What have you eaten today? (Low carb forum)

Had an awful night, so have been feeling really grotty all day. Ate early because I had to give Em breakfast before she went to school so:

Breakfast: chopped up ham (from the gammon I baked a day or so ago) with 2 dry fried eggs. Em had a hard boiled egg, a couple of slices of ham and a lettuce leaf.

Started feeling nauseous and weak so I've done very little all day - just sat and felt sorry for myself - and slept some more. Still feeling a bit woozy but not so sick. Just lack of sleep.

Neil has been shopping and came home with some monkfish and some haddock. I think I'll have the monkfish tonight - just baked with some lemon juice and maybe a few herbs or spices. I asked him to see if he could get brisket on the bone and he came back with some plastic wrapped brisket, off the bone and rolled, so I'll have to do something with that - maybe tomorrow.
 
The monkfish looked like a rather uneven piece of fish in the plastic packet but when I opened it up, it was about a dozen little bits - may have been cheeks but I'm not sure; the packaging didn't say so. So I rolled all the bits in dessicated coconut and shallow fried them. Not very tasty but it filled a space.
 
There's enough left for tomorrow too, so I'll have a surprise day of not having to cook tomorrow :)
Yesterdays soup looked odd, and upon tasting a little it definitely didn't taste like it did yesterday.

So I had a slice of low carb bread, half with lots of a Danish strong blue cheese, half with a mild red crusted french cheese, slices of a Dutch dried hard sausage (Drentse kosterworst to be precise), and the last leftovers of my coleslaw.
Yes, I did save it from the cat in time! I need two hands to take a picture, so I got him out of my food as soon as the picture was made. :D

I did give him the salad bowl to clean out once I was finished though, and of course both cats and the dogs got a piece of my 'worst'. :hungry:

I have a feeling more snacks will follow later tonight, which is fine.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and Fibre One caramel protein bar.
Skipped lunch.
Mid afternoon: black coffee and coffee chia pudding.
Dinner: meatballs in tomato and mascarpone sauce with brocolli, cauliflower and a few carrots followed by SF jelly, cream and LC nutty granola.
 
2 scrambled eggs for breakfast. I’m finding that a light, protein breakfast stops the BG spike that tends to follow my Hiit exercise session if I do it while fasting.
Lunch was a Lo- Dough quiche filled with 2 eggs, 1/2 tub cottage cheese, ham. Topped with grated cheese and sliced tomato. Gk yog and strawberries.
Dinner was Instant pot mince and cabbage curry followed by a DGF cake.
I’ve also eaten an awful lot of cheese today, just general snacking and I’m not proud of myself. IMG_1630436851.643799.jpg
 
A bitty day.
Started by eating up some ff greek, seeds and blueberries for breakfast. Coffee with cream.
Loads of housework and an hours dog walk.
Then, thinking we were going to be leaving, ate 1 cold sausage and 1 falafel and 5 olives, but we were delayed so didn't get away until 2pm so the idea of a nice pub lunch enroute home went out of the window and got replaced with motorway service station snacks.
I had one of hubbys cheese rolls (pastry, like a sausage roll) and nearly a whole pack of cold cocktail sausage s.
Something in that lot peaked me up to nearly 9.
6 hours later, fridge surfed a really tasty feta and sweetcorn salad made by boy, and some pecans nuts.
Thinking of opening a bet for what my bg will be...it could be quite random..
 
Curried boiled eggs on low carb toast pot of chobani greek yoghurt for breakfast.
Bacon cheese and lettuce low carb wraps for smoko.
Chicken wings and a couple of drumsticks nuked in the microwave for lunch.
Lamb bbq shoulder chops, green veggies and gravy, sugar free orange jelly with a small spoonful of mango sorbet for dinner.

I'm going to try a quiche in an Atkins wrap now I've seen this, I'm pretty sure this would work. :)

I bet it would work too. Have you tried the Atkins wraps as pizza bases? LoDough works well for that, and my daughter makes pizza using ordinary flour tortillas as bases.

So disappointing to miss out on the leisurely pub lunch, service station food is no substitute at all.

