What have you eaten today? (Low carb forum)

I’ve had a few days off. The last 2 have been away. Superb hotel breakfasts so no need for lunch.
Dinner one night at ‘Burger&Lobster’ - I had burger ( lettuce wrap) and lobster - fantastic.
Second night ate in the hotel and for the very first time was able to choose something straight off the menu with no substitutions or omissions! Salmon steak with asparagus, broccoli and Edamame beans.
Got home tonight, not much food in but Paul had bought sandwich meat from the butchers on Sat. We had ham and eggs for dinner and he’ll have to get himself a pasty for lunch tomorrow.
Now to try and catch up on all the posts I’ve missed.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Atkins bar.
Skipped lunch.
Mid afternoon: coconut cappuccino.
Dinner: chicken supreme with roasted Mediterranean veggies followed by SF blackcurrent jelly, chocolate chia pudding and LC nutty granola.
 
Breakfast: scrambled eggs and 2 kielbasa

Lunch chicken, tomatoes, cucumber, cheese, chutney (1 teaspoon, my weakness), creme fraiche and strawberries

3pm: glucose tablet as I got the shakes (just started Empagliflozin)

Dinner: beef burger, cheese, mushrooms, bacon, tomatoes, beetroot.

Going for a little sweet thing but no idea yet
 
I await a delivery from DGF. It says it will be delivered this morning. Royal Mail site says it's in........Peterborough!! I'm praying the just haven't updated it as I have 2 boxes of their new biscuits in this order.
I placed an order with DGF on Friday as usual - I hadn't heard anything from them today so I e-mailed them - they were not able to despatch my order today as apparently the Royal Mail system was down? - it worked ok for me when I tracked something - it's annoying not to receive an order from them until a Wednesday - almost a week after placing the order the Friday before - although don't know when I will receive this one - last week it was Wednesday with the bank holiday being on the Monday ...
 
Two hard boiled eggs, two slices low carb toast and vegimite, half a small mandarin for breakfast.
Small tub of chabani 15% protein greek yoghurt , glass of lemon / lime cordial with scoop of OsmoLax mised in for smoko.
Four chicken drumsticks for lunch.
Nile perch fillet cooked on the GF griddler, green and white veggies for dinner.
 
A cheese crusted omelette for lunch, with a blackberry crumble left from last night, with ff greek
Dinner was cabbage leaves stuffed with mince and a couple of strawberries to follow

I made 200g of marmite flavoured nuts on Wednesday or Thursday last week and am pleased to say there still a few left.but they are too easy to pick at constantly.
 
Breakfast: some of the left-over veggies, topped with an egg and microwaved for 5 minutes.

Lunch: mushroom soup made with some mushrooms that I cooked a couple of days ago, blended with some milk and a large dollop of double cream. The blending made the cream thicken up so it was a light but satisfying soup (finished with butter and a little soya sauce).

Em is currently tucking in to the lunch she should have taken to school - a cheese and ham wrap, some orange "juice" (Capri Sun - I don't approve of that, but it was all her mum could get at the supermarket yesterday) a yellow pepper, some grapes, some prawn cocktail crisps and a carton of yoghurt. How she can get that all down with her stomach upset, I don't know. She is currently commenting that she thinks she swallowed some seeds from the pepper and is feeling a bit strange.

Dinner: Em wants roasted chicken and cauliflower with some cheesey mash. Should be OK for me - without the cheesey mash, of course although I really fancy it.

Today's breakfast was some Greek yogurt to which I added pumpkin and chia seeds, 8 blueberries, a pinch of ginger, a dusting of cinnamon and a slight lacing of double cream. (I never whip this)
Midday I had a big bowl of spinach leaves with a finger of cheese, and a hard boiled egg (all finger food) followed by half a dozen walnuts and brazils, and for teatime I had another large bowl of spinach combined with a sliced tomato, sliced avocado, and some cold beef slices. :)

Dinner: Balti chicken curry and cauliflower rice followed by SF orange jelly, cream and LC nutty granola.
 
