What have you eaten today? (Low carb forum)

Monday 6 February - bed 7.4 FBG 7.5. School runs straight to physio. Badly needed as my ankles and calves have not had a good week.

B. TAG

L. 2 slices of SRSLY toast with bacon and egg mayo. Odd combination, but it actually tasted nice. I had egg mayo needing used up, and I was making bacon rolls for the gardeners on my return (they were busy giving my trees and shrubs their annual "haircuts."

PhD brownie bar - note to self - don't buy again. It lay on my stomach like a brick!

D. The leftover stroganoff from yesterday and a fresh batch of cauliflower fried rice. I couldn't finish it thanks to the PhD bar.

Tuesday 7 February bed 7.4 FBG 7 6. So tired this morning. Not a good night with indigestion, but it had passed this morning.

B. TAG. On return from the school runs, 2 slices of SRSLY toast with pate.

L. Nothing

D. First DD recipe thus week. DD seafood salad (as usual I made additions). Lettuce, tomatoes, avocado, cucumber, flaked salmon, wild Argentinian prawns. My additions- boiled egg, beetroot and lobster tail. The dressing was sour cream, mayo, garlic, minced red onion and lemon juice.

Thanks @Rachox - you reminded me I still had DGF Christmas puddings in the freezer. A warm DGF Christmas pudding with cream. Very nutty.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: creamy garlic prawns with sautéed sliced courgette followed by SF cherry jelly and cream.

Morning - Black coffee and dog walk along the fabulous north Cornish coast.
Lunch- when I got home about 2pm was high meat percentage chipolatas, Halloumi fries and cold leftover roast veg from Sunday. DGF Crimbo crumble.
Dinner 6pm pork stroganoff on sweetheart cabbage ‘noodles’ followed by a mini bar of Montezuma’s absolute black.
 
Brunch - Low Carb Co roll filled with bacon and a smidge of 50% less salt & sugar tomato ketchup. Mug of earl grey tea

Dinner - chargrilled chicken strips with side salad. Handful of mixed nuts. Kefir & mixed berries. Large glass of pepsi max.
 
Snow peas were on offer if you bought two bags so snow peas will feature heavily on my menu in the next 4 or 5 days.
Also bought steak pieces (cheaper than a whole steak and easier to fry) and had some with onions and mushrooms. The steak was hardly overdone, very happy with this! I usually manage to cook my steak either way too rare, @Goonergal style, or completely dry. So almost right is a win in my book!
The yellow things are pickled onions.

About to have chicory leaves with hummus before bed.
I am so happy that that is firmly back on the menu after a break for almost three years. I love it for a midnight snack but for a very long time I couldn't eat it without crying for memories of my first dog who died 3 years ago. I've tried a couple of times over the past years without success, and now it works again without getting all emotional! (Not that I mind getting emotional over missing a loved one, but it's not the best thing right begore sleeping.)
 
I did manage to outlast the hunger pangs last night. Went to bed hungry but woke up not too hungry.

Day 2 no nuts, dairy or alcohol (well 2 out of 3!)

9:30 2 hard boiled eggs with mayo.
Usual dance class was cancelled today so hubby and I joined in a local fitness walk, fast for an hour, 4 miles. We did it just, but were slowest of the group. My legs are used to walking but not that rate.

L: Green salad, ham and tablespoon coleslaw.

mid afternoon: 4 Cold IKEA meatballs

D: an odd but tasty mix. Cooked some 95% chipolatas with some shredded green cabbage in a pan with a little ham stock. Add green beans near end of cooking, then added a lamb curry found at the bottom of the freezer. The lamb was 2 portions and there are 3 of us so the chipolatas bulked it out
App was telling me low on fats so I ate 30g mayo straight from the spoon.

Still less than 1/3 fats, but very close to protein and carbs targets. I'd forgotten how tricky this monitoring can be.

At book club I did resist the wine, but did have a small (pub measure) Scotch as my throat was a bit sore . Seems to work better than cough mixture.
 
Morning all. Very hard frost here so warming food it is. Got a carton of h/m beef mince with veg out of the freezer for my one meal and a piece of cheese at teatime. The carvery yesterday changed into an omelette with salad and chips. I ate half the chips but they were the only carbs I had yesterday altho my bg went up to over 7. Have a good day all :happy:
 
Black sausage - 2 slices and 2 fried eggs for breakfast. Feeling quite comfortable with that so far. Plenty of tea. Only 2 slices of the sausage left so I might have to make more soon. Maybe make haggis sausage instead. Neil bought me another haggis last week and I will only use a bit of it as haggis itself. Actually remembered to take my pills this morning.

Well - I took the Metformin, the Zemtard, the Levothyroxine and the Aspirin but didn't take either diuretic because I have to go to the medical clinic at the hospital at 4 pm for some reason and there's no way that I could go if I took those pulls.

When I come back, there is still a little of the cold chicken left - I didn't have much of it last evening. So will mix it in a cream sauce with some mushrooms (easier the better after going out).

The wind has eased a little bit since early morning - not enough to let the ferries run or the planes fly, so we are cut off right now. Still, Neil reckons it's not so bad that he can't drive me to Stornoway. While I am in the hospital, he will go and see if there's anything left in the shops. The wind is supposed to get worse tomorrow so transport is off until Friday at the earliest. DIL is booked on for the Friday ferry now and hoping for the best so that she can get the pups to their new homes.

If Neil can't get mushrooms, will have to use the dried ones I've been keeping in the larder for ages.
 
Hi all,

I received a message from @Riva_Roxaban .
He asked me to inform you that he's currently in hospital after a funny turn on friday, and he'll move to a palliative care nursing home home shortly.

He'll try to get in touch again after he's settled in.
That's a shame and doesn't bode well. I was beginning to wonder at seeing no posts from him for a while. Will be thinking about him and add him to my prayer list - so many ailing friends and relatives these days.

Sometimes there’s just no rhyme or reason to it. My BG has been in the 7s for a couple of days now and I haven’t been near a chip or any kind of spud for years. I’m assuming it’ll sort itself out at some point if I just keep going.
