Hi All had such a fun day with the gathering of the clan yesterday. My soon to be DIL had a bad migraine and didnt come but sent home a t/a pack with youngest son. The only photo I have @DJC is the Ras al Hanout cauli salad which was the biggest hit and was easy and made according to my memory of eating it out. I made a paste of the spice and olive oil and massaged the florets and put them in a medium over for 15 mins, added a little water from the kettle so they didnt dry up too much. They came out al dente and added can of drained chickpeas, pomegranate seeds and blobs of natural yogurt and goats cheese, topped with mint leaves. I baked salmon fillets with herby butter in tin foil and made a Med veg pasta bake (using the 50/50 allocation) with a thick cheesey top, Jersey Royals baked with fresh rosemary and English asparagus drzzled with OO, seasoned and 15 mins in oven. It was all such an easy “put everything in the oven”. I got a chocolate roulade from Cook and added lots of mini eggs and a huge bowl of berries. I am afraid I tried to be good but drank too much French rose wine and the chickpeas etc(?) and though I dodged dessert I did snaffle a few or more mini eggs (the ones with crispy shell).

Today its just the two of us so will bbq tonight enough for two days and use up the leftovers from yesterday. Hopefully it will be a couple of relaxing days in the sunshine with easy relaxing food. Happy Easter everyone.
Hey Rosemary my daily diet is one of the most predictible and boring ones on here usually.Morning all. Well, my daily diet won't be as exotic and mouthwatering as @PenguinMums!!!! Skipped bf, just coffee n cream. Airfried belly pork slices with green veg at 12. 2 squares of chocolate at 3ish and egg mayo and cress on 2 buttered Ryvitas at 5ish. Bit boring really!
Chocolate is allowed at easter as it is a good excuse as any.Eaten more than my one or two squares of 85% chocolate today, I usually eat it after I post here! However today I needed some comfort food as I have developed shingles and it’s so uncomfortable
@DJC3 saw your question about monkfruit. I used to get it from here: https://www.luckyvitamin.com/p-1999974-lakanto-monkfruit-classic-sweetener-8-29-oz seems it’s on offer at the moment at under £6.
I'm having keto pizza bowls for dinner ( you won't even miss the crust!!) And a glass of red wine for dinner.
I like zucchini/courgette fritters as a base for a poached egg and a bit hollandaise. Lots of recipes online, I usually use the one on Once upon a chef site but I use a bit of ground flaxseed instead of flour. The fritters freeze well too.Had 1st meal about 11.30. It was some more of the ratatouille with a couple of fried eggs on top. Still have another serving of the ratatouille to use. Might add some peas and some kind of meat (chicken possibly) to make a kind of minestrone (without the pasta) for tomorrow.
I thought I had some gammon steaks in the freezer but searched for it last night and couldn't find it, but I did find a pre-baked chunk of gammon and it's defrosting ready for my 2nd meal today of gammon and courgette in mustard sauce with some quickly cooked cabbage in butter.
The reason I was looking for ways of cooking courgettes was that I asked Neil to buy me one moderately sized courgette but all he could get was a pack of 3 very large courgettes, so I'm looking for ways to use them up before they go off. Still have one to use so am trying to invent something for that and am thinking in terms of something layered with onion, tomato and another vegetable, the name of which escapes me at the moment (it's white, turnippy kind of thing - not kohl rabi, often used instead of potato). You know the one I mean. My memory often fails me this way - worse these days than it used to be, but I've always had problems this way.
