What have you eaten today? (Low carb forum)

And such a good price!.....no no no. I am spending my days posting stuff to get rid of on ebay and freecycle. I do not need more stuff - its a mantra I keep repeating to myself in the hope I’ll believe it!
However I do really miss my IP- stupid of me to leave it in Cornwall. I’m going back on 1st April and will swear never to forsake it again!
A bit like me when I could still eat dessert "it will not taste as good as it looks, it will not taste...." Usually I was right. Or my other "Do not order what you can make better, do not order...". Less successful when I was bored cooking.

Haha yes I’ve done the first one often. The second is firmly ingrained though.

Sorry, mine include wine and some apples - although today I am cooking the red cabbage underneath the brisket but that is first time ever.
Edit: Mulled wine works well usually have some onion or leeks at a pinch but definitely cinnamon

I make a huge amount of mulled wine red cabbage when the supermarkets are selling the mulled wine at a reduced price just after Christmas - usually 6 cabbages with three bottles of the wine and a few star anise and cinnamon sticks - then open freeze it in one portion blobs on baking parchment before bagging it up. Its Mr C's favourite veg to have with pork, venison or game of any kind. TBH I think he would eat it every day if he could.

I have a scrumptious old family cabbage borscht that you could leave the sugar and cooking wine out of, and adjust onions, carrots, and “whatever else” to lc veg. Other ingredients include cider vinegar, garlic++++, herbs spices flavorful bottled stuff, and whatever appeals. When this simmers all day, I drool. Have not made it this winter bc I’d eat too much. Probably can use less liquid, and bake rather than make soup, for a side dish. Interested?
Edit: this would be pretty much what Chook suggested, if baked.
 
@maglil55 lol the “do not order what you can make better” is the main reason I’ve avoided restaurants all my adult life :hilarious: Also, do not go in the place if there’s nothing that looks overwhelmingly worth paying good money for. Unless you’re truly desperate, which I rarely am. We just don’t eat out much, not our style after courtship was done!

Help required please. Made the Lemon shortbread dough for biscuits except I used orange flavouring, ground almonds, melted butter, orange essence. The truth is I had an incomplete lemon and need it for g&t! Anyway I rolled it into a cylinder shape and put it in the freezer for half an hour. It said fridge 2 hrs or freezer 30 mins. After that my days plans changed and it got transferred to the fridge to be cut and baked tomorrow. Do you think that will work? Will it be too cold by then?
I am a bit fed up today. My BG numbers have only come down to 6.7 must now after FBG of 7.2. I missed breakfast and at 1pm had two fried eggs and two rashers only cos I was doing it for OH before golf. I didnt see any point in metering before and after the bacon and eggs. At this rate I will have to have supper ( planned chicken breast wrapped in bacon, green veg, mushrooms) on a tea plate! I had too much rather than wrong choice Indian t/a last night and cant seem to get over it.
 
Glad your little one liked it. You won't get the same results using ready ground nuts, it is best to use whole. When you process the whole nuts, the natural oils are released which turn it into a creamy nut butter. I had to blend mine for quite a while to get the right consistency and my blender is a pretty heavy duty one.
Okay. I see what you mean. Yeah, she noticed a difference but on this occasion it didn’t matter so it got the thumbs up.
 
Late breakfast / early lunch was : Fried streaky bacon, sausage and omelette with a slice of Burgen bread with homemade keto nutella spread. Clementine. Mug of tea.

Dinner will be : Jumbo prawns fried in butter, garlic and ginger on a bed of broccoli rice, with a dash of Knorr liquid seasoning. Forest fruits with Greek yoghourt.

Also had some sugar free liqourice today from Aldi.

I should think your cookie dough will be fine. I bake, but I don't bake LC, but to be honest the refrigeration/freezer time is just to firm up the dough to make it easier to cut into discs. I'm also assuming the discs bit, but it is to make it more easily workable. Usually

Thanks so much. That was kind of what I thought but wasnt sure. I hate wasting ingredients if I can help it!
 
@DJC3 not different once you’re done adapting! I like @Chook ‘s better for what you want.
 
Last day before I start trialling OMAD so I treat myself a bit!

Breakfast: CWC (Coffee With Cream, may as well make it a shorthand now)
Lunch: Bacon and two eggs fried in olive oil with a tomato
Dinner: Steak and chicken char-grilled kebab with salad and garlic butter

My goodness was that dinner delicious.
 
Breakfast - Tea and 29 gms almonds - yes almonds (how the heck do you get 100% rda magnesium?)
Lunch: Tempura avocado and mushrooms thanks @maglil55 for Tempura idea - heck of lot of whey in there and bains here used the powder we had- slightly sweet taste in there but went nice and crisp. As a bonus made a pancake which was totes spiffing so a win there. Isolate ordered with 35% off from Bulk Powders - no flavour or additives as some has stevia
Evening meal - Brisket ( big mistake buying it from Morrisons but nice stock let over) few mushrooms and broccoli supermarket and h/g purple ( the purple was cut, cooked and eaten within 25 mins)
Tales of the unexpected: 3 days fasting this week reduced weight by .8 pound - lost much more last summer ( went down to BMI of 21.6 :arghh:); woke up 1-1.5 hrs earlier but went back to sleep - woke much, much earlier last summer; until this morning resting pulse hadn't risen - huge spikes last summer. See what happens when I repeat in June, Sept and Dec
Cronometer says 60 gms total carbs and 32 minus alcohol sugar net carbs

PM you’ve been under a lot of strain recently which is bound to affect your numbers too. I have often found that after a wrong choice of meal, or too much as you surmise, it’ll take me days to get back to normal. Be kind to yourself and try not to dwell on today’s results. Tomorrow is a new day.
Re cookie dough, I can’t see it’d make a blind bit of difference leaving jn the fridge for longer, that stage is only to firm it up.
 
Evening all
B: a boiled egg and a flaxseed bun, split, toasted and spread with butter and marmite.
Lunch: another flaxseed bun ( only 1.5 carbs each) with smoked salmon and M&S whipped creamy cheese. Then a choc brownie from the batch I made yesterday.
D: slow roast belly pork. In the absence of red cabbage which I had a craving for but couldn’t find today we had sprouts sateed with chorizo and broccoli. I nibbled on some of the chorizo while chopping it and noticed afterwards the packet said it contains 20% raw pork and it must be cooked! Felt a bit queasy after reading that.
2 strawbwrries and extra thick cream for pud.
