What have you eaten today? (Low carb forum)

10ish kefir with lemon zest
1ish fried some mushrooms and two eggs in butter served on one slice of LC toast
3ish felt cold a bit run down and in need of a treat so had low carb cake
5ish Duck leg cooked and shredded and served with a LC wrap and some salad plus despite it being a Monday a glass of wine and a low carb brownie warmed and then served with yoghurt.
Away for a few days in Yorkshire from tomorrow - once sorted out some caring stuff here - will record food again when back. I'm going to another family funeral, a burial which I always find more difficult and Its always hard to find LC stuff to eat when traveling and at a buffet event so will probably be mainly fasting by choice and drinking lots of black coffee of course! There's no alcohol available at the post funeral refreshments as it's a request of person who died that no alcoholic drink be imbibed at her funeral!
@RosemaryJackson enjoy growing your grains. I just do mine on a kitchen surface as kefir doesn't like too much heat - unlike yoghurt -don't know how hot your airing cupboard gets but suppose if your kitchen was cool at this time of year it may work better in the airing cupboard? I don't have an airing cupboard so never tried that. Look forward to hearing about it's progress.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and DGF caramel slice.
Skipped lunch.
Mid afternoon: coffee shop coconut cappuccino and a carb killa bar.
Dinner: liver and onions with runner beans and carrots followed by SF blackcurrant jelly and cream.

Breakfast of 2 eggs, ham and cheese. My last 2 eggs and disaster struck when I popped to the shop for more - didn’t have any! Hope they get some more in by tomorrow.
Lunch was cream cheese on a slice of schneider brot protein bread, and a DGF cake.
Dinner another mince and veg fry up. Today it was hogget cooked with cabbage and added garlic, chilli and cumin seeds. Another DGF cake. Tea with milk. IMG_1948.jpg
 
Yesterday usual brekkie of sliceLC toast and copious tea.
Lunch was small plate of sliver of ripe Brie, finger of Shropshire Blue three tiny vine toms and a spoon of leftover stirfried peppers which were surprisingly tasty cold. It was a pretty plate, should have taken a pic Because I always like your photos esp @DJC3 and @Rachox. Also @saky. Supper was a well seasoned chicken breast with cauli cheese.
 
Morning all. Yesterdays pensioners lunch was chicken and I only ate 1 scoop of potatoes. No pudding, took my crackers with cheese and the kitchen serves me them with the other puddings! The others are very curious as to why I bring my own pudding. I think they think I am odd as there are quite a few diabetics there who eat everything. Each to his own! I want a decent quality of life so will take care. Didn't put my bg up much either. Today's menu will probably be fried in butter veg with 2 plant based burgers. And my usual cheese or ham for tea. I am so happy that I don't crave carbs now. @shelley262, my airing cupboard is only slightly warm as it's a combi boiler. I am quite excited that I am making my own Kefir! I'll let you know how it goes and thanks for the advice and encouragement. :happy:

There were no eggs on the shelf in the supermarket when Neil went yesterday but an assistant was just bringing a few more boxes to put on the shelf. However, there were so few that he hadn't the heart to take all that I wanted and came home with a box of half a dozen. Won't last long but beggars can't be choosers - better than none at all.

No eggs in the Coop again this morning. I was starting to panic a bit! Luckily the butcher had some. I limited myself to a dozen - more than Neil but like him I hadn’t the heart to ask for more as his supplies were low too.

Is there a problem with the supply of eggs that I haven't heard about? I know there's a lot of bird flu around, but does that affect the egg supply?
 
A bone profile blood test analyses the protein, enzymes, etc. in your bones. It helps them find the effect your metabolism is having on your bones, basically. I always go on the principle, if it's serious, they act quickly. If it's routine you have to wait.

I got a letter today saying to book a non-urgent appt but I already booked when I asked what my HbA1c was, receptionist only had a note the doctor wanted to discuss it and make an ppt in 2-4 weeks and wasn't sure how to interpret. Like you say I gather its probably something that can wait, still wonder what it exactly is :D

Maybe something slightly out of whack. Big change of diet/low carb, lower calories, lost weight - also I'd just finished with the coronavirus the day before my bloods were taken.

