What have you eaten today? (Low carb forum)

Gosh crisps! That must be the first packet you’ve eaten in years, will you check BG or just move swiftly on?
Checked and decided the Libre was obviously running high :D:arghh:

@MrsA2 250mls over 3 days is quite restrained.

I’m allowing off piste to continue until Xmas and have started the day decadently. This, after a hotel brekkie of bacon and eggs. Tonight will be all you can eat Brazilian BBQ with a friend. Mostly Picanha in my case.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a Carb Killa bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar
Dinner: mini lamb loft as with leafy salad and coleslaw followed by DGF lemon and blueberry cake and cream.
 
Today I had breakfast - Fage 0% with a chopped strawberry and mixed seeds. Loads of coffee.
L- mortadella, rocket, cherry tomatoes and slaw made with cabbage and grated celeriac and h/m mayo. DGF brownie.
D- had a craving for a Cornish Pasty having found some beef skirt in the freezer. Made traditional ones for the others, cooked my filling separately in a foil pack. ( Celeriac instead of potato) then intended to shove the filling in a piece of LoDough and put back in the oven for 10 mins. I couldn’t stick the edges together so it wasn’t very successful. Filling was v tasty though. Steamed broccoli and a teaspoon brown sauce with it. Brie and lc seedy crackers and a glass of red to follow. In the photo the front pasty is the real thing, my poor substitute is looking forlorn at the back!IMG_1639167794.964375.jpg
 
Decadence continued today. Totally stuffed after a meat fest at my favourite Brum restaurant. Just two of many plates of Picanha and more. Yum! Recognised there and in Hotel Chocolat in a city that’s not even home!

Yesterdays soup again.
I'm still feeling very yucky with the cold, and I'm getting more annoyed with diabetes by the day for acting ridiculously unpredictable because of this cold on top of my insulin taking hours to have an effect, but...
My soup tasted of tomatoes today!
Not all the way there yet, but enough to be sure I made a good soup yesterday. :hungry:

There's enough left for tomorrow, hopefully it'll be even better by then! :)

That looks SO good! Can’t believe you were recognised in those two places, you must make a very good impression.
 
Two mexican sausages, two eggs, some left over veggies fried up for breakfast.
Usual tub of yoghurt, lemon cordial osmolax brew for smoko.
Red Rooster whole roast chicken and some chips for a late lunch after coming home from the GP's appointment.
Two toasted sandwiches with the rest of the chicken and some salad for supper at six seven.
 
Late recording my food today as had to go out early evening and a busy day generally.
Lunch hm lc roll with some pate, vintage cheddar and nuts followed by yoghurt and one square of 90% chocolate
Early Dinner salmon in lemon butter with green beans before dashing out.
Must be first day for ages with no eggs and no lc pudding! Breakfast may be needed in morning.
@Goonergal your meat looks amazing enjoy your few weeks of more relaxed eating. Only another week till we go to mums and hopefully bring her to ours for Christmas planning relaxed few days over the Christmas week.
 
Breakfast: cheese on toasted wholemeal bread. About 25 g carbs.
2nd meal: smoked mackerel with some frozen chips. No noticeable rise in BG so it must be right that frozen potato is not as harmful to BG as ordinary potato.

Em is here for an unplanned sleepover. Both her parents have to start work at 7 am tomorrow and it is easiest for her to come to me overnight. It was her idea. Currently she's watching something on my tablet and eating an ice cream (Nuii mango and passionfruit, I think it is). Not what I would have suggested for supper, but it's what she wanted. Bed for both of us very soon.
 
Visitors today, felt like the start of Christmas
11.00 with coffee 3 tiny bites of different flavoured mince pies
12:30 homemade veg soup (with a few lentils in), cheese plate (cheddar with pickled onions, Derby with port wine, brie with truffle, Cheshire) They had rolls, I had m&s crackers.
18:00 Smoked salmon and salmon cocktails (basically a mousse that didn't set so served in glasses on lettuce), frittata and salad, lc berry cheesecakes with brandy cream. Quite a lot of red wine
 
Brunch - Roasted cheese on slc bread. Mug of earl grey.

Dinner - h/m lasagne made l/c by using cheese squares instead of pasta. 2 slices slc bread toasted with garlic butter smothered on top. 1 dgf chrimbo crumble with double cream.

I keep forgetting to try the cheese slices instead of lasagne. So much simpler than making keto pasta sheets, the photos I’ve seen look like it works really well. Which cheese do you use?
 
I've done it using gouda from Lidl. Very nice
Love that idea as we gorge on the sliced Aldi Gouda in my house.
I've made the lasagne with all bolognaise instead of white sauce but still used the pasta sheets.

Guess what I'm cooking for dinner tomorrow, wont say a word to the kids, I'll see what empty plates come back.

I just use Galloway Red Cheddar slices for the pasta slices and finish it off on top with mozzarella cheese(nice and gooey) but you could use whatever you like - it was so stodgy & filling tonight - I really enjoyed it - maybe because it was so cold outside too

Edited to add: I also add mushrooms, onions, tomatoes & peppers to my mince mix/lasagne - so it is really quite filling and even when I could eat lasagne at the italian restaurant if we were out I was always disappointed and preferred my own with all the added "extras" but just a personal choice I have

Another two meal a day - seem to have shifted to this daily routine currently.
Lunch one each of slice of bacon,egg and a few mushrooms with one hm lc roll followed by a few nuts and three squares of 90% chocolate
Dinner slow cooked game casserole served with roasted celeriac followed by lc warmed blondie served with yoghurt.
