What have you eaten today? (Low carb forum)

Gotta laugh at that one, as it's not going happen ironing sheets here.

I don't iron sheets but I get DIL to put my quilt covers through her ironing machine. My washing machine will cope, so I do that myself, but since she runs a laundry, it's easier to get them done with that (inside out, of course).

Bed time now and I didn't eat anything else since breakfast. BG still 10.9.

We cant see the point in ironing something that will end up in a crumpled mess during the night when it gets kicked onto the floor.

I cant stand anything heavier than a sheet or a light blanket on my legs when I am in bed, my partner is happy with the sheet

I have what a I call karma blanket that was given to me by a night RN who was working the medical unit I was in last year, and she gave them away to patients that could not stand the weight of blankets on their legs.. She had lots of karma given to her from me, especially when she snuck me a cup of black coffee in later on.

Thanks for the tag. Best thing about that is Brisket is cheap as chips, 2.5 kgs for £13 - thought I'd be arrested for shoplifting on my way out.:)
I'd be interested to know how you manage to cook brisket to make it melt in the mouth good to eat?

Just in case Ian doesn’t see your question, this is the method he told me and it worked brilliantly. I never expected brisket to be moist or edible. It needs to be a bone in piece with all the fat. Not the usual boned rolled joint that supermarkets sell.
“Our piece was 2.5 kgs. Double wrapped in foil (both ways), in the oven at 130 for 8 hrs. We set outs to come on around 5.45. No liquid or veggies. At 7 hrs we took it out, basted well, put veggies in the pan - celeriac, courgettes, banana shallots and a couple of carrots. Turn oven up to 160 - kept 1 piece of foil over the meat. Back in oven for 30 mins then take out to rest, covered in foil and tea towels. Very tender and moist.”

Evening all. Today I had a cheese crusted omelette for brunch - so good!
Lunch/ dinner round at youngest daughter’s new home to celebrate her finally moving in. I provided the food and did the cooking! She said it was a masterclass in roast dinner cooking.
Roast chicken, cauliflower cheese and fresh runner beans. ( the carbivores also had roast spuds and carrots , stuffing and Yorkshire puds - I have finally got the knack of making fab Yorkies when I can no longer eat them - so frustrating!) champagne first, to celebrate her move and a glass of red with dinner.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Atkins bar.
Skipped lunch.
Mid afternoon: black coffee and chocolate chia pudding.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake!

No breakfast
90 minute dog walk but was oh so cold
Sunday lunch in a pub with all the trimmings, and several bites of hubby's sticky toffee pudding followed by another 90 minutes walk. Surprisingly only rose 2 and then went down to 4.4!
Tea: chunk of manchego with 2 slices proper buttered toast, a little yoghurt with blueberries. If bg is rising its only doing it slowly, can only assume its all the walking keeping it down

Small piece of steak, one egg, mushrooms for breakfast.
Ham and salad low carb wraps, small tub of sugar free orange jelly for lunch.
Whole Red Roster roast chicken and veggies for dinner.

We buy flat brisket, which does not have bones in it or been rolled up, we can get either fresh or corned depending on what you want to do with it.

Have you ever made your own corned beef? I d like to try.

Brunch - 2 slices slc toasted and buttered with scrambled cheese & eggs. Mug of earl grey tea

Dinner - Salmon with chilli and a large side salad. 1 dgf Bisc-nott with double cream drizzled over the top

I think I forgot yesterday so what I had was:

Breakfast: usual bacon and eggs.

2nd meal: ham sandwich (2 slices of bread). That put the BG up to 11.7.

3rd meal: lamb tagine - couldn't eat much of it - it was very rich.

So far today:

Breakfast: warmed up ham and dry fried eggs.

There's more of the tagine left for later.

B: 2 scrambled eggs
Then a 3 and a half hour dog walk which included several hills.
Had a small tub of icecream halfway round and 2 quarters of a brown bread sandwich.
Had a large ice cream at the end. Was larger than intended so I did share it with the dog. I also had the other 2 quarters of sandwich. Together they took me to 9.5. and stayed there for a couple of hours.
Thought bg would have been worse, must be the exercise keeping it down.
D: whole avocado, 1 sausage and green veg. Cream, yog, blueberries and choc (aka using up all the bits left before we head home tomorrow)
18000 steps today

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Atkins bar.
Skipped lunch.
Mid afternoon: coconut cappuccino and a Fibre One protein bar.
Dinner: chicken with ginger, lime and coriander with Brussels and cauliflower followed by SF orange jelly, chia pudding and keto nut and seed granola.

One egg, one slice of bacon, one sausage, half a tomato for breakfast. :meh:
Chicken and salad low carb wrap, small tub of chobani greek yoghurt for lunch.
Roast belly pork slices, veggies, and gravy, green sugar free jelly and spoon full of passion fruit sorbet for dinner.

Mine love ice cream too!
I especially liked to share lick for lick, alternating between the dog and myself, wherever there were many people around :hilarious:.
In private they usually only get to lick the bowl when I'm finished. Yes I'm odd like that :D.

Made a very tasty soup today, never had anything like it before :)
I've been eating moussaka for the past three days. First day the portion was too large (dogs and cats thought my portion size was just perfect) so I split the other half into two portions and made a nice coleslaw (first time I've had coleslaw, I like it!) to go with it.
I still had some of the minced meat/tomato sauce left, and also some cheesy bechamel sauce.
So I cooked some cauliflower and blended it with half a stock cube with the stick thing, fried half an onion with a chilli pepper and fresh ginger, and added all my leftovers to the cauliflower.

There's enough left for tomorrow too, so I'll have a surprise day of not having to cook tomorrow :)

Ham and eggs for breakfast.

Looking after a granddaughter today so we walked to a local beauty spot with a picnic: Egg mayo sandwiches ( mine in SLC roll), then Jaffa cakes for her and DGF cake for me. Didn’t share any of it with my dog - he didn’t need anything after eating an entire seed&suet bird feed ball. He still managed to forage some blackberries.
Dinner was air fried chicken thighs, baked aubergine, Halloumi chips and salad. Followed by h/m Greek yoghurt and strawberries.
