Are you having enough salt? When cutting out carbs, the kidneys release more salt, often leading to headaches. So we need to supplement a bit more on low carb.

Got up early today and didn't really eat until I got home from work today -- so a kind of unintended OMAD.

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Snack: Four pecan halves.

Dinner: A large serving of Pad Thai, about 40g of 85% chocolate and a glass of red wine.

Congrats on the Metformin.
 
@BibaBee how awful!! I’m glad he’s approaching normal now but oh the stress!!!
 
I'm so glad I stuck with the Tom Yam Gai.
Oh now I will have to have to make that this evening. Zero rice though.

Missed yesterday;
Lunch a couple of boiled eggs bashed onto a mug bread.

Dinner; a spicy curry thing, made out unlabeled things found in the freezer, on konjak rice.
