What have you eaten today? (Low carb forum)

After days of tasty but not very good looking food (I love peanut sauce but it doesn't improve the looks of your meal to be honest) I now made up for that with the prettiest meal I made in a long time!

No idea what type of lettuce it is, it was on offer and sold as 'snack lettuce'. It had a picture of stuffed lettuce leaves on it so I took the hint. :joyful:
I made 3 with garlic cream cheese, fried sucuk and onion and sundried tomatoes, 3 with cottage cheese, smoked trout fillets and horseradish, and 3 with egg mayo, raw onion and smoked pork belly.

Ate 2 of each, so tomorrow will be the rest plus a sandwich or such.
Very long day tomorrow, having the kittens neutered an hour drive away at a rescue center (cheap), so I'll spend the day there volunteering to pass the time until I can bring them back home. Have to be there at around 8 AM, which is pretty much the middle of the night for me, so not having to prepare dinner after getting home will be very welcome!

L: quiche without a base so I guess frittata (?) (eggs, bacon, spring onions, cream, butter) with a salad of baby spinach, baby beetroot, red onion, feta cheese and corn kernels
D: haven't had it yet, but the corned beef is ready to go and locked in. Corned beef, cabbage w/ garlic, carrots and I will be having mashed potato because BSL is good today and it's traditional (edit: with hot english mustard of course) Edit 2: I just checked the freezer and I have brussel sprouts (yay!) so add them into the mix as well

3.45 am. I have to decide whether to eat something before 4.45 or not. Instructions for US Scan say nothing other than water, black tea or black coffee from 4 hours before the scan, timed for 8.45. Scan will take about half an hour but Neil is shopping while I am there, so may not get back in the half hour, meaning waiting around in the hospital foyer until he turns up. Not likely to faint with hunger before getting home and I rarely eat before around 11 am anyway, so why am I panicking? Nah - leave food and just have tea with milk before 4.45. BG is lower than usual this morning though and might be dropping - must keep an eye on that. Not reqally looking forward to the scan - it will involve pressing the scanner into my tum quite firmly, and it is still feeling a bit tender after the carry on in the lst few days.

Made 3 sausage dishes yesterday - one with some extra bacon chunks, onion and cabbage (taking a chance with this), one with onions, garlic and mushrooms in the tomato sauce and one with b'nut squash in more of the tomato sauce. Also in the fridge, cooked yesterday, spiced lemon chicken in coconut milk with a few aduki beans, Mexican style chicken in a sauce of yoghurt and chilli peppers, and some spiced, baked chunks of chicken (kind of chicken nuggets), So I am spoiled for choice for a main meal.

I will be ready for breakfast by the time I come home but will have to be patient and make a proper breakfast of scrambled eggs rather than just grab the first thing to hand.
 
Update:
Dinner pretty much as planned: corned beef, copious amounts of hot English mustard, brussels sprouts, carrots, cauliflower, mashed potato, cabbage, and white sauce. 1 beer. 3 scoops 99% no sugar chocolate icecream. Two hours post-meal BSL 5.9.

I still feel sick, probably because of my 2 days of atrocious eating, but I might have some more icecream for umm, let's call it dessert #2 :D
 
I don't normally plan too far ahead but tomorrow's menu is pretty much locked in so I'll post it now.

B. All-bran with bluberries, yoghurt. Maybe toast, will see what BSL is like
L: Corned-beef sandwich (I'll be having these for a few days hehe... lots of leftover meat)
D: Thai green curry
 
I’m so bad at reporting daily. So back to Tuesday.
Brekkie my usual slice of LC toast and lots of tea.
Lunch was another slice toast topped with Dairylea and ham. More tea.
Supper was two Green Cuisine plant burgers topped with two Portobello mushrooms, all baked together in the oven and fast becoming a favourite.

Yesterday same brekkie.
Lunch was a Keto cheese scone after making a batch and a finger of Shropshire Blue. Tea.
Supper was tinned chicken curry (was out of date and Mr PM was out so seemed like an easy supper but I think it was a bit carby) and cauli rice.
Its annoying I try to keep within 30g carbs a day but if I heavy load at supper time gives me bad FBG I think. As long as my A1c stays where I like it I suppose.
Today same brekkie.
Lunch on the run will be another buttered cheese scone in the car.
Supper will be chunky fish fingers with broccoli or cauli cheese.

Morning all. THank you for your kind thoughts. @MrsA2 and @Annb, thank you for your kind thoughts. I did have counselling after her passing but when the 1st and 4th March come round, it doesn't help. The 4th is when they took her off life support and I sat with her till the end. Double whammy was she had mental issues and had stopped speaking to me. The rest of the year I can cope. To keep on the thread, I had bacon and egg yesterday and today I am having air fried bratwurst with cabbage and for tea, a piece of cheese (maybe).

Never heard of mustard soup. Actually asked Neil to get me a tin of mustard powder today, but he couldn't see any. I did have a tin., but when I broke the seal and opened it, it had gone a bitr strange - damp must have got in somehow. So I dumped it and bought another, which has, admittedly been languishing in the cupboard for several months but, when I opened it yesterday intending to coat the chicken chunks with it, it had gone the same way. That went into the bin as well.

Just looked up the recipe on the internet. Basically it is a leek/onion soup with a lot of mustard in it - is that right? Must try it.
 
Yep, that's basically it but I also sometimes add cabbage. Love it
Liking the sound even more. Sadly, I'm going bit careful with the leaves of brassicas until I'm sure things have settled down. The cabbage with sausage that I made is in the freezer for use later on. I will try it with leeks, which are fine right now.
 
B - Small size portion of salted nuts, 1 avocado seasoned with a dash of lemon, garlic salt and pepper.
L - After 40 min work out, garlic chicken thighs x2 with green salad
D - Steak with salad more than likely
Lots of green tea and herbal tea in-between
 
Home safe and sound and scan shows my liver is no worse than last time, so despite eating low carb, high fat, it hasn't done any harm. On the other hand, reducing carbs hasn't encouraged any healing (I saw an article about 2 men with fairly severe liver damage were able to reverse their conditions with low carb diets, and was hoping for perhaps a little improvement). Ah well, make the best of it that we can.

Main meal today will be some of the sausage casserole, now with added onions. Eggs unavailable again, so I couldn't make scrambled egg for breakfast when we got home. Ashamed to say. I had a buttered, toasted crumpet from the supply I have for Em. BG keeps dropping though - currently 3.9.
 
Monday 27 February bed 7.6 FBG 7.1 - I was still pretty grotty Monday & Tuesday but , I'm glad to say I recovered sufficiently for my operation today (Thursday)

B. TAG and a bit of crustless quiche

L. Nothing

D. Leftover cold cuts. Roast pork, roast beef, haslet, spicy meat loaf, pork & egg, coleslaw. 2 slices of SRSLY fruit loaf and butter.

Hot showers, gallons of water, and paracetamol!

Tuesday 28 February bed 8.1 FBG 8.2 - My grotty feeling was reflected in my BGs. Pretty bad sweats overnight as well.

D. Tomato sausages, fried egg, GF Black pudding and santini tomatoes (Hubby is practicing cooking again!)

Wednesday 1 March bed 7.4 FBG 6.6 - Finally, nausea gone and I'd stopped coughing. Food is straightforward, as Hubby has taken over the reins in preparation for my "cannot do list".

L. 2 slices of SRSLY fruit loaf with butter and a CC little chocolate pot.

D. 2 egg omelette with bacon, tomato and mushroom.

Glad the operation went well and is now in the past. Good that hubby is taking over those things you can't do just now.
