What have you eaten today? (Low carb forum)

Wednesday 12 October - bed 7.3 FBG 7.1. Usual visit by the boys for dinner. A bit like you @DJC3, I'm trying to run the fridge (and the freezer to a degree) down before we go off next week. I found a joint of middle gigot of lamb in the freezer which was duly casseroled in the IP with loads of veggies.

B. TAG and 1 M&S crispy cheese cracker with whipped cheese

L. A sandwich of SLC bread with mortadella and whipped cheese.

D. Said lamb with carrot, onion, broccoli and sprouts. It was quite early, so I chanced a Nick's coconut bar which didn't do any damage.

Your dinner looks lovely, a lot more satisfying than my cold salad. I can’t believe 1 M&S cracker though! I don’t think I’ve ever managed to stop at less than 3. I have 2 boxes left in my cupboard and I’m scared to open them as I haven’t seen any more in M&S for months.

My freezer started getting gaps until my daughter dumped half a ( butchered) pig in it today - I’d bought it from a local farm a fortnight ago and begged space from her freezer as I couldn’t fit it in mine. Today she took delivery of 150 frozen chicks for her pet snake so needed the space back.
 
B: yoghurt seeds and 4 raspberries
Dog walk. First proper one since covid
L: 3 cold lamb meatballs, blue brie, bit of greek salad. A 20g portion orange chocolate
Slept most of the afternoon
D: mushroom and spinach omelette. A nut bar. Soda water with lemon
 
BG is all over the place due, I think, to having caught a cold from Em.
Breakfast was 2 slices of white bread with cream cheese. Just because it was handy. Didn't actually enjoy it though. Did enjoy the grapefruit juice that I followed it with - good for my throat.
There will be 3 meals today. The second will be comforting tomato soup with added cream.
The third will be h/m turkey sausages. That's because I have made the sausage meat ready to make mini sausage rolls for gr grdaughter's 2nd birthday party. The s rolls will be mini ones so there will be meat mixture left over to be used up.

Very odd that after the bready/fruity breakfast, BG is falling and is currently at 4.5. Opposite to the norm.

1/2 a pig is a lot of freezer space. I managed to get everything I need to get us through next 3 days without leaving any food. If I want food for the train, there is a M&S just food in Edinburgh Waverley.
I can do the "one item" quite easily. Usually, it's just to get a small amount of carbs into my system to stop the liver dumping glucose. It's a nice quick grab, a single cracker with whipped cheese or pate. I'm the same with Hotel Chocolat. I adore their dark gin truffles and I only ever eat one when I have them (which may happen as they are in Paddington and Bath). I do savour the single one though.

Cold food for me today. Started with leftover corned beef and a slice of Schneider Brot.

Then more corned beef and 2 cold Waitrose 1 Cumberland sausages on the train.

Just bought some antipasto meats and mini cheeses for my hotel room as I dashed back from shopping aiming to miss the worst of a rain shower. Still need to pop out to stock up the fridge with drinks but hopefully it’ll have stopped raining soon.

And just had yet more meat! Still felt peckish when I nipped to Morrisons for drinks for the fridge so picked up a chicken leg - and one wing thrown in free - from their rotisserie counter. Must say the hot food hit the spot in a way the cold stuff hadn’t.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a Food dr bar.
Dinner: LC roll with salmon and cream cheese, coleslaw and side salad followed by DGF brownie and cream.

Friday 14 October - bed 5.8!! FBG 6.3 and 1/2 a day to the school holidays. That's the good news. The bad news is I've come down with Hubby's cold but I have to keep functioning. Unlike you @Annb my BGs have gone the other way. They are dotting about on the low side but that suits me. I managed to get what I needed foodwise for the next 3 days at least. Regrettably, getting the washing done and into the Pod was beyond me.

B. TAG followed by the double school run. Hubby stayed in bed. Took DIL to work as it was a really miserable morning. Then shopping.

L. After school pick up of happy children, collected DIL, stopped so she could get a small shop then finally got home to lie down. Much later a SLC sandwich with egg mayonnaise.

D. Didn't have much taste but I managed to come up with something quick & tasty. Thanks Mary Berry.

Quick fry scallops in butter/olive oil. Remove the scallops then fry sliced king oyster mushrooms (sliced longways) and season. I did a variation here and added spinach which was not in Mary Berry's recipe. Add some white wine and reduce down . Add fresh parsley and tarragon if you have it. Finally double cream (Mary used 300mls I used 150mls which was plenty) and a dash of lemon juice. Allow to thicken and that's it. 20221014_185133.jpg

Sorry you are under the weather but you deserve a medal for all your running around while feeling low and for bothering to make food like that.
 
Look what a pretty plate I have!

If it looks familiar, that's correct, but you've never seen so many veggies on it before. :hilarious:
Over three years ago, as a joke, I started begging @Goonergal for her pretty fishes plate.
Some two and a half years ago, there suddenly was a plan for a moderator's meet up in may 2020, ferry tickets were booked, and business on the plate got serious.

Well, for obvious reasons plans got postponed, but not forgotten.
Not only have I finally met the wonderful people I've worked with for years but I've also gotten my plate!

First meal on The Plate had to be a celebratory one so I made a christmas worthy meal with some pork tenderloin (never made that before, very tasty!), Brussels sprouts, and a creamy mushroom sauce. Never made mushroom sauce before either, but I'm in need to find ways to eat the double cream I brought back to the Netherlands before it goes off, and this seemed to be a very good way to do so!

Still feeling delicate. Faux porridge for breakfast, black coffee.
Creamy chicken soup for lunch. Lemon ginger tea.
Dinner hot chicken and coconut curry, broccoli. Lemon ginger tea.
I always feel very hungry when I have a cold, and crave hot food. Lots of It. Avoiding the urge to eat toast to ease the itchy throat.

I have a week and a half of "almost" peace now (although our workmates/spouses get together may require a couple of recovery days). I still have to boys to take to jujitsu tomorrow and the wee one to swimming on Sunday. Other than that I'll be dosing up on paracetamol, hot showers and resting between packing and putting the house into holiday mode.
 
Though not if it has grown a fungus.:yuck:
A very pretty bright pink one in the tub that's two days past it's use by date and has spent more than a week in my car because I didn't want to open it without being able to close it again.
Very happy dogs and cats who got a generous portion from the other side of the tub! :cat:
 
Hi all havnt posted food in a while
0900hrs pouched eggs and bacon
1300hrs steak , a few mushrooms ,onions and a couple of chips being naughty. No real spike and sugars stayed below 6 . Not going to be regular
1830hrs stirfry veg and salt&chilli ribs
3x coffees 2 with cream
2x squares of dark 85% chocolate .
