What have you eaten today? (Low carb forum)

Brunch - 1 slc roll filled with egg mayo. Mug of earl grey tea

Dinner - 1 slc pizza base loaded with chopped tomatoes, mushrooms, onions and topped with mozarella cheese (1st time I have had this) and it was lovely - Saturday night fake-away - it just tasted like a really nice thin & crispy pizza :) then some kefir & blueberries

So ... @maglil55 I had a £10 off voucher for dgf and I thought I will use it to buy the 3 for 2 chocolate but when I went to the website there was no 3 for 2 offer just individual bars which obviously were a lot more expensive but still available? so I e-mailed dgf and they said yes that was right enough so I never bothered, far too expensive and when I thought about it Aldi are selling their 85% for £1.29 at the moment which works out at more or less the same carbs if I split the bar in to 3 - so no brainer for me I will be buying the Aldi chocolate as it is loads cheaper. Quite glad as I think I will save myself a lot of money in the long run - as last time I got the cakes they didn't taste as good as the time before and when I buy them I usually spend over £40 to get the free postage but £40 is too much to spend on something these days which is just "ok" and not good :(. I hope you are having a lovely holiday @maglil55
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a PE protein bar.
Dinner: identical to yesterday’s dinner just changed positions of food on the plate (!) followed by a DGF chocolate brownie and cream.

Snapsies @Rachox I will be having the same dinner tomorrow as I had today to use up the remaining mushrooms, onions, mozarella cheese etc and I am really looking forward to it :bigtears:
 
Black coffee all morning to keep me going while volunteering at the vaccine centre. Lovely to chat to so many elderly cheerful local people.
L- Sliced Turkey breast, blue cheese, Supergreens sauerkraut DGF crumble and cream.

Afternoon nature art class. The teacher is lovely and instead of bringing cakes in for tea break, she now brings in nuts and high cocoa % choc which is enjoyed by every one. ( and means I’m not left out)

D- Venison steak, swede purée, broccoli. Followed by cheddar and a glass or 2 of red wine.

@RosemaryJackson I would also have suggested trying higher protein rather than reducing the amount you eat, but see that @Goonergal has already given you good advice. Good luck

Or maybe I have something brewing and it wasn't the food. I've been adding insulin every hour since 7:45 PM and BG is staying stubbornly in the 6's. Not bad but I should have dropped hours ago, regardless of what was in the food. Stupid disease.
Definitely wasn't the food yesterday, still taking ridiculous amounts of insulin today. No idea why, but while annoying it works, despite running slightly higher than usual so nothing to complain about really.

Was going to make a peanut soup today but I've slipped into my 'post-too-much-stuff-dip' on monday, and then still had to do more stuff on tuesday and wednesday, and the party yesterday.
So I firmly told myself it's perfectly fine to not do anything except feed the animals and had a low carb sandwich for dinner.

Post-stuff-dip often happens after lots of social and other activities and consists of quite serious depressive symptoms. The good thing is that I know it's temporary, and it was calculated into my holiday as well. I can sit it out!

Started an extended fast at 11 am, so enjoyed a large breakfast rolling on into an early elevenses to set me up.
Coffee.
Big "salad" of Bacon, kimchi, chickpeas and harvati with olive oil. Baked chicken thighs w lemon and thyme. Handful of macadamia nuts, the last of a bag of pork crackling, and some 95% choc to finish.
 
Skipped breakfast until gone 12
Scrambled eggs with mushroom and pesto, with a particularly nice side salad
D: shared starter of polpette meatballs, main was sea bass with capers and lemon sauce and veg. Drank 2 spritzes. 30 minute walk each way helped bg stay between 5 and 7

13000 steps total today
 
@Goonergal, @DJC3 and @Annb, thank you. You've given me plenty to think about. I will look up Amber O'Hearn and the other hints. Wish me luck! I'm fasting till lunchtime then I will finish of the rest of the beef and mushroom casserole . I have ham and boiled eggs for tea. Going to walk on my treadmill 3 times per day now to see if that will help bring my levels down. 4 mins each time isn't much but hopefully every little helps! Atm, that's all I can manage.

D a small bowl of hm low carb beef casserole wife made.. @DJC3 . Feeling a bit better thanks for asking. Unfortunately my suspicions were confirmed yesterday when results came back positive for covid so stuck in bedroom isolating. Second time round for me but symptoms not as bad time only for my taste is off this time so food isn't the greatest.

Even a short time exercising is good and can form the basis for more. Start slowly and build - that's the trick. Trying to push too hard at first can lead to sore muscles and cutting back or cutting out. Best of luck with the exercises.

Hope your covid is short lived as well as less serious than last time. Neil thinks he has caught "something" and is sticking to his room feeling a bit at odds with the world. No way of testing atm.
 
Not much food yesterday so started today with "special" tomato soup - tomato soup with double cream in it and when very hot, poured over a whisked egg. The hot soup cooks the egg and gets thicker. Adds protein and makes the soup more filling.

I may not have anything else to eat today and will keep going with hot drinks. They are very much needed today - it's very cold. Still refusing to put central heating on and it's getting uncomfortable. However, Neil has a small oil filled radiator which heats his room adequately and there is a small convection heater in the kitchen which is fine as long as you stand over it, or sit very close.

How can it be? BG this afternoon has shot up to 16.1 - on nothing but soup early on and tea and water ever since. Well, I guess it's much the same as a few days ago. I got over it then and will get over it again. Yesterday was pretty good and BG was reasonable most of the day so I kind of thought I was getting back to normal-ish levels. Took a full dose of insulin a while ago to bring it down and it has dropped to 13.4. But I am actually hungry after all, but don't want to eat and push it back up again. Might have to though.

Today I found the courage to cook my peanut soup! :joyful: (While ignoring the absolute mess in my kitchen and just freeing a large enough corner on the countertop to chop my veggies. Pretty impressive how much of a mess you can make when ignoring everything for two weeks. :bag: Good thing I have a household help once a week (she was on holiday last week, hence 2 weeks) exactly for this reason, she'll come tomorrow morning and everything will be well again. :) )

I've decided I absolutely love peanut soup with lots of veggies, will feature on my menu much more often if I don't forget!

I tried a new and very lazy trick for marinating the pork belly pieces I added to my soup. Usually I make a marinade with lots of different stuff, which is quite a bit of work. Today making the soup used up pretty much all the energy I had for cooking so I decided to just cut a pork belly strip in pieces (use scissors!) and coat with some black bean and garlic sauce before baking and hope for the best.

They tasted amazing!
I looked it up and the same sauce is sold at Tesco, so here's my recipe for ridiculously easy pork belly pieces to add to various meals:

- Cut pork belly strips in bite size chunks with scissors.
- Coat thinly (be careful, the flavour is very strong and the sauce is very salty) with black bean and garlic sauce (Lee Kum Kee).
- Bake on a sheet of parchment paper for 15-20 minutes.

Breakfast today was fried eggs on some low carb toast and marmite.
Few nuts and blue cheese and a DGF carrot cake at lunch.
Dinner was roast lamb, creamed cabbage and roast broccoli. 2 glasses red wine then h/m yoghurt with berries and seeds.
