What have you eaten today? (Low carb forum)

Great news @Annb and another star from me for your speedy getting ready. I’m sure you’ll sleep well tonight.

@Vidar I don’t expect the raw liver would be a safety issue if it’s frozen quickly and from a responsible source. Well done for getting back on the wagon. I think most of us struggle at times.

Today I had 3 pretty substantial meals but still kept below 20g carbs so all good.
B- smoked salmon, scrambled egg and avocado
L- Mortadella, Brie, turmeric&ginger sauerkraut, 2 cherry toms, radishes and leaves with vinaigrette.
D- https://twosleevers.com/instant-pot-low-carb-chicken-bratwurst-with-cabbage/ an odd sort of dish but used up a few things from the fridge that needed using up. It was nice, I’ve never had a bad one from twosleevers
DGF ginger cake to follow.
 
Had a friend visiting today so ate lunch out, I don’t regularly eat lunch these days but really enjoyed it :)
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Lunch: sausage, bacon, fried eggs and mushrooms with a Diet Coke.
Mid afternoon: black coffee and chocolate chia pudding with LC nutty granola
Dinner: chilli con carne with cauli rice followed by SF strawberry jelly, cream and LC nutty granola.
 
Skipped breakfast.
Double long puppy walk as thought I'd dropped my phone halfway round, but it was on the table at home all the time.:banghead:
Early pub lunch. Shared whitebait starter with hubby then double cheese burger with salad. Left the bun.
Mid afternoon, another puppy walk..when do they learn to go straight? He's all over the place
D: 4 bacon rashers , Small bit of manchego, half a pear. Small icecream.
Back home tomorrow and back to a better way of eating. So difficult when you don't know how things have been cooked when eating out.
 
Bacon and a two egg cheese omelette, bacon, button mushrooms for breakfast.
Tub of yoghurt, lemon / lime cordial with the usual Osmolax scoop for smoko.
Roast of the day at the Brothers sports club, beef and veggies (no spuds), gravy for lunch.
Couple of ANZAC biscuits watching Netflix.

The RBH in Brisbane sent me a appointment time for the vascular specialist clinic on the 23.11.2021. I do not really want to go as it is approx. a ten hour round train trip over the two days as one my main concerns.

The Nurse Navigator from the base hospital is coming around today for a discussion whether Yay or Nay on going.
 
Question - is anyone on here taking metformin and skipping breakfast? Have you had any side effects by not eating but taking the pill? Thanks

I forced down a toasted Chaffle with scrambled egg. Was nice but I wasn’t hungry…
 
I had decided that to say "I don't like crab" when what I don't like is the idea of crab, having never eaten it, was ridiculous (crab resembling a spider too much for my liking) so I asked Neil to add some crab to the shopping list last time he went to town. He couldn't find fresh, so he bought tinned crabmeat. That's what I had for my evening meal yesterday, with some salad.

It wasn't particularly offensive, but it wasn't worth the bother. Still had half of it left, so I mixed it with some "light mayo" (half mayo, half yoghurt) and had a sandwich of that and wholemeal bread (around 30 carbs) for my breakfast.

Later, I will have some lamb chops with either cauliflower or cabbage.

I've said the same thing about prawns and lobster - never having had lobster or prawns. My mother used to buy shrimps, or on days at the seaside we would have cockles and we loved them as children but that was before I imagined crustacea to be insect-like and so wouldn't eat them. I suppose I really ought to try at least prawns (lobster is far too expensive to experiment with).

I take one metformin in the morning but I usually have breakfast. My current addiction is SLC toast with something on it. Occasionally I skip breakfast but it doesn't bother me.

Yesterday had my usual brekkie of slice HiLo toast, utter and lots of tea.
Lunch was scrambled eggs followed by tea and 2 squares Lindt 90.
Supper was chicken pie without the lid inspired by @Riva_Roxaban and spoon of leftover Med veg. It was trial while wearing a Libre. My BS shot up 4 points to 9 straight away but very quickly shot down again to base, not seen that before but can’t call it a prolonged spike. I’m not sure if or when I would repeat.
Today same brekkie.
Lunch was rollitos and spoon cheesey coleslaw, cup of tea.
Supper will be roasted chicken breast with a dash of Nandos Lemon & Herb sauce, cauli & broccoli.
May have been a rogue reading. I had one earlier this week. I had to get Hubby to bring me test strips up as the Libre had shot up to 16.7! 30 seconds later it was 19.3 and still going up! It was actually 7.4. It hit 24 before it nosedived. It had settled down by the next day.
 
I don’t know why I am getting so ridiculously hungry at the moment. Went out to do my normal Thursday morning volunteering on just black coffee as usual but by the time I got home just before 11am my stomach was actually hurting with hunger.
2 small leftover chicken meatballs to stop the ‘hangriness’
Later SLC open sandwich - slices of Turkey breast, avocado and rurmeric&ginger sauerkraut. 25 gm mixed seeds and Montezuma’s buttons afterwards.
Dinner was chicken pot pie. @PenguinMum I know you were missing chicken pie ( you made me fancy it too) I’d thoroughly recommend this, (I didn’t use green beans though) https://www.dietdoctor.com/recipes/kristies-keto-chicken-pot-pie Havent checked bg yet but might have a DGF cake if it’s not too bad.
 
Three meals today but ate similar amount to the recent two meals days but split over three smaller meals.
Breakfast two boiled eggs with one slice of lc bread
Lunch a few berries with yoghurt and coffee with one square of 90% choc and two walnuts.
Dinner venison wrapped in Parma ham and pan fried served with cauliflower cheese and small glass of red wine followed by lc crumble.
Think three small meals suits me best re my own sugar levels and stress management but I don’t like eating before about 10.00am - I’m never hungry early - so if need to rush out prefer to delay till lunchtime - I enjoy a little bit of extra time drinking weak black tea in bed and waking slowly whenever I can!

I’ve been enjoying cheese on (lc) toast recently too, I hadn’t realised how much I missed it. That’s a great idea to top with the extras, looks very good.

I am not on Metformin any more but when I was, I followed the directions on the pharmacy label and also the insert directions to take it with food.

I believe if you follow the directions on the medication you will not get side effects, just having a minimal breakfast will help you such as a slice of toast etc. I never had any stomach problems when I was taking it.

If you haven’t tried chaffles yet - I think you should - great for pizza bases
 
Two egg and cheese omelette, two slices of middle bacon, button mushrooms, tomatoes for breakfast.
Tub of chobani greek yoghurt, usual cordial mix for smoko.
Red Rooster whole chicken and veggies gravy for lunch.
Leftover chicken and a bit of salad in a low carb wrap for supper at six.

My meeting with the Nurse Navigator went well, and it was a bit of a brain storming session with plenty of "what ifs" kicked about.

We agreed, including my partner that I will not go to Brisbane, and so the appointment was cancelled for me by the NN as she is more familiar with the correct medical terms to use.

That's one less worry to worry about. :)