Back on track, last few days have been eggs and bacon sort of meals, salads with meat,

Yesterday I made a pan fry with an onion/garlic base with cauliflower and broccoli, plum tomatoes, got the pestle and mortar out to make a mixed masala of Kashmiri chili, ground coriander seeds, cumin, black pepper, turmeric, salt, mint, nutmeg, clove, cinnamon, mace and cardamom.

Came out quite nice, like a curry dish, was testing to see if I could manage a small paratha with it as well, which didn't seem to have the biggest impact as kept within my limits for the day, but will probably just have without next time, as fbg was a little up but not drastically. Was nice to have with but wasn't a deal breaker for sure.

Yes, I was given just that very reason when a few times since last October there was a shortage on the shelves. Think they were rationing them at some point too, only so many boxes per customer. Seems to be okay here (swales) at the moment though.
 
Forgetting the curry for now - just not up to doing much. Telephone consultation with the GP might help in a few days when the new prescriptions come through to the local pharmacy. For now - can't eat anything but have to drink plenty - that's been dropping off in the last couple of weeks, which I don't suppose has helped much. Water, hot, water, cold; some milk (not much); some yoghurt to take pills with. Didn't have soup yesterday - it would have been easy enough to get a bag of tomato soup out and defrost it, but I didn't bother.

Today I have thrown some sausages into a dish with some ready cooked mushrooms (Neil did a whole lot last night) with a tin of tomatoes. Left the onions out this time - couldn't be bothered peeling and chopping them. It's in the oven and should be done now, but will I eat it? Possibly, possibly not. At the moment, I am leaning to the side of not.
 
Saturday 25 February bed 8.2 FBG 8.9 - Was having a relapse today. I'm starting to get concerned this will stop my operation on Thursday.

B. TAG and a slice of SRSLY toast with egg mayo.

L. 2 slices of SRSLY fruit loaf with butter and a CC little chocolate pot.

D. Usual cold cuts. Roast pork, ox tongue, haslet, meat loaf, roast beef, coleslaw, egg.

Sunday 26 February bed 7.7 FBG 7.9 (better than yesterday!) Took youngest to his swimming lesson and the humidity helped a bit.

B. TAG and a bit crustless quiche

L. Nothing

D. Beef peri peri stir fry with shredded cabbage for noodles. CC little chocolate pot. Campari and soda.

@shelley262 - I'd forgotten what a good looking dog Cooper is. He has such a lovely coat.

@Annb - that was so nice of you. I hope @Antje77 gets to see it soon. Also, are you any further forward on the mystery? That was such an odd story.

So far, I've heard nothing. Of course, not being related we have no right to receive information even if there is any out there. I do hope her ex-husband and her daughter are making enquiries, but so far we've heard nothing. Her husband was never close to her friends and I don't suppose her daughter will make contact. We will have to try to get in touch shortly to see what the situation is. Last time she was in the mental hospital, I was her "responsible person" who could represent her interests at hearings but I believe that has fallen by the wayside now.

The Coop sign said it was because of bird flu and the hens being kept inside so not officially free range, but that doesn’t explain why there were no eggs at all. Or why they couldn’t sell ‘not quite’ free range eggs!

L- SLC roll filled with tuna mayo. 15g Montezuma’s absolute black.

The eggs we have been able to buy up until now were still being sold as "free range". I mntioned this to Neil and he reckons they still are, officially, because they have large barns to spend time in and probably covered areas to range out into. Just not quite as free ranging as before.

L: 3 egg omelette with a bit of cheese
Late dinner 8 ish, steak, mushrooms, spinach. Quite a bit of wine.

Am away again, looking after a beautiful house packed with antiques.

Breakfast 2 soft boiled eggs with a slice sourdough bread
Hours walk
Skipped lunch.
D: cold smoked trout with salad. Not sure what was in it. Tasted too good to be totally low carb. Couple of sqs lindt, again not sure which.
Couple glasses red.