I haven't.
Pizza for me is either eating out to have a nice dinner, ordering to have a luxurious no cooking day, or it is an easy and cheap no cooking day by just grabbing one from the freezer and adding some cheese before popping it into the oven.

None of this has happened in the last 5 years, but it's not eating pizza I miss, it's the no cooking part combined with festive meal!
If I have to go through all the work to make a pizza I'd rather do the same work for a meal I like better (especially as all the low carb options won't taste like a real good pizza anyway).

I used to cook most of the time before diabetes, but I do miss allowing yourself an easy day now and then of just shoving a pizza in the oven, putting some ready meal in the microwave, getting chips and a kroket or kaassouflé (Dutch version of fish and chips, no fish but an equal kind of food), or a Turkish pizza instead of a meal.
 
Breakfast: Cottage cheese and ham in a lettuce wrap. It won't keep me going all day - that's for sure.

I have a piece of steak in the fridge, so I'll have that a bit earlier than usual and hope not to need anything else for the rest of the day. Perhaps, though, I should do something with the unwanted brisket instead. I'll try slow roasting it although I don't expect it to be as good as with the bone in. If I don't fancy it at the end of cooking, I'll have the steak instead.

Apparently, the new St Bernard doesn't like dog food. DIL texted her previous owner to ask what he fed her - "steak, chicken and mince", was the answer from his carer. They now have to try to convert her to normal dog food. The newfie would just gobble anything more exotic and she would go hungry. Actually, I think a diet of all meat is not right for a dog so she should be given other things as well. They might end up with the brisket though - there's about 11/2 kilos there.

My big treat - once in a while - was a good Scottish fish supper. Battered fish and soft chips and all. I really miss that.

Sorry for MIA but we were away for the long weekend with friends in the Wye Valley. Didnt bring my meter (for the first time since dx) but tried to eat carefully and also avoided media. A real switch off and feel better for it!
Yesterday and today Slice HiLo toast butter lots of tea.
Yesterday and today lunch was slice ham, two h/b eggs, side salad & mayo.
Yesterday supper was roasted chicken breast wrapped in bacon with tenderstem broccoli
Tonight is baked spicy marinated chicken pieces with mixed coloured pepper strips and cauli rice.

They will end up with the brisket! I put some butter in with the meat before roasting it, hoping to replace the fat that would have naturally been there to keep it moist. It's dry, dry, dry. I expect the dogs can have it mixed with some gravy. I don't want it! Actually, it's put me off the idea of beef for today, so I'll just have some sardines in olive oil. They, at least, will be moist.

I slice of middle bacon, cheese and one egg omelette mushrooms :meh:, small portion of two fruits with a chobani greek yoghurt for breakfast.
Sardines on one slice low carb toast, glass of lime / lemon cordial with a scoop of OsmoLax mixed in it for smoko.
Cocktail prawns in a couple of low carb wraps for lunch.
Rib fillet steak, green veggies , gravy for dinner.

But then got really hungry while running some errands in town. Sainsburys had the Kind nut bars for only a £1 so tried the choc orange one, swiftly followed by a second one, but although supposedly only 12g carbs something spiked me up over 9, which put me in a bad mood.
Skipped the meal I had prepared for the boys (gammon and veg).
So of course I got hungry late
10 pm: Ff greek with seeds 3 strawberries 4 pecans and a sq of 90% choc
 
Bit behind again. Saturday 28 Aug - bed 6.4 FBG 6.2.

B. TAG and 2 slices of SLC toast with Philly.
L Nothing - out and about at butcher's then opposite direction for Supermarket with through routes rather difficult due to one road being closed for 2 weeks for works.
D. Kept it simple - cold cuts - 2 slices roast pork leg, 1 slice haslet, 1 slice turkey. Lettuce, tomato, coleslaw and 1/2 avocado. Grenade Ice cream bar.

Sunday 29 Aug - bed 6 8 FBG 6.4

Back to swimming lessons full time. Another step forward by getting eldest back in the pool, no reacting and he enjoyed it!

B. TAG and 2 slices of SLC toast with coronation chicken.
L. Nothing at swimming lessons
D. Rib eye steak, mushrooms, asparagus, broccoli and pepper sauce. DGF coconut raspberry bar warmed with fresh raspberries. Usual Campari and soda.