Very pretty food today!
They had the cutest little bell peppers on offer in my local Aldi, so I bought 2 kilos to share with the guinea pigs :)
Filled them with tuna melt muffin things batter, with some adjustments (mainly more onion and jalapenos, plus garlic and a chopped chilli pepper).
I only followed the recipe loosely, as too lazy to measure and weigh ingredients, but it really is nice as either a main dish or a side dish, and low enough in carbs to not need insulin for me, or only a very little, so I think it would be fine for most T2's :)

I only ate two and a half, so tomorrow will be the same with something on the side.

I know this has been shared before on this thread but that was a long time ago, so I'll share the link to the recipe again for new followers of the thread.
It's also very tasty to use with cauliflower or broccoli as a fritatta or crustless quiche, and it tastes good as well eaten cold, so baked in muffin tins it's a nice meal on the go instead of sandwiches if you need to take lunch with you.

I second that @Antje77 those tuna muffins are great.
Today I breakfasted on 3 eggs scrambled in butter. A PT session in the hot sun later in the morning sent my BG over 9
Lots of water later went to the beach, swam in the sea and sunbathed, had a cup of tea with cows milk from the cafe.
Dinner was https://www.dietdoctor.com/recipes/keto-crack-chicken a quick and easy dish in the IP. Served with salad. DGF cake and tea to follow.
Small gin nightcap now
 
No breakfast, but did have an iced coffee in a cafe mid morning
Lunch was a reheated hash of mince, sausages, eggs, cabbage and courgette from last night.
Mid afternoon shared an lc brownie with a neighbour. I did warn her it was no sugar and very dark chocolate. She did finish it all, but didn't accept a second one !
Dinner was a bbq of pork chop and a burger with salad and griddled courgette. 2 glasses wine
 
Two egg cheese omelette, tomato and mushrooms cooke in the microwave for a couple of minutes the finished in the fry pan, two small slices of middle bacon that had lost the belly part for breakfast.
Black coffee and a couple of chocolate digestive biscuits the nurse navigator brought with her.She assured me they were safe to eat in my condition, so who am I argue for smoko. ;)
Steak and veggies including half a large low carb spudlite, gravy for lunch / dinner.
Toasted cheese and tomato low carb sandwiches, half a mandarin witha small tub of greek yoghurt for dinner / smoko.

Changing some of my meal times around to see what happens with my appetite.

Mini mandarins that are aimed at kids so they eat a whole one instead of wasting half of a normal size manda'.

Em's still not feeling very good, so I let her sleep in (she never does that, so she must be unwell) but she has come through now, bringing the big duvet off the bed with her and is now tucked up in the kitchen chair. She wanted some cherries, but I only let her have 3 - just in case they start everything up again. I've told her she must have lots to drink today and we'll steer clear of too many vegetables or fruit. We have quite a few protein things available for her. She can just pick at things. She did want to eat the chunky salad that she made to go with the chicken and cauliflower, but I think that can only be a small part of her diet today. She actually didn't eat any of the cauliflower yesterday - had plenty of chicken and cheesey mash though. I had some bits of cauliflower - very nice - but didn't bother with anything else.

Today: Breakfast was something I've wanted to try for a long time - a slice of white bread with a hole cut in the middle, fried in a little butter and an egg broken into the hole. Fairly high carbs, for me, but it didn't put BG up by much.

2nd meal: probably picking, like Em. There's chicken, ham, cheese, some cooked pork plus the salad Em made and some other veggies in boxes, ready to use.

DIL left a basket of fruit and veg that should be used this week - Braidie won't eat any of it - so I'll have to make something with that - froze some grapes, will make soup with tomatoes, red peppers and carrots and will chop up all the bits and pieces of fruit to make a fruit compote. That can go in the freezer, or down to Em's house, if her dad does get home after all. That's a possibility now - lots of staff at the Western Isles hospital either sick or isolating due to covid, so they won't be doing any non-urgent surgery.
