What have you eaten today? (Low carb forum)

Must get back to recording what I’ve eaten as haven’t this week - simply because my painting and gardening last week or so has aggravated an old neck/shoulder injury(car accident in Southern Ireland a fair few years ago) and couldn’t type easily without pain, it’s settling down now and is ok thankfully so back to it! I was also back to doing a small amount of fence painting today.
All okay all week food wise stuck to low carb food mainly in three small meals - as I did today - although eaten a fair amount in total quantity today as it was a hungry day.....
Breakfast one sausage with scrambled egg and toasted chaffle
Lunch sardine fillets in olive oil with salad leaves and lc seeded crackers followed by hc choc
Dinner starters gin and soda and hm lc seeded crackers with raita and chutney,(reminded me of pre lc days when used to eat poppadoms with raita and chutney! So felt naughty) main lc chicken curry then pudding - rhubarb fool (slow cooked home grown rhubarb with ginger and lemon and mixed with whipped double cream and yoghurt.
Hoping to get out there painting again tomorrow.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and cookies and cream phd bar.
Late Lunch: A roast chicken drumstick followed by Greek yoghurt, lemon chia pudding and macadamia and coconut keto granola.
Dinner: (the only thing I could order from the pizza delivery that my family ordered from!) cheese stuffed mushrooms then I added leafy salad, coleslaw and pork scratchings, followed by home made low carb brownie, cream and LC chocolate granola.

Breakfast I chopped up some ham and cooked in olive oil and butter then cracked cooked two eggs over the ham and cooked served with sourdough toast and butter and washed down with 2 mugs of black coffee

Very windy here for last few days and cold, my outing and rxcitement of the day was when my bin fell over and I went outside to pick it up baha....

Dinner made warming meal of moussaka using beef mince, served with iceberg lettuce salad and a glass of wine

This insomnia is still troubling me dozed of around 3:30am but am having bad habit of using my phone and watching YouTube videos in bed because I can't sleep. I slept in to around 9ish.

Breakfast paleo granola with almond milk and black coffee.

Afternoon tea pulled out a small banana muffins out of the freezer nuked in microwave and a black coffee.

Went up the road to get out of the house and buy some milk and brought the shop out does anyone else do this? During my shopping spree found a small size pork belly on special and found olive sourdough bread on special it is made with sourdough starter and less preservatives.

Dinner leftovers moussaka with wild rocket salad dressed in olive oil and red wine vinegar and glass of wine I also had a slice of olive sourdough bread with butter.IMG_20200502_183729_401.jpg
 
Highly amusing (and lovely) this morning watching Mr C have a Zoom / WhatsApp meeting with his 18 month old granddaughter with her teaching him the Baby Shark dance. She was very strict with him.... :hilarious:

Breakfast: usual omelette with carb free syrup (raspberry this time)
Lunch: probably a bit of brie
Dinner; Mr C is cooking (we take it in turns while he's not at work) he's planning a big pot of veg curry using up veggies in the fridge so aubergine, fennel, peppers, butternut squash, spinach and (probably) a tin of chickpeas and some coconut cream to thicken it
Haha I know that song well about a year ago I had to travel back home in my nephews and hid partners car after I was involved in car accident also my neice her husband and their toddler was also in the car with us. The only why we could calm the toddler was to sing Baby shark mind you this was a 3 hour car trip... oh now its in my head haha

