What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a Carb kill bar.
Dinner: bolognese with sliced sautéed courgette and grated extra mature cheddar followed by SF raspberry jelly and cream.

Hugs for the colds @Pipp and @Antje77 I like both your ideas of cold comfort - the creamy soup and hot toddy. Hope they do the trick.
Good luck with the diabetic review @RosemaryJackson and with your hand op Friday, I think sometimes it’s good to forget diabetes.
Todays breakfast was a bacon and avocado SLC roll. Lots of black coffee.
Lunch out, bunless cheeseburger, salad and their delicious homemade coleslaw which they were happy to sub for the chips itd usually be served with. Coffee
D- 2 large baked mushrooms filled with blue cheese and chopped walnuts. Glass of red.
 
Morning All, that M&S Chicken Shawarma looks interesting, will seek it out in our Simply Food though they don’t stock the full range. I wouldn’t like the sauce but Mr PM would. I could just have a spoon of Fage instead.
yesterday I had my usual brekkie with slice LC toast and copious tea.
lunch was out with a lovely elderly friend not at the tea shop we had planned as it was closed so went to nearby garden centre cafe. I chose bacon and mushroom quiche with salad but ate less than half as it was one of those individual ones that are mostly pastry and when you hollow it out its a bit pointless. A wedge of quiche is much more LC friendly. Supper was tom & chilli meatballs with cauli rice.
this morning after repeat brekkie am making broccoli and leek soup for lunch and this evening will be omelettes as have eggs out of date today, either ham & mushroom or. chorizo & red pepper diced.
New pet hate lots of makers have ditched click lids on yogurt, coleslaw etc meaning once opened it spoils faster so we get plastic saving at the cost of food waste and inconvenient. And I know I can transfer it to a pot of my own or use cling film but it just niggles me. I am also not a fan of removing best before dates as I shop weekly I would like to put my ‘use first’ fresh food in front in the fridge. Another thing which may well lead to food waste IMO. Anyone agree?

When we open cream/sour cream, or whatever, we write the "best before" date on the pot in a Sharpie pen. That works well.

(To be fair, we treat "Best Before" etc, with a pinch of salt.)

And on topic: soup reheated.
Also added some paneer I found forgotten in the boot of my car, think I bought it a week ago. Didn't smell or taste off (like someone said, it didn't taste of anything really) so why not add it to the soup.

Cat thought it was delicious so I have a feeling the rest of the paneer will disappear in my pets.
 
Bacon, cheese and tomato omelette, two slices toast and vegimite for breakfast.
Blade roast and veggies, gravy for lunch.
Cold roast beef leftovers and mustard sandwiches, for supper at six.

Glass of single malt before a early night.
 

B: scrambled egg with ham and cheese, but my host put a load of fruit on the side. Picked out the blueberries, ate the mango (it was delicious), gave rest to hubby
Late lunch. 2 oysters then prawns tacos in tortilla wraps. Drank water only . Bg peaked at 10
Very late dinner: Mexican restauant where everything comes with rice and beans. Ordered steak and onions which turned out to be mince. I only ate 2 mouthfuls of the rice and beans.Trouble was I picked at the corn chips and salsa so shot straight up to 10.
My host (a long lost cousin) has no idea of carbs and its my choice not to enlighten him.
Moving on tomorrow, think next host's have more understanding of low carb
 
To be absolutely honest I don't think I will be able to eat a anything today.I feel quite sick.
Went for the HbaIc yesterday
after 3 months low carb.The practice nurse told me 'eat the potatoes and the carbs,they are good for you.
And then she said 'Now I will ave to find a rich man so I can retire fom this job.and when I said 'carbs turn into sugars
she just looked at me as if I was a stupid child. Such ignorance.Hoping to prove her wrong when t he results come in.
and friends can be horrible sometimes too.Because I have a friend who is finding it hard to manage her blood sugars
So she tells me 'You will never do it'.And the end of the story maybe I will prove them all wrong.

I think I will have a piece of cheese ow after all because 'will power always wins'.And NOT LET ANYBODY get us down.

I am an ex nurse and have many friends who either still work or retired. I shan't tell you the sorts of conversations we have !!!!!!!
 
Morning all. Fasting till after the revue but am still vvlc because my levels were high again. I was really good yesterday, less than 15g carbs, so hopefully I'll do better today. I'm lucky, my nurse practioner knows carbs turn into sugar and is a great support. So today when I get hope I will have belly pork with fantastic crispy crackling, (prefer the crackling to the meat) and teatime, egg mayo with cress and maybe 2 buttered Ryvitas. Hope the weather is better where you are!
 
2 Fried eggs about 1 pm.
Fried pork belly later. I intended to have that last evening, but realised that the salmon Neil bought was short dated so had to be used yesterday. So I had seared salmon with mayonnaise instead of the pork. BG dropped away down overnight to 3.9 on the Libre (woke me up around 2 am). A boiled sweet stopped the alarm sounding. Rose to 6.5 by time I got up.
 
Trying to use up fridge leftovers today meant all cold food which has made me feel even colder. I’d have preferred soup or stew. Lots of hot black coffee throughout though
B- 2 chicken drumsticks.
L- ham, h/b eggs, cottage cheese, leaves. H/m yoghurt with berries and seeds.
Snack- DGF cookie and cup of tea with milk
D- cold leftover chicken sheet pan fajitas with chilli mayo to try to give a bit of heat.

We've all been there. Thankfully attitudes are changing gradually. Getting low carb food is so much easier now. I always maintained that eating the way they wanted with that "eat well" plate would have definitely had me on insulin a long time ago. As it is, I'm still hanging in there on reduced meds. Keep at it.
 
Wednesday 12 October - bed 7.3 FBG 7.1. Usual visit by the boys for dinner. A bit like you @DJC3, I'm trying to run the fridge (and the freezer to a degree) down before we go off next week. I found a joint of middle gigot of lamb in the freezer which was duly casseroled in the IP with loads of veggies.

B. TAG and 1 M&S crispy cheese cracker with whipped cheese

L. A sandwich of SLC bread with mortadella and whipped cheese.

D. Said lamb with carrot, onion, broccoli and sprouts. It was quite early, so I chanced a Nick's coconut bar which didn't do any damage.

Thursday 13 October - bed 6.8 FBG 6.9 as I said, the coconut bar did no damage. Put in a final Aquafit class since I won't be back in for 2 weeks. Usual school runs, Aqua and a quick detour by Next to pick up grandson's gilet (body warmer to me) and.....not jumpers.....2 scarves.

B. TAG and last 2 tiny slices of SLC toast with whipped cheese.

L. Nothing by BGs got down to 4.9.

D. Still making something out of nothing (as Hubby says there's nothing in the fridge). A kind of variation on courgetti carbonara as I added some spinach and santini tomatoes.

1/2 day at school tomorrow then it's time to get organised.

Oh, and I won my disagreement with the energy supplier. My direct debit has been reduced, my money is in the process of being refunded and they're making sure everything is being confirmed in writing. 20221013_184642.jpg