Breakfast: nut granola, fried four baby plum tomatoes, some mushrooms, and two slices of fried halloumi.
Lunch: salad, lettuce, cucumber, radish, One slice pain kapnor toast, pâté.Cucumber is really on its last legs,threw the remainder into compost bin. raspberries and cream. Am losing weight, eat more. Tea.
Afternoon, got the munchies again. Several pieces of cheese. Then thought i might be thirsty. Had missed morning coffee and water at lunchtime, so put the kettle on for tea. Power went off. Tumble Dryer and kettle, happens every time. Do know how to reset. But it didn't work. Waited a few mins. Try again. Still nothing. Had to call MrSlim. We spend about fifteen, maybe twenty minutes on the phone, while he gives instructions, and I try to follow them. At one point. There is power to the fridge, which is flashing its orange reset display on and off in a most disconcerting way, but not to the cooker. However the battery operated vacuum which is charging in the utility starts working in time with the lights on the fridge. Dash out there and unplug it. Fridge has no power now. MrSlim cannot ofc see what is happening. So we start over. Switch off power. Cooker as well. Unplug everything. Restore power. Plug in fridge. It's flashing orange again, and power goes off. We both think fridge might be broken, but try again anyway. This time when the orange reset light flashes, I press the manual reset button, even though MrSlim says no. It's supposed to auto set itself. At last a green light. Phew. Not broken after all. Gradually plug in and turn on all appliances. Really need that cup of tea now. Bet he does too. My wonderful MrSlim did not get angry or impatient with my fumbling efforts, as so many men might have done. In any kind of crisis he is always calm.
Went out into the garden and took out my frustration on some weeds. Now have bigger pile to deal worth, many of which were flowering. Mostly Goosegrass, nettles, buttecups and several varieties of sow thistle. All the pnes that spread really easily. Probably best to stuff them into sacks and store until we can take to the tip. Will be bindweed next.
Back to food. Started on the wine before dinner.
Dinner was teriyaki salmon using a recipe from internet. Made enough for two days. Buttered cabbage and peas. More raspberries and cream. Another glass of wine. Had several pieces of chocolate during the evening. Water before bed.

Mr C's back to work today :(. On the plus side I get to eat what I want without a full on debate up front. :) So....

Sunday bunch (which Mr C cooks before going to work): chaffle, mushrooms, fried eggs, 100g baked beans

No lunch

Dinner: Stirfry - tofu, pak choi, fennel, bean sprouts, red pepper - with a sesame oil, teaspoon honey, soy sauce, sesame seeds, chilli and spring onion mixture (half to marinate the tofu and half as a stir fry sauce)
 
Yesterday bed 6 FBG 5.3. Better but still feeling really "off". This is strange as one moment I feel so so but the next I feel awful. Only thing that seems to help is sitting inhaling steam. Currently I'm in a so so phase.
B. Slice of black pudding, rasher of back bacon and a fried egg. Usual TAG. I did the bacon and black pudding in the air fryer to save standing. Can you fry an egg in an air fryer in an egg sized dish?
L. Nothing went back to bed for a nap.
D. Thanks to the butcher delivery we had Thai green curry pork chops, mini cob and veggie chips for me.

Loads of water and yet another hot shower was required. I wish this would just go away.

I wish your symptoms would just go away, as well @maglil55. I have to say, yours sound worse than mine. Really mine just hurt while yours seem to incapacitate you.

Must experiment with frying an egg that way. I'm feeling experimental today. Intending to try frying off some streaky bacon (to use a pack up by its use by date) with some half roasted cauliflower - that'll be a base for something - maybe the fried egg, if it works? Or maybe scrambled egg, if it doesn't.
 
@maglil55 I agree with @Annb I wish your symptoms would go away too. How long has it been?

Today I had a lovely Sunday fry up for breakfast. 2 rashers bacon, 2 fried eggs and mushrooms. Black coffee.
No lunch as we are getting a Chinese takeaway for tea - it’s just reopened so the others here are very excited. I’ve ordered crispy duck but will pass on the pancakes and make myself some stir fried cabbage noodles and courgetti to go with it. I’m just about to have a gin and soda before it arrives.
Having breakfast and missing lunch seems to be very good for bg control. I think I’ll do this more often, rather than skipping breakfast which is my usual pattern these days.

Have just inhaled dinner, but more of that later. Planned OMAD but ravenous around 1.30 so chopped off the thin end of the pork belly prepped for dinner and cooked some crispy pork pieces in the air fryer and ate with a couple of pieces of cheese. Delicious.

Dinner was the pork belly, slow roasted in the oven - seasoned with salt, pepper and chilli oil. Wow, yummy and ate far too much of it.

Hi All
Todays brekkie slice LivLife found in the recesses of freezer toasted and copious tea.
Lunch was very thin slice cut from farm shop sourdough loaded with ripe Brie, coffee.
Supper will be Spag Bol, courgetti for me.

Although I have been undisciplined with spoons of peanut butter at night recently resulting in high FBGs it is heartening that I am able to bring it down again in a few days while still eating three times a day. Not getting complacent but am grateful that BG responds to action taken unlike the early days of all this.

Hope life improves pronto for those of you still struggling and unwell.

Those both look delicious.

We had wonderful beef tonight. A near traditional roast, although no Yorkies. I had the veg I could, and there will be cold cuts in a couple of days. :)
 
FBG 10.5 again.
Breakfast - 2 rashers streaky bacon and 2 fried eggs.
Late lunch/early dinner (would that be lunner?) the experiment that I promised myself - air fried bacon, cauliflower, mushrooms, garlic and ginger with an air fried egg on top. Last chance for the AF. It was not good - would have been better fried in a pan. Frying the egg in the AF actually did work, but I couldn't get it out of the dish without breaking it up. AF will now be relegated to a box in the loft until I decide what to do about it. Can't send it for recycling at the moment but maybe when the lockdown is finished.

My brother was just telling me that Amazon have small oxygen monitors - he has bought one for himself and his wife. I've ordered one - it may let me know if my chest issues are caused by lack of oxygen - and I can test Neil as well. Not sure what difference that will make, but it would be interesting.
 
Bed 5.4 FBG 5.5. At least my BGs are going down. This has not been a good day. I've had some so so moments but for the most part I felt awful. Dosed up on paracetamol again but that has me sweating buckets. Still maybe that will eject it. I certainly need to go shower again. I've kept the food simple today.

B. TAG and slice black pudding, 1 tomato sausage and 2 rashers of back bacon. Put it on a tray and shoved it in the air fryer.
L. Nothing had a nap again and loads of water.
D. Managed to get shellfish with my order so lobster tails went into the air fryer with a butter of garlic, coriander and cumin. Tiger prawns stir fried with mushroom, spring onion and mange tout in a sauce of rice wine, Tamari soy, garlic, ginger, chilli and parsley. A bit too salty. I should have added some Monk Fruit and water.
Usual campari with a lot of soda.

Thanks everyone for the kind thoughts. I am really miserable with this and am trying hard to keep my mind off it. It first hit me on 9 March. First two weeks were really bad then it was just bad for another 3 and a bit weeks. I had that week or so that was fine but now, as you know, I've gone backwards in the last few days. On a positive note, I'm not as chesty as I've been the last few days but the sweating with the paracetamol is pretty bad. Trouble is I feel worse if I don't take it. Hubby is nagging me to see the doctor but the chances of seeing a doctor is probably nil. I reckon I just have to sweat it out.
 
@maglil55 really sounds like a chat with a dr would be helpful it’s been a long time you’ve had health issues - maybe a test for CV19 at the very least?
You should be eligible for a test and at least can rule it in or out?
Bit more fence painting for me today plus some ordering for more gardening projects and organising a replacement for our faulty electric shower. Used the mybuilder site on recommendation from youngest son and it’s been a really easy way to link in with a local plumber.

Work is particularly interesting at the moment. I’m involved in nhs mental health work - as a carer consultant helping to support a family therapy programme’s website and app. The Challenges of family therapy when you can’t physically all get together in the patients home means looking at other technologies especially video work so I’m involved in looking at this at moment - so more work not less for me at moment - but interesting I do like a challenge!
 
I’m really impressed. I’m making an effort to use less too, but haven’t managed to eke it out quite that much.
@Goonergal am the opposite of you, get through litres of cream, even measuring it out by the tablespoon 12-14 days is the most I can get. When MrSlim left there was just over four litres of cream in the fridge. We were thinking that is plenty for three months. Now i am writing it down, my cream consumption does seem a bit excessive.
